An old Gaelic term pronounced &#8220;crack,&#8221;craic refers to the lively essence of the pub experience, a unique and sometimes loud combination of good friends, good times and of course, good pints. Craic is a word for which there is no exact English translation even though there are some 9,000 pubs in the Emerald Isle. In Ireland, pubs, or public houses, are a focal point of the community&#8211;as much as the local church. Most public houses offer a range of beers, wines, spirits and soft drinks with beer tending to be the most popular adult beverage. In recent years, serving food has become a more important function of the public house throughout the British Isles. Irish food is regarded as bland and unimaginative, especially when compared with the haute (and haughty) cuisine of France and the world&#8217;s most popular cuisine from Italy. Having spent three years in England partaking of wonderful pub food throughout the British Isles, I rise to the defense of this maligned region&#8217;s food, especially &#8220;pub grub&#8221; which is actually quite good. Public houses throughout the British Isles have been required since the 12th century to erect signs outside their premises. Typically, a pub&#8217;s signage will include both the pub&#8217;s name and a graphical element (essential because in the Middle Ages, a large percentage of the population was illiterate). A pub&#8217;s name and graphical identity tell a lot about its character. The name Two Fools Tavern along with its graphical identity of two harlequin-style buffoons seems to convey a fun and relaxed ambiance. The Two Fools Tavern exemplifies the Irish pub concept that in recent years has caught on like wildfire in America. It&#8217;s a concept not without its detractors. One European Web site denounces the &#8220;<strong><a href=\"http:\/\/www.europeanbeerguide.net\/irishpub.htm\">Irish Pub Plague<\/a>,<\/strong>&#8221; equating the Irish pub template as &#8220;<em>the McDonalds of the pub trade<\/em>.&#8221; Talk about no sense of humor.<\/p>\n<p>The Two Fools Tavern could not possibly hope to duplicate the authentic Irish pub experience (especially not without the garrulous Irish), but it&#8217;s about 4700 miles from Dublin for gosh sakes. For Anglophiles like me, it&#8217;s only a few miles away and for that we&#8217;re grateful. Besides, the Two Fools Tavern provides just about the most European feel of any tavern in Albuquerque. The theme continues inside the pub where dark wood accents and Irish bric-a-brac add a homey but masculine feel. Even the small, stylish tables and chairs are traditional and lend an authentic Irish feel.\u00a0 The Tavern is the braintrust of entrepreneurial Tom White and the fine folks who have given New Mexico such dining establishments as <strong><a href=\"https:\/\/www.nmgastronome.com\/?p=63615\" target=\"_blank\" rel=\"noopener\">Scalo&#8217;s Italian Grill<\/a><\/strong>, <a href=\"https:\/\/www.nmgastronome.com\/?p=24521\" target=\"_blank\" rel=\"noopener\"><strong>Pranzo&#8217;s Italian Grill<\/strong><\/a> (Santa Fe) and <a href=\"http:\/\/www.nmgastronome.com\/?p=299\" target=\"_blank\" rel=\"noopener\"><strong>Il Vicino<\/strong><\/a>.<\/p>\n<p>Adult libations include Guinness, the world-famous Irish beer brewed since 1759. At only ten calories per ounce, Guinness (which claims to have bottled the craic) is the favorite beer of the Emerald Isle. That means such appetizers as <strong><em>Scotch eggs<\/em><\/strong>, hard boiled eggs encased in sausage and covered in bread crumbs then deep-fried to a golden brown and served with pub (Boar&#8217;s Head) mustard.\u00a0 Contrary to its name, Scottish eggs are far from being Scottish.\u00a0 They were originally created in 1738 by a London-based department store.