Frijoles and chile are virtually inseparable in New Mexican cuisine and are considered staples.<\/li>\n<li>In 1989, House Bill 406 designated the bizcochito as New Mexico&#8217;s official state cookie. Lawmakers on the range floor couldn&#8217;t initially agree on its spelling, some pressing for the &#8220;s&#8221; and others for &#8220;z.&#8221; Ultimately the Senate returned the bill as &#8220;bizcochito.&#8221;<\/li>\n<li>On On April 8, 1999, Governor Gary Johnson signed the bill making the resolution a law which declared &#8220;red or green&#8221; the official state question. Less known is the fact that the New Mexico state legislature also passed a resolution approving an official state answer. It\u2019s no surprise that \u201cred and green\u201d or \u201cChristmas\u201d has been adopted as the official answer of the great state of New Mexico.<\/li>\n<li>On March 28, 2023, Governor Michelle Lujan Grisham, signed Senate Bill 188 making the aroma of green chile roasting adopted as the official aroma of New Mexico.\u00a0 New Mexico is the first state in the nation to have its own official aroma.<\/li>\n<\/ul>\n<p>Not conspicuous by its absence as an officially recognized food of the Land of Enchantment is the ubiquitous sandwich. Just try to name one sandwich that&#8217;s universally available in restaurants and beloved by the masses throughout New Mexico&#8230;and the green chile cheeseburger doesn&#8217;t count. That&#8217;s not to say there aren&#8217;t outstanding sandwiches crafted in the Land of Enchantment. Each state was represented with one of its hallmark sandwiches, instructions on how to prepare it and locations where you can pick it up during your travels. The New Mexico sandwich on Becky&#8217;s terrific tome was the tostada compuesta, a corn tortilla boat filled with frijoles and chile, carne, lettuce, tomato and Cheddar cheese. The tostada compuesta has been a specialty of the house at <a href=\"https:\/\/www.nmgastronome.com\/?p=158\" target=\"_blank\" rel=\"noopener\"><strong>La Posta<\/strong><\/a> in Mesilla, but isn&#8217;t widely available on sandwich menus (or even New Mexican food menus) throughout New Mexico.<\/p>\n<p>For as long as there&#8217;s been a Gil&#8217;s Thrilling&#8230; numerous online publications have taken readers on a fifty state tour of good sandwiches throughout the fruited plain. Taking the easy route (a cop-out), almost all of them have designated New Mexico green chile cheeseburger as the most culturally significant, sustainably produced, locally sourced sandwich in the Land of Enchantment. Perhaps that&#8217;s indicative of just how difficult it is to name one definitive (non-burger) sandwich that&#8217;s available and beloved throughout the state. Frankly, the only person who might be up for such a task would be for Cheryl Alters Jamison, the scintillating four-time James Beard award-winning author and architect of the <strong><a title=\"New Mexico Green Chile Cheeseburger Trail\" href=\"http:\/\/www.nmgastronome.com\/?p=10532\" target=\"_blank\" rel=\"noopener\">New Mexico Green Chile Cheeseburger Trail<\/a><\/strong>. I&#8217;d be happy to help.<\/p>\n<figure style=\"width: 465px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" style=\"--smush-placeholder-width: 465px; --smush-placeholder-aspect-ratio: 465\/336;border: 4px solid black; margin-top: 3px; margin-bottom: 3px;\" data-src=\"https:\/\/www.nmgastronome.com\/nm\/sandwich\/Images\/Mucho03.jpg\" alt=\"\" width=\"465\" height=\"336\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" \/><figcaption class=\"wp-caption-text\"><span style=\"font-size: 10pt;\">Southwestern Grilled Cheese\u00a0<\/span><\/figcaption><\/figure>\n<p>In the September, 2012 issue of <strong><em><a title=\"Food Network Magazine\" href=\"http:\/\/food-network.com-sub.biz\/?gclid=COqVgJP61bECFRFphwodsDIATw\" target=\"_blank\" rel=\"noopener\">Food Network Magazine<\/a><\/em><\/strong>, an article entitled &#8220;<em>50 States, 50 Sandwiches<\/em>&#8221; listed one &#8220;<em>must try&#8221; sandwich for every state<\/em>, ostensibly the state&#8217;s very best feast between bread.\u00a0 Food Network Magazine did NOT designate the sacrosanct green chile cheeseburger as New Mexico&#8217;s best sandwich.\u00a0 Instead, it named as the Land of Enchantment&#8217;s best a not-so-humble grilled cheese sandwich.\u00a0 At first browse, a grilled cheese sandwich may not seem especially noteworthy, but add Cheddar cheese slices, tomatoes, green chile and crunchy bacon, apply them generously between lightly toasted multi-grain bread and you&#8217;ve got something special, maybe even the definitive state sandwich. New Mexico&#8217;s best sandwich according to the <em>Food Network Magazine<\/em> is the <strong><em>Southwestern Grilled Sandwich<\/em><\/strong>\u00a0(Cheddar cheese slices, spicy New Mexico green chile, tomato slices, and a mound of crisp bacon on multi-grain bread) which comes from Mucho Gourmet Sandwich Shoppe in Santa Fe.