New Mexico’s Green Chile Cheeseburger Trail not only celebrates one of the Land of Enchantment’s most iconic foods, it showcases the restaurants, drive-ins, diners, dives, joints, cafes, roadside stands and bowling alleys which prepare our ubiquitous, incomparable green chile cheeseburger.  To New Mexicans, there is nothing as thoroughly soul-satisfying and utterly delicious! What elevates a burger from the ordinary to the extraordinary is taste bud awakening, tongue tingling, olfactory arousing green chile, New Mexico’s official state vegetable (even though it’s technically a fruit).  In the continually evolving mosaic that describes New Mexico’s cultural intermingling, one constant is green chile, an essential ingredient in many of our recipes and THE centerpiece of any outstanding green chile cheeseburger.  Even such corporate megaliths as McDonald’s and Sonic try their hand at the green chile cheeseburger.

It stands to reason that one of, if not THE very best green chile cheeseburger in the Land of Enchantment would be served in Hatch, the undisputed epicenter of New Mexico’s chile production.  Widely regarded as the “chile capital of the world,” the village’s population of around 1,200 citizens increases by twenty times as people from all over the world converge for its annual chile festival.  It’s a chile addict’s paradise, a celebration of chile in the milieu in which it is grown.

Every other day, locals and visitors alike converge at Sparky’s Burgers, Barbecue & More, one of the most colorful restaurants in the state as well as one of its best purveyors of both green chile cheeseburgers and barbecue.  My friend the late and much-missed Larry McGoldrick, once the most prolific Urbanspoon contributor in New Mexico, took his educated palate on a quest to discover all the best of New Mexico’s cuisine and declared  Sparky’s serves up “quite possibly the best Green Chile Cheeseburger you are likely to get anyplace.”

To get to Sparky’s, you’ll take Exit 41 off Interstate 25, one of the most interesting and colorful stretches of highway in the state.  After crossing the murky and meandering Rio Grande, you’ll start to wonder if you’re in the Land of the Giants, the iconic fiberglass and concrete statues that were so prevalent along America’s highways and byways in the 1950s and 1960s.  This roadside art is part of the fabric of Americana, albeit a kitschy tradition that is fading with the passage of time (which aptly describes many of the statues themselves).

The epicenter of fiberglass statue land appears to be Franciscan RV, about a quarter of a mile in town.  A restored Muffler Man is the most prominent and prolific statue.  Holding a tiny model of a Winnebago RV in his upturned right hand, Muffler Man easily dwarfs other fiberglass statues in the fenced in complex. He’s much taller than any of the recreation vehicles in the complex, too.  The office area holds a veritable museum displaying everything from antique toys to old time jukeboxes and pianos.

Traverse about three-quarters of a mile further and you’ll be treated to even more fiberglass artwork on display.  On the south side of the street is an old-fashioned (circa 1962 or so) Chevrolet van with “Hatch Welcomes You” signage flanked on both sides by red and green chiles. Standing atop the van is a gigantic rooster, its chest puffed up like a bantam bodybuilder.  Note:  These descriptions are not absolute.  It seems every time we visit, one (or several) of the statues have moved.  No matter where they’re placed, they’re always a sight for sore eyes.  For one thing, they signal your arrival at the restaurant serving one of the most indisputable best green chile cheeseburgers in the universe.

Something to See Everywhere You Turn Inside the Restaurant

Directly across the street is the motherlode, a veritable village of fiberglass folk.  That’s where you’ll find Sparky’s Burgers, Barbecue & Espresso.  Nattily attired in his red, white and blue spangled outfit is Uncle Sam, as tall as Muffler Man.  On the building’s roof are the progenitors of the A&W Burger family, Mama Burger and Papa Burger, both holding a large frosted mug of A&W Root Beer.  At sidewalk level, Colonel Sanders sits on a bench conversing with Ronald McDonald.

Wading in a concrete pool is a strange metallic creature, a bucket of bolts, gears and sprockets fashioned into an anthropomorphic being with what appears to be washboard abs (a real metal washboard). This would be Sparky, the restaurant’s mascot. Picnic tables in front of the restaurant include an explanation of how you can contribute to Sparky’s college fund, a most worthy cause.  You’ll have plenty of time to study Sparky.  Long lines–maybe 25-30 diners long–snake in front of the building.  You’ll get to know your neighbors on line and will probably envy those who get to the cooling misters ahead of you.  I mentioned standing in a queue for over an hour for barbecue in Phoenix and the guy ahead of me asked “Little Miss BBQ.”  It turns out he was from Phoenix and was quite familiar with the best BBQ in the Valley of the Sun.