\u00a0 More often than not, Scotch eggs are served cold and even though that isn&#8217;t the case at the Tavern, these are more than passable. Not surprisingly, fish and chips are the most popular item on the Two Fools menu. At the Tavern, fish and chips are served in a platter with a faux newspaper lining. Portion sizes range from &#8220;one and one,&#8221; the traditional Irish way of ordering one piece of fish with chips.\u00a0 You can order as many as three pieces of fish with chips if you&#8217;ve got a larger appetite. The fish is a house ale-battered haddock. It is lightly battered to a golden brown hue.<\/p>\n<p>Diners in Ireland normally eat their chips with salt and vinegar. The chips at the Tavern are very much Americanized (thin and crispy) and don&#8217;t sop up the vinegar as well as the flaccid white potatoes used for chips throughout the British Isles.\u00a0 Still, good fish and chips in America are hard to find and these are better than we&#8217;ve had at other so-called Irish taverns in New Mexico. The homemade tartar sauce is equally sweet and savory and in the whole, very good (though you can also drench your fish in vinegar as we did). Served with the fish and chips is a sweet coleslaw with tangy bits of apple. Malley Melt<\/em><\/strong>, a fresh, hand-formed seven ounce all-natural beef burger dressed with grilled onions, 1000 island dressing and Swiss on grilled rye bread is certainly near the top of that list.\u00a0 The grilled rye bread is a wonderfully flavored canvas for the generous toppings though it wilts and droops on account of their moistness.\u00a0 Two Fools is a rarity in that it will prepare your burger to your exacting degree of doneness (a nice pink center at medium).<\/p>\n<p><strong>17 November 2012<\/strong>: The Traditional Favorites section of the menu showcases such favorites as the Ploughman\u2019s Lunch, bangers &amp; mash, fish and chips, corned beef and cabbage and a <strong><em>Guinness beef boxty<\/em><\/strong>.\u00a0 The latter is two housemade potato pancakes filled with slow-simmered Guinness beef stew.\u00a0 The Two Fools rendition is quite dissimilar to the boxy dish offered by <strong><a title=\"O'Niell's Irish Pub\" href=\"https:\/\/www.nmgastronome.com\/?p=11820\" target=\"_blank\" rel=\"noopener\">O&#8217;Niell&#8217;s Irish Pub<\/a><\/strong>, but it is no less delightful.\u00a0 The Guinness beef stew is especially noteworthy.\u00a0 It&#8217;s the type of stew that&#8217;s especially heart-warming on a cold wintery day when a cold, tired body seeks the warmth of comfort food.\u00a0 The Guinness-based beef stock is rich and savory, so good you would enjoy it by itself.\u00a0 You won&#8217;t have to because the the stock is replete with carrots, potatoes and onions, all perfectly prepared.\u00a0 The potato pancakes have a lot more elasticity than most potato pancakes which tend to fall apart easily.<\/p>\n<figure id=\"attachment_68491\" aria-describedby=\"caption-attachment-68491\" style=\"width: 689px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-68491 lazyload\" style=\"--smush-placeholder-width: 689px; means &#8220;<em>uproar and commotion<\/em>&#8221; in the context of a celebratory and fun time.\u00a0 A great ruben sandwich is reason to celebrate hence Two Fool&#8217;s Tavern&#8217;s <em><strong>Rula Bula Ruben\u00a0<\/strong><\/em>(corned beef, Swiss cheese, sauerkraut and 1000 island dressing on grilled rye bread).\u00a0 \u00a0The grilled rye bread is a soft and delicious canvas for thinly sliced shards of corned beef.\u00a0 Slightly sweet Thousand Island dressing counterbalances a tangy sauerkraut dressing.\u00a0 Both add the element of moistness to the sandwich.\u00a0 With just a bit more corned beef, it would rise in my estimation to one of the very best in the city.<\/p>\n<p><strong>15 October 2014<\/strong>: In <a href=\"https:\/\/www.lavenderandlovage.com\/2024\/07\/traditional-british-ploughmans-lunch.html\" target=\"_blank\" rel=\"noopener\"><strong>Lavender &amp; Lovage<\/strong><\/a>, award-winning blogger Karen Burns-Booth explains &#8220;<em>A traditional Ploughman\u2019s Lunch is more an assembly job than a recipe.