<\/p>\n<p>The Mucho Gourmet Sandwich Shoppe, a family owned and operated restaurant, has been serving Santa Fe the finest gourmet sandwiches in the city for going on forty years. Founded in 1989 by Peggy and Rex Schnupp and now operated by two of their children, Nathan and Shannon Curenton, Mucho has become a beloved city institution. It gave me the opportunity to visit for a bit with the delightful Shannon and her youthful mother Peggy, both of whom were as attentive and friendly as possible while simultaneously coordinating all the prep work required to ensure things started off smoothly. Peggy isn&#8217;t as actively involved in the shoppe&#8217;s day-to-day operations as she once was, but she&#8217;s very much an ambassador for the operation she built. Both are ecstatic about the accolade bestowed by <em>Food Network Magazine<\/em>.<\/p>\n<p><strong>25 April 2025<\/strong>:\u00a0 After a thirteen year hiatus, I returned to Mucho with my Kim.\u00a0 We had the great fortune of visiting with the wonderful Peggy.\u00a0 She related that when she and her late husband launched Mucho her children were in their 20s.\u00a0 Today they&#8217;re in their 50s.\u00a0 Peggy could pass for 50-something herself.\u00a0 Her perpetual youthfulness is probably attributable to her boundless energy and positivity.\u00a0 She still likes to travel and remains active.\u00a0 Shannon and Nathan operate the restaurant with a rare guest orientation that endears them to generations of savvy Santa Feans.<\/p>\n<figure style=\"width: 465px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" style=\"--smush-placeholder-width: 465px; --smush-placeholder-aspect-ratio: 465\/354;border: 4px solid black; margin-top: 3px; margin-bottom: 3px;\" data-src=\"https:\/\/www.nmgastronome.com\/nm\/sandwich\/Images\/Mucho04.jpg\" alt=\"\" width=\"465\" height=\"354\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" \/><figcaption class=\"wp-caption-text\"><span style=\"font-size: 10pt;\">Cream of asparagus soup, the best I&#8217;ve had<\/span><\/figcaption><\/figure>\n<p>Mucho is ensconced in a fairly nondescript strip mall within walking distance of the College of Santa Fe. It has a surprisingly large storefront which bespeaks of the shoppe&#8217;s generous in-store seating capacity, not to mention a capacious patio. Even if all seats aren&#8217;t occupied, Mucho has very robust and efficient take-out and delivery business. The ubiquitous corporate chains could learn a thing or to about the sandwich construction process, as efficient as any I&#8217;ve witnessed. It&#8217;s not every restaurant which can fill large take-out orders while providing warm and welcoming service to walk-in customers. Mucho does it exceedingly well.<\/p>\n<p>The menu has two sandwich menu categories: two dozen sandwiches sandwiches on the &#8220;Gourmet Sandwiches&#8221; menu and a &#8220;More Great Mucho Sandwiches&#8221; menu where you choose the fixings, cheeses and bread.\u00a0 \u00a0That&#8217;s almost a different sandwich creation per day for an entire year.\u00a0 Bread options for the &#8220;More Great&#8230;&#8221; menu include: multi-grain, rye, sourdough, white, a sub-roll or ciabatta. Cheeses offered are Swiss, Cheddar, Provolone or Pepperjack Cheese. If a sandwich isn&#8217;t what you&#8217;re after, ten luncheon salads are available, all served on a bed of fresh garden greens with avocado, sweet red onions, pepperoncini, cucumber, tomato and crackers with your choice of dressing on the side. A soup of the day is also available. Make that mucho more&#8230;as in much more bacon than you&#8217;d ever expect, much more roasted green chile flavor with much more piquancy than most chile nowadays, much fresher tomatoes, much better melted Cheddar and a perfectly toasted, buttery multi-grain bread. This is a grown-up grilled cheese sandwich with grown up deliciousness. \u00a0Could it be a sandwich worthy of being called New Mexico&#8217;s best? Mucho&#8217;s soup offerings may not be quite as exotic as those served at Jambo, but they&#8217;re quite good. Shannon makes the soups at Mucho and serves them with a smile. There were three soups available during my inaugural visit and she let me try them all. While all three were wonderful, the <strong><em>cream of asparagus soup<\/em><\/strong> was the most stick-to-your-ribs satisfying, a nicely seasoned creamy broth with chunks of sliced asparagus. It&#8217;s a healthy and homemade gourmet quality soup available in what is traditionally a fast food venue. meant manning a food truck serving Cuban sandwiches and yucca fries to working-class people.\u00a0 It&#8217;s hard to conceive of anything &#8220;basic&#8221; about a truly great <em><strong>Cubano<\/strong><\/em>\u00a0 such as the one served at Mucho.\u00a0 This Cubano (tender pulled pork, juicy ham, Swiss and provolone cheese on a sub roll, garnished with yellow mustard and sliced dill pickles, grilled and hand pressed panini-style) is an exemplar of the sandwich that has captured America&#8217;s heart.\u00a0 Ingredients are piled on generously so they complement one another with garlicky pickles and tangy yellow mustard enlivening the sandwich.<\/p>\n<figure id=\"attachment_70018\" aria-describedby=\"caption-attachment-70018\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-70018 lazyload\" style=\"--smush-placeholder-width: 850px;