Teako Nunn, the Genius Behind Sparky’s

Though the college fund donation is whimsical in nature, there once was a very worthy cause for which many New Mexicans had their voice heard. Bureaucrats from the New Mexico state Department of Transportation apparently decided that some (translation: all) of Sparky’s roadside attractions were not in compliance with the Beautification Act of 1965. State officials attempted to force Sparky’s to remove a giant fiberglass pig on a trailer as well as humongous hot dog shaped sign on the side of the road. Eventually variances from the city of Hatch persuaded state officials that the fiberglass and concrete statues should remain permanent fixtures in the small city.  Today, those statues are a fixture.

Waging the good fight for common sense and freedom of expression were Josie and Teako Nunn, the popular proprietors of Sparky’s.  This dynamic duo is living their dream and thrilling their customers on a daily basis.  Josie Nunn is the restaurant’s designer and chief barista.  She procures premium coffee, roasted locally by Ocotillo Roasters of Las Cruces and serves it in a milieu in which there’s something to see at every turn–even a gigantic moose head mounted on the main dining room wall.

The barista’s other half is the barbecue man, Teako Nunn, a very experienced practitioner of the low-and-slow disciplines.  A certified Kansas City Barbecue Society judge, Teako is usually seen tending to the large smoker behind the restaurant.  He patterns his barbecue after the barbecue in and around the hills of Austin, Texas where some of the nation’s best barbecue can be found.  Teako and his family are no slouches when it comes to green chile cheeseburgers.  In 2017 and again in 2022, Sparky’s won the New Mexico State Fair’s Green Chile Cheeseburger Challenge, a blind judging competition pitting purveyors of the state’s sacrosanct burger.  When I congratulated Teako on his second win, he  humbly related that he got a bigger kick out of competing with his family than he did in winning the event.

Although green chile cheeseburgers remain the most popular attraction on the menu, you can also find Teako’s terrific barbecue.  In years past, barbecue selections included a three-quarter pound plate which showcased four meats (pulled pork, brisket, sausage and one center-cut rib).  A half-pound plate included one or two meats and two sides.   You could opt to have your barbecue bounty on a sandwich or a half-pound of meat a la carte.  In any case, the barbecue is some of the very best in New Mexico.  During our visit in September, 2022, we were saddened to find only house-smoked barbecue brisket and pulled pork.  Teako told me the smoking process begins at 5AM every morning the restaurant is open.

16 September 2022: The green chile cheeseburger is also in rarified company; it’s one of the three best of its genre in the state. Only the Bobcat Bite and the Buckhorn Tavern should even be mentioned in the same breath and Sparky’s green chile puts the chile in the other two to shame. This is green chile which will get your attention with its piquancy and its smokiness. It bites back and provides such a delicious endorphin rush, you’ll want another. The beef is hand-formed, hand-cut and hand-ground to a quarter-pound thickness and it’s prepared to your exacting degree of doneness. At medium, it’s absolutely perfect with a nice hint of pink and lots of juiciness.

Double Meat Green Chile Cheeseburger and Pineapple Coleslaw

When you place your order for a green chile cheeseburger, what will be called out to the line cooks is “one world famous.”  The burger is served naked–no lettuce, tomatoes, pickles or even mustard.  None of those are needed.  This “competition style” green chile cheeseburger includes only what is stated on its name.  For sheer purity and deliciousness, you don’t need anything else.  The beef patty is oversized, protruding well beyond the six-inch buns.  It’s a moist and delicious patty, as good as many steaks.  The green chile is the pride of Hatch, New Mexico, a glorious green with a piquancy that will get your attention, but also with a flavor that will remind you chile is a fruit.  One of the smartest things Sparky’s does is serve the bottom bun on the side.  You can affix it when it arrives at your table.  We’ve had the bottom burger bun fall completely apart (can you say Buckhorn Tavern) by the time it arrived at our table.  The juiciness of the beef and chile can have that effect on that bottom bun.

