Socorro\u2019s first inhabitants, Piro-speaking people of the Teypana Pueblo, welcomed the scouting party of O\u00f1ate and his men. They showed no fear of the strangers, according to O\u00f1ate\u2019s official log, and with hand signs told the group what lay ahead. When the Teypana inhabitants unexpectedly gave the group a large gift of corn, O\u00f1ate renamed the pueblo Socorro<\/em>.&#8221;<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">Much as Socorro would like to be considered a destination community, it&#8217;s better known as a &#8220;jumping off&#8221; point to nearby destinations.\u00a0 It&#8217;s within minutes of the <strong><a title=\"Bosque del Apache\" href=\"http:\/\/southwest.fws.gov\/refuges\/newmex\/bosque.html\" target=\"_blank\" rel=\"noopener\">Bosque del Apache<\/a> <\/strong>National Life Refuge where 12,900 acres of boggy bottomlands host tens of thousands of ducks, Canadian geese and Sandhill cranes, transient visitors which make their annual trek to this winter habitat. \u00a0It is scant miles away from the <a title=\"Trinity Site\" href=\"http:\/\/www.atomictourist.com\/trinity.htm\" target=\"_blank\" rel=\"noopener\"><strong>Trinity Site<\/strong><\/a> where the first atomic bomb was detonated in 1945. It&#8217;s also not too far from the <a href=\"https:\/\/public.nrao.edu\/visit\/very-large-array\/\" target=\"_blank\" rel=\"noopener\"><strong>Very Large Array<\/strong> <\/a>(VLA), a Federally Funded Research and Development Center.<\/span><\/p>\n<figure id=\"attachment_2776\" aria-describedby=\"caption-attachment-2776\" style=\"width: 430px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"size-large wp-image-2776 lazyload\" style=\"--smush-placeholder-width: 430px; font-family: Verdana;\">If culinary tarriance is what you seek in your sojourns throughout the Land of Enchantment, Socorro probably isn&#8217;t at the top (or perhaps anywhere near) of your list. \u00a0In fact, among\u00a0 some savvy southbound foodies, Socorro is just the town you pass on your way to San Antonio, home of the world-famous <strong><a title=\"The Owl Cafe\" href=\"http:\/\/www.nmgastronome.com\/?p=176\" target=\"_blank\" rel=\"noopener\">Owl Cafe<\/a><\/strong>, the just as famous\u00a0<strong><a title=\"Manny's Buckhorn Tavern\" href=\"http:\/\/www.nmgastronome.com\/?p=164\" target=\"_blank\" rel=\"noopener\">Buckhorn Tavern<\/a><\/strong> and the deserving of fame\u00a0<strong><a title=\"San Antonio General Store\" href=\"http:\/\/www.nmgastronome.com\/?p=2737\" target=\"_blank\" rel=\"noopener\">San Antonio General Store<\/a><\/strong>.\u00a0 In the eyes of culinary cognoscenti, San Antonio is a gem&#8211;one of the state&#8217;s destinations for our sacrosanct green chile cheeseburger.<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">Several Socorro restaurants are slowly changing that perception. \u00a0Among them is the Socorro Springs Brewing Company which over the years has established a reputation as a great reason to get off I25 and pause for a good meal. \u00a0It is a rarity in a town facing the incursion of corporate chains and the aging of hometown restaurants in timeworn edifices. \u00a0It is a multi-hued swath of color in a monochrome town.<\/span><\/p>\n<figure id=\"attachment_9364\" aria-describedby=\"caption-attachment-9364\" style=\"width: 400px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2009\/02\/SocorroSprings06.jpg?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"size-full wp-image-9364 lazyload\" style=\"--smush-placeholder-width: 400px; font-family: Verdana;\">The Socorro Springs Brewing Company just may be the town&#8217;s version of Cheers, a pub and restaurant all the locals visit and ostensibly, a local tavern in which everyone knows your name. \u00a0Get there on a Friday or Saturday night and you just may have to wait for a seat to come open. \u00a0 Most of the cars in the parking lot bear New Mexico, U.S.A. license plates, but you&#8217;ll also espy plates from other states not nearly as enchanting (as if they could possibly be).<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">The walls in the back dining room are festooned with amazing \u00a0framed prints taken at El Bosque del Apache. \u00a0There&#8217;s something remarkably calming about being back-dropped by the imagery of majestic birds in flight and at play in one of the state&#8217;s natural treasures.\u00a0 The cynosure of the main dining room is the large wood-fire oven fired with pecan wood grown in the Rio Grande Valley.\u00a0 Pecan is a very clean and hot burning wood that imparts a slightly sweet and nutty flavor that you&#8217;ll be able to discern on the pizza.