font-family: Verdana;\">It wasn&#8217;t that long ago that if you played &#8220;word association&#8221; with almost anyone outside the Mason-Dixon line, the first thing coming to mind if you used the term &#8220;Southern food&#8221; was probably something like &#8220;<em>heapin&#8217; helpins&#8217; of hillbilly hospitality<\/em>.&#8221; \u00a0<\/span><span style=\"font-size: 10pt; font-family: Verdana;\">During their nine-year run as one of the most popular comedies in the history of American television, the Clampetts, a hillbilly family who relocated to Beverly Hills after finding oil on their property, introduced &#8220;vittles&#8221; to the American vernacular. \u00a0Vittles, of course, meant such &#8220;delicacies&#8221; as possum shanks, pickled pig jowls, smoked crawdads, stewed squirrel, turnip greens, and owl cakes. \u00a0&#8220;<em>Weeeee Doggies,&#8221; now that&#8217;s eatin<\/em>&#8216;.&#8221;<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">To much of America, the aforementioned delicacies were culinary curiosities&#8211;bumpkinly and provincial food no one outside the deeply rural south would eat. \u00a0Because the Beverly Hillbillies predated the Food Network and the culinary awakening of America, those stereotypes as to what constitutes Southern food became deeply ingrained in the fabric of American culture.<\/span><\/p>\n<figure id=\"attachment_58786\" aria-describedby=\"caption-attachment-58786\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2010\/07\/Hollar11-scaled.jpeg?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"wp-image-58786 lazyload\" style=\"--smush-placeholder-width: 750px; font-family: Verdana;\">In 2008,\u00a0Gary Paul Nabhan published <strong><a href=\"https:\/\/www.amazon.com\/Renewing-Americas-Food-Traditions-Continents\/dp\/1933392894\" target=\"_blank\" rel=\"noopener\"><em>Renewing America&#8217;s Food Traditions<\/em><\/a><\/strong>, one of the most important books written about American food. This terrific tome celebrates the vast diversity of foods which gives North America its distinctive cultural identity, an identity reflecting the vast and unique hodgepodge of cultures. \u00a0In an example of gerrymandering Congress would envy, Nabhan remapped North America&#8217;s boundaries into thirteen basic food &#8220;nations&#8221; or culinary regions. \u00a0He named each region for\u00a0its ecological and cultural keystone foods.<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">The culinary region which includes Southern Arizona and New Mexico into northern Mexico, for example, is called &#8220;<em>chili pepper nation<\/em>.&#8221; \u00a0Three distinctive food nations define the South: &#8220;<em>Chestnut Nation<\/em>&#8220;&#8211;northern Georgia through West Virginia; &#8220;<em>Crab Cake Nation<\/em>&#8220;&#8211;the mid-Atlantic down to the Florida coast; font-family: Verdana;\">These three culinary nations proudly showcase distinctive traditions and ingredients spawned from a veritable stew of multicultural influences which evolved into Southern food as we know it today. \u00a0Those influences include Native and African Americans as well as Scottish, French, Spanish and so many others which were ultimately responsible for Soul food, Creole and Cajun cooking, barbecue and more. \u00a0To pigeonhole Southern food into a finite category is to not understand Southern food at all.<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">Having lived in Mississippi for eight years, we knew not to compartmentalize Southern food which we thought we had seen described and defined every conceivable way. \u00a0That is, until reading an email from a long-time reader of this blog. \u00a0When Robyn Black described a restaurant in Madrid, New Mexico which serves &#8220;<em>a kind of continental southern food&#8230;not the kind of ya&#8217;all southern food, but a lot more upscale<\/em>&#8221; in an ambiance &#8220;<em>as comfortable as an old shoe, but a lot prettier<\/em>,&#8221; we were intrigued.<\/span><\/p>\n<figure id=\"attachment_58788\" aria-describedby=\"caption-attachment-58788\" style=\"width: 525px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2010\/07\/Hollar13-scaled.jpeg?