Though its ambience is whimsical and fun, Sparky’s offers some wholly serious sides.  Don’t expect to find flaccid fries.  Sparky’s fries are thick and seasoned, perhaps double-fried to a golden, crispy hue on the outside and a delicious tenderness on the inside.  The pineapple coleslaw is reminiscent of the sensational slaw at the much-missed Independence Grill.  Finely chopped cabbage in a sweet salad cream punctuated by pineapple, it’s perfect accompaniment to both the barbecue and the green chile cheeseburger.  By the way, Jerry Wright who owned and operated the Independence Grill is now a familiar voice on the airwaves as the producer of my favorite KKOB radio program The Weekend With Terry Travis.

Pulled Pork Sandwich with Pineapple Coleslaw

16 September 2022: Despite nearly half her life spent in the Land of Enchantment, my Kim is not a green chile cheeseburger aficionado.  Her preference is almost anything else, particularly good barbecue.  Among her very favorites is Sparky’s pulled pork sandwich with a side of the pineapple coleslaw. The pulled pork is tender, flavorful, moist and as light as frost.  While some so-called barbecue experts can’t seem to infuse much flavor into their pork (and rely on cloying sauces to add that critical component–flavor), Sparky’s pulled pork is absolutely delicious, rich, complex and thoroughly addictive.  How good is Sparky’s barbecue?  Put it in the same class as the ‘cue at Sugar’s BBQ & Burgers in Embudo.  In other words, it’s among the very best barbecue in New Mexico.

Brisket Sandwich

17 September 2022:  In yet another example of our Mars versus Venus relationship, my Kim has always and forever been an aficionado of pulled pork in every form while her stubborn husband champions the superiority of brisket.  For the first time in her 37 years of sharing meals with her, she found a brisket sandwich superior to the brisket sandwich she enjoyed the previous day.  Sparky’s brisket sandwich is Texas slow-cooked brisket worthy, an absolutely fantastic all meat sandwich.  She added a bit of Sparky’s fiery sauce, but admitted it was wholly unnecessary–a hallmark of Texas caliber barbecue.

If you want to do as the locals do, order a green chile shake.  It’s essentially a vanilla shake with chopped green chile interspersed throughout.  The cold ice cream renders the green chile nearly frozen, changing the texture of the chile into a chewy, near Popsicle-like deliciousness.  Shakes, made with ice cream and milk, tend to be a good way to quell the piquancy of chile.  Ironically, the green chile on this shake is piquant enough to give you hiccups if you’re not a fire-eating New Mexican.  If for no other reason than to say “been there, done that,” everyone should try a green chile shake at least once.  Me, I liked it a lot and will have it each and every visit.

Sparky’s is all about small-town hospitality, outrageous fun and some of the very best barbecue and burgers in the Land of Enchantment.  An avowed Norteño, I may secede to the south just to be closer to this fun and fabulous restaurant.

  1. Gil – its been 11 years, and I know this is a pretty long haul from ABQ, but given this is the source of arguably the very best GCCB in all of NM, it is well overdue for you to make a trip back here to see if the GCCB remains among the very best

    1. We were in Hatch on 30 December 2021 and had every intention to visit Sparky’s, but we got there just a bit late. We still found an excellent burger at A&B Drive-In in Truth or Consequences. Next time we’ll get to Hatch earlier in the day.

Ashley Biggers calls Albuquerque home. She even authored a terrific guide to 100 Things To Do In Albuquerque Before You Die.         PS- STAY away from. Mackenzie’s mail order food catalog. The crab cakes are an Abomination. I screamed, and they gave me a $75 credit (o. $200 of crab cakes) . I should have held out for more. Faidleys mail order crab cakes are excellent : Pricey, and worth it.

        I am thinking of ordering the Crab Bombs on Goldbelly (I forget the source). It will be $100 for 2 (gulp, but delivered).

        If anyone has tried these, then please give mer your detailed opinion, before I get beat up again.

      Here’s how you can print the Sparky’s menu: (1) Launch the menu page at http://sparkysburgers.com/menus/ and click on the “BBQ Menu” link. (2) When the menu launches, right-click anywhere within the menu. A Windows menu will launch. (3) Scroll down and click on “Print Target.” You will then be prompted to select the number of copies you wish to print. (4) Press the “Print” icon. Your menu will be printed for you.

  4. I love the kitchy appeal of this Hatch, NM restaurant, and the food was pretty good too. But the massive profusion of flies in the restaurant was absolutely disgusting. I have NEVER seen so many flies in one place before, which makes any thinking person wonder about the cleanliness of the establishment. Surely there is something that could be done to get these flying germ generators under control. Eating while swatting and trying to keep them from landing on your food and drink is not my idea of an enjoyable meal. We met another carload of patrons by our car who had planned to eat there but after walking through the place to use the rest room (which was strangely – but miraculously – fly free) – hightailed it out of there due to the flies. It was pretty disappointing — lots of folks love this place and I wanted to also. But I won’t visit Sparky’s again unless some major extermination and flying pest control is instituted.

  5. On our way back from a couple of weeks in Santa Barbara, My wife and I chose the longer southern route(I10)to avoid possible snow and ice along I40.
    I’m so glad we did as yesterday we stopped at Sparkys for lunch. This was our 1st visit and I’m sure now we will make this a regular destination.
    We both had the pulled pork burrito smothered in green chile queso and shared a side of the Green Chile Corn. What a well deserved treat after the long ride from Tucson that morning.
    We also ordered a doggie pattie to go for our pups to share as a reward for having to wait in the 4Runner. I have to confess that the dogs had to share that pattie with me. Excellent burger! Really looking forward to a return trip to try that GC Cheeseburger!

  6. Finally tried Sparky’s out on my way back from picking up some heritage blend green chile at Biad Chile in Mesilla Park. Best green chile cheeseburger in the state, and, therefore, in the world. The corn was fantastic too. I will be going back to try the BBQ, shakes, and eat more burgers. This place is a state treasure.

  7. After moving my son our of his house in Las Cruces, we stopped by Sparky’s and noticed that they have expanded into the former antique place next door and have a dedicated area set up for real live bands. Great to see them doing so well, and supporting live music!
    We had the ribs this time and they had the pink center of perfect smoked goodness. Nice and meaty, too! Now, if they just had smoked chicken…..

  8. I remember a few years ago we were driving from Albuquerque to Tucson and almost had a bladder nuclear explosion. We stopped in the middle of town in Hatch and everything was closed. A nice fellow came up to us and said : You look like you are looking for a restroom, here, come into my place. It is closed, but don’t let that bother you. That is how we came across Sparky’s. On the way back we stopped by for lunch. The greenchile cheeseburger instantly became our favorite. We truly believe that it is the best in NM, if not, anywhere. We tried other things since then (We made Sparky’s our regular stop when heading South)but we keep coming back to that fantastic burger. These days a rare find, with fantastic service and food. Everyone should try it when near Hatch.

  9. I travel the I-25 corrider to AZ often. Enjoyed my visit on Feb. 19th. Arrived @ 11:00 and the place was hopping. The burger was wonderful; they even ask how you’d like it cooked. That isn’t an option at the disappointing burger restaurants in San Antonio. The beef was tasty; the chile sinus clearing and you could tell it was roasted over some wood product. MmmMmm. The brisket was perfect. Don’t know what wood they’re smoking with but it wafts throughout that main intersection of Hatch. To the owners: Please leave that 1/2 inch of fat on the meat. It makes your brisket tasty and moist. So many other places over trim their brisket and it comes out dry and almost jerky chewy. The green chile cheese fries are sloppy,finger-licking sublime. In the photo above you can tell that their fries aren’t ho-hum fries. These are CRISPY outside and soft inside potato wedges. Even smothered with chile and cheese they retain their structure. Other restaurants use undercooked steak fries that are already flaccid and you have to eat the dish with a spoon. Not here.
    Sparky’s is a great half-way place to stop on that run from Albuquerque to Tucson.

  10. When we were living in Las Cruces, we would ride the Harley just about every weekend up to Hatch and eat at Sparkeys…best barbeque and pineapple coleslaw we ever had!! Lots of nice people, lots of Harleys and beautiful weather…100% recommended by Charlee and Carl! Hope is that we will get back there again real soon!

  11. Tried Sparkys this Labor Day-went down for the Hatch Chile Fiesta. The beef brisket and pulled pork were exceptional as was the pineapple coleslaw. We didn’t share your enthusiasm for their Green Chile Corn. It wan’t at all creamy. In fact ours was rather watery. The corn seemed tough and over the hill. The rest was terrific. Service was very fast even tho the place was jamped–the line went out the door.

  12. Wow, what a burger – even my 22 year old son was gushing over just how great it was – and he ate half of mine to prove it! (I had the aforementioned shake and pineapple slaw, so I just couldn’t finish the burger.) And the chile on the burger – lots of Hatch’s finest and muy caliente, gracias! Great atmosphere and food – it’ll be a pleasure visiting him at State!