<\/span><\/p>\n<figure id=\"attachment_2781\" aria-describedby=\"caption-attachment-2781\" style=\"width: 430px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"size-large wp-image-2781 lazyload\" style=\"--smush-placeholder-width: 430px; font-family: Verdana;\">The Socorro Springs Brewing Company is a full service restaurant with an on-the-premises brewery whose ales and lagers have earned accolades and awards from aficionados of adult beverages. \u00a0If your tastes in beer lean toward\u00a0sarsaparilla, you&#8217;ll love the home brewed root beer. \u00a0It&#8217;s an adult root beer&#8211;not too sweet or acidic with a nice herbal bouquet. \u00a0It&#8217;s a better, all natural (sweetened with agave) root beer than you&#8217;ll find at Albuquerque&#8217;s <strong><a title=\"Il Vicino\" href=\"http:\/\/www.nmgastronome.com\/?p=299\" target=\"_blank\" rel=\"noopener\">Il Vicino<\/a><\/strong> restaurant which also brews its own. \u00a0<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">The menu offers nightly specials and scratch-made soups of the week. \u00a0The soup might be mulligatawny, the special grilled mahi mahi. \u00a0There&#8217;s a lot of variety and creativity on the menu.\u00a0 Ingredients are of surprisingly high quality.\u00a0 All the restaurant&#8217;s beef is from the <strong><a title=\"Buena Vista Ranch\" href=\"http:\/\/www.placenames.com\/us\/p886851\/\" target=\"_blank\" rel=\"noopener\">Buena Vista Ranch<\/a><\/strong> in northern New Mexico.\u00a0 All ground beef is 100 percent top round.\u00a0 The New York strip and rib eye are 100 percent USDA choice or higher.<\/span><\/p>\n<p><span style=\"font-family: Verdana; font-size: 10pt;\">An early indication that the kitchen staff knows what it&#8217;s doing is how good the fresh made <strong><em>salsa with fire-roasted\u00a0ja<\/em><em>la<\/em><em>pe<\/em><em>\u00f1os<\/em><\/strong> is. \u00a0It&#8217;s a fresh salsa of medium piquancy and maximum flavor, a surprisingly good salsa with the invigoratingly fresh flavor combination of chopped tomatoes, onions, cilantro and fire-roasted\u00a0jalape\u00f1os. \u00a0It&#8217;s served with yellow, blue and red corn tortilla chips which are lightly salted, crisp and formidable enough not to crumble under the weight of large salsa scoops.<\/span><\/p>\n<figure style=\"width: 475px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" style=\"--smush-placeholder-width: 475px; font-size: 10pt;\">Another excellent appetizer is the <strong><em>Spinach and Artichoke Dip<\/em><\/strong> made with a quadrumvirate of queso&#8211;four delicious cheeses: Parmesan, Feta, Brie and Cheddar-Jack as well as fresh spinach and artichokes served with a toasted Cheddar batard (a torpedo-shaped loaf of bread that is thicker and stubbier than a baguette) loaf.\u00a0 The dip is thick and creamy, served at molten warmth.\u00a0 The four cheese combination has a lot of personality and flavor complemented very well by the ever so slightly toasted Cheddar bread which is sliced thinly.<\/span><\/p>\n<p><span style=\"font-family: Verdana; font-size: 10pt;\">Wood-fired pizzas are, according to the wait staff, the most popular draw at the restaurant. It&#8217;s easy to see why. That&#8217;s quite an ingredient line-up for quite a pizza. The spelling &#8220;bleu cheese&#8221; as opposed to &#8220;blue cheese&#8221; denotes little in terms of the actual cheese because &#8220;bleu&#8221; is simply the French spelling of &#8220;blue,&#8221; but attitudinally, it says a lot. It says Socorro Springs wants patrons to know they&#8217;re not getting some cheap, watery salad cream quality blue cheese. It makes a difference. Served with roasted potatoes<\/span><\/figcaption><\/figure>\n<p><span style=\"font-family: Verdana; font-size: 10pt;\">One special which just might make it onto the daily menu is the <strong><em>Penne Pasta Arrabiata<\/em><\/strong>, a term which means &#8220;angry style&#8221; due to the heat of the peppers with which it&#8217;s made. \u00a0This pasta dish is comprised of a garlic, tomato, basil and red chile sauce cooked in olive oil. \u00a0If the red chile isn&#8217;t enough for you, a small cup of red pepper flakes comes with it. \u00a0 The restaurant&#8217;s rendition also includes a spicy Italian sausage and heady olives. \u00a0The highlight of this entree is the sausage, as good an Italian sausage as you can find in New Mexico. \u00a0<\/span><\/p>\n<p><span style=\"font-family: Verdana; font-size: 10pt;\"><strong>18 September 2022<\/strong>: \u00a0Matt Lynch of <a href=\"https:\/\/www.thrillist.com\/eat\/nation\/best-cheese-pizza-toppings-overrated\" target=\"_blank\" rel=\"noopener\"><strong>Thrillist<\/strong><\/a> wrote one of my Kim&#8217;s favorite food critiques: &#8220;<em>There&#8217;s an unmistakable stigma attached to being a fully realized, grown-ass adult who prefers cheese pizza. Stating such a preference makes much of the pizza-consuming public think you&#8217;re an unrefined rube with the palate of a small child. That&#8217;s a damn shame, because <strong><a href=\"https:\/\/www.thrillist.com\/eat\/nation\/the-definitive-ranking-of-every-pizza-topping\" target=\"_blank\" rel=\"noopener\">toppings<\/a><\/strong> are the single most overrated element of the pizza equation, and a perfect slice of cheese pizza is a beautiful testament to the virtues of simple restraint<\/em>.&#8221;
