Because they spend so much time in their restaurants tending to the care and feeding of others, they tend not to eat there&#8211;when they make time to eat. On the other hand, if you&#8217;d like to know where to find cuisine that meets exceedingly high standards, ask your favorite restaurateurs where they like to dine, particularly with family. If they&#8217;re effusive about a restaurant, you should make it a point to visit soon. Oh my, so fresh and so good and very affordable, too<\/em>.&#8221; She then proceeded to recommend several dishes which struck her fancy. Daniela has never led me astray, either at her fabulous restaurants or at one she&#8217;s recommended to me.<\/p>\n<p>The restaurant which excited her so much is Coda Bakery (formerly Banh Mi Coda), a Vietnamese bakery which specializes in banh mi, the sandwich fusion which melds the freshness of Asian ingredients and the culinary ingenuity of the French. As the intoxicating fragrances waft toward you, you&#8217;ll start to take in the visual aspects of your soon to be dining experience. The basis for any great sandwich is the bread into which sundry ingredients are cradled. Fresh-baked, out of the oven into your waiting hands, twelve-inch French baguettes are the foundation of these banh mi. Each sandwich includes pickled carrots and daikon, cucumber, cilantro, sliced jalape\u00f1o and Vietnamese mayo. If the aforementioned ingredients sound unfamiliar (if not daunting) fear not. Jambon is a wet-cured, boneless ham. Pate is a pork and liver spread. Vietnam lies firmly in the tropics and is therefore traditionally and geographically precluded from the slow salt-cured meats of more northerly regions. Instead, Vietnamese cold cuts need freshly ground lean meats and a specific combination of spices and processing steps to cure meats rapidly in the tropical heat. The resultant meats are both snappy and yielding, sweet, savory and tangy, garlicky, peppery, and can be garnished with chilli and fresh herbs.<\/p>\n<p><strong>5 November 2024<\/strong>: The <em><strong>grilled<\/strong><strong>pork banh mi<\/strong><\/em>, much like traditional Vietnamese grilled pork entrees, is redolent with the sweet spices of anise and cinnamon. If you&#8217;re a bit pusillanimous around piquant peppers, make sure your sandwich includes at least a few jalape\u00f1os. There aren&#8217;t nearly quite that many meatballs on the banh mi. In fact, meatballs are rather sparse. Perhaps that&#8217;s because a few meatballs go a long way. Texturally the meatballs are akin to meatloaf, the soft, squishy inside, not the crusty exterior. In terms of flavor, they&#8217;re a perfect foil for the other ingredients. More savory than sweet, the meatballs are a wonderful filler for any sandwich.<\/p>\n<p><strong>13 March 2015<\/strong>: It took the Lenten season for me to notice that one of the banh mi options on the daily menu is a <strong><em>shrimp sausage banh mi<\/em><\/strong> with spicy mayo. Consider my oversight a lost opportunity to enjoy a rather unique sandwich. Unless you&#8217;ve previously had shrimp sausage, it&#8217;s wholly unlike what you might picture shrimp sausage to be. Picture a soft, moist patty of finely minced shrimp with a binding agent of some sorts. It&#8217;s seasoned very well, particularly when the spicy mayo (which you&#8217;ve probably had with sushi) is part of the picture. Spicy is a bit of a misnomer unless you also bite into a jalape\u00f1o concurrently. By itself, it has no taste. Under glass, it resembles a German strudel, but this is far from a dessert offering. As with banh mi, it&#8217;s a French influenced dish. A homemade puff pastry is engorged with shredded chicken and green chili in a cream sauce. The golden crust is light and flaky, the shredded chicken and cream sauce a delight and the green chili actually has bite. Call this one a Vietnamese empanada and you wouldn&#8217;t get much argument from any New Mexican who tries it.<\/p>\n<p><strong>21 July 2011<\/strong>: One of the items Daniela recommended most highly was the <em><strong>pandan waffle<\/strong><\/em>, wholly unlike any conception of a waffle you might have. Pandan is an herb with long green leaves. It not only imbues the waffles with a bright green coloring, but with a discernible flavor and aroma. Also prominent on the flavor profile is coconut milk. Pandan waffles are moist and don&#8217;t require syrup. While not crescent-shaped or as flaky as most, if not all, of the croissants you&#8217;ve ever had, it has the delicious properties of croissants at their best. Tear into the spiral-shaped, sugar encrusted beauty and wisps of steam will waft upward toward your eagerly anticipating nostrils. The insides are pillowy soft with melt-in-your mouth qualities and the sweetness born of raisins a plenty as well as sugar and cinnamon, but not too much of either. Each spring roll is filled with fresh rice vermicelli, lettuce, cucumber, bean sprouts and mint wrapped in rice paper and comes with Coda&#8217;s signature peanut dipping sauce.\u00a0 Served two per order, these zeppelin-sized behemoths are superb.\u00a0 The challenge is in deciding which of the eight to order.\u00a0 They&#8217;re all tempting though there is only one (housemade fried tofu) you&#8217;d categorize as vegetarian.\u00a0 My favorite is the <em><strong>pork sausage spring roll<\/strong><\/em> (pork sausage, pickled carrots and diakon).\u00a0 A diaphonous\u00a0 rice wrapper provides a visual experience before you commence your dining enjoyment.\u00a0 The pork sausage stands out.\u00a0 It&#8217;s about six-inches long and has a reddish hue reminiscent of Philippine longoniza (another superb sausage).\u00a0 Its flavor profile is sweet, garlicky and savory, making it a wonderful complement to other ingredients in the spring roll.\u00a0 Pickled daikon and carrots are fresh and crispy.<\/p>\n<figure id=\"attachment_83931\" aria-describedby=\"caption-attachment-83931\" style=\"width: 708px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-83931 lazyload\" style=\"--smush-placeholder-width: 708px; font-size: 16px; font-weight: 400; margin: 0px; text-decoration: none; border-bottom: 0px rgb(10, 10, 10);\">was indicted by a federal grand jury over an Instagram photo he posted of seashells arranged to spell out &#8220;8647,&#8221; I always associated the number &#8220;86&#8221; with <a href=\"https:\/\/en.wikipedia.org\/wiki\/Get_Smart\" target=\"_blank\" rel=\"noopener\"><strong>Maxwell Smart<\/strong><\/a>, Agent 86 of Control.\u00a0 That number now has a new meaning for me courtesy of Coda&#8217;s &#8220;Rice Combo&#8221; menu.\u00a0 <em><strong>Number 86<\/strong><\/em> on that menu is a rice combo dish that showcases marinated grilled pork in a combination bowl with rice, an over-easy fried egg, shredded pork and pork skin with a container of fish sauce.\u00a0 Although delivered in a meticulous arrangement, I quickly made an untidy jumble of the plate so as to taste it all in combination.\u00a0 It&#8217;s the only way this dish should be enjoyed.\u00a0\u00a0<\/span><\/p>\n<p>In all our visits to Coda, this is the menu item I&#8217;ve enjoyed least.\u00a0 That&#8217;s largely because the marinated grilled pork was a bit on the dry side.\u00a0 Even dousing it in fish sauce didn&#8217;t make the pork as moist as it should have been.\u00a0 That&#8217;s a shame because it had that characteristically smoky grilled flavor so prevalent in Vietnamese pork dishes.\u00a0 The shredded pork and pork skin, on the other hand, did have plenty of moistness.\u00a0 \u00a0The over-easy egg had the same impact on the dish as a fried egg has on enchiladas.\u00a0 That is, it gives dishes an entirely different dimension.\u00a0 I&#8217;m not much of an egg afficionado, but add it to enchiladas or some Vietnamese dishes and it&#8217;s magical.<\/p>\n<figure id=\"attachment_83932\" aria-describedby=\"caption-attachment-83932\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-83932 lazyload\" style=\"--smush-placeholder-width: 850px; which aired in April 2022:\u00a0 &#8220;<em>In Triple D, I&#8217;ve been there, I&#8217;ve done that, I&#8217;ve met them, I&#8217;ve heard their story and I&#8217;ve tasted just about every type of menu that there is. I&#8217;m here in Albuquerque, New Mexico and that might get broken today. This is a story about an immigrant family like I&#8217;ve never heard before. They&#8217;re doing a menu that I don&#8217;t think I&#8217;ve quite seen before. This one&#8217;s unique.