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"wp-image-58788 lazyload\" style=\"--smush-placeholder-width: 525px; font-family: Verdana;\">When she added that &#8220;<em>This is a place that should not be missed, whether you are just passing through or staying in Madrid. \u00a0In fact this is a place that is worth driving to from just about anywhere,&#8221; <\/em>and personalized it with &#8220;<em>Gil Garduno, this is a restaurant you should not miss<\/em>,&#8221;\u00a0a visit became inevitable. <\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">The restaurant Robyn described so invitingly is called The Hollar. \u00a0In the vernacular of the South, a hollar is a term for &#8220;a\u00a0small valley between mountains,&#8221; an apt description for Madrid itself. \u00a0Long-time Country music fans are undoubtedly familiar with part-time New Mexican Randy Travis&#8217;s &#8220;Deeper Than The Holler&#8221; which describes the lyrical way a country boy expresses his love (i.e., &#8220;<em>My love is deeper that the holler, stronger than the rivers, higher than the pine trees growin&#8217; tall upon the hill<\/em>&#8230;)&#8221;<\/span><\/p>\n<figure id=\"attachment_4785\" aria-describedby=\"caption-attachment-4785\" style=\"width: 444px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"size-full wp-image-4785 lazyload\" style=\"--smush-placeholder-width: 444px; font-family: Verdana;\">The Hollar is the brainchild of owner-chef Josh Novak who matriculated at\u00a0Le Cordon Bleu culinary school in Atlanta, perhaps the heart of the South. \u00a0It is situated in the rustically charming wooden structure which previously housed the\u00a0<strong><a title=\"Tocororo Cafe\" href=\"http:\/\/www.nmgastronome.com\/?p=195\" target=\"_blank\" rel=\"noopener\">Tocororo Cafe<\/a><\/strong>, a highly regarded Cuban restaurant which we loved. \u00a0Robyn assured me that &#8220;<em>Tocororo may have been good, but The Hollar which has taken it&#8217;s place is stellar<\/em>!&#8221; \u00a0She called chef Novak &#8220;<em>an outstanding, innovative chef<\/em>!&#8221;\u00a0 <\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">The Hollar has interior seating for fewer than thirty guests, but weather-permitting, the place to dine is really the outdoor patio which seats more than 20 contented guests.\u00a0 It is an ideal milieu for enjoying an unseasonably warm late autumn New Mexico day particularly when entertainment is provided&#8211;and if it isn&#8217;t, the people watching is always interesting.\u00a0 If you&#8217;re not into watching people, there are always local and visiting dogs, some of whom actually order from the &#8220;Howler Menu.&#8221;<\/span><\/p>\n<figure id=\"attachment_4787\" aria-describedby=\"caption-attachment-4787\" style=\"width: 444px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"size-full wp-image-4787 lazyload\" style=\"--smush-placeholder-width: 444px; font-family: Verdana;\">More colorful than the interior walls are the clientele, which seemingly typical of Madrid restaurants, is a mix of Bohemians and bikers. \u00a0It&#8217;s the tourists who seem out of place.\u00a0 One <a href=\"https:\/\/www.youtube.com\/watch?v=zCa4Hj_czYA\" target=\"_blank\" rel=\"noopener\"><strong>old hippie<\/strong><\/a> (calling to mind a country song by that name by the Bellamy Brothers) who lives in Madrid told us his 13-year-old dog Blue visits The Hollar even without him.\u00a0 Blue goes from table to table enjoying the generosity of their kindness. With one blue eye and one brown eye, Blue is impossible to resist.<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">The abbreviated menu is inspired, the &#8220;continental Southern&#8221; Robyn described. \u00a0It&#8217;s Southern food with refinement to be sure, but it also includes some of the more simple favorites such as fried green tomatoes and fried chicken. \u00a0Lest you think the commonality among everything on the menu is &#8220;fried,&#8221; font-family: Verdana;\"><strong>2 August 2009<\/strong>: One surprise is the <strong><em>Hollar Burger with Prosciutto and Provolone<\/em><\/strong>, an inspired burger combination that might seem more Italian than Southern were it not for the fact that a biscuit replaces the banal burger bun. \u00a0Unlike the crumbly biscuits I make at home, this one holds together surprisingly well despite the moistness of the beef. \u00a0In terms of circumference it&#8217;s not a big burger, but it stacks pretty high with a thick, juicy beef patty; font-family: Verdana;\"><strong>2 August 2009<\/strong>: With today&#8217;s inflation the phrase &#8220;as tough as a two dollar steak&#8221; should probably be replaced by &#8220;<em>as tough as a twenty dollar steak<\/em>.&#8221;\u00a0 An occasional Hollar&#8217;s brunch menu offering features a <strong><em>New York Steak and Eggs<\/em><\/strong> for five dollars less than that, but this steak isn&#8217;t tough in the least. \u00a0It&#8217;s a tender and juicy steak&#8211;about eight-ounces&#8211;seasoned to perfection with nary any gristle. \u00a0In addition to the two eggs, this plate includes some of the very best grits I&#8217;ve ever had. \u00a0If you&#8217;ve never had good grits, you&#8217;ve never had Josh Novak&#8217;s\u00a0smoked gouda grits which have a texture and flavor unlike any grits I can remember, even in Mississippi.<\/span><\/p>\n<p><span style=\"font-size: 10pt; On the tongue, it&#8217;s as floral as it smells, very fresh and light. Though not very sweet in taste, lavender is neither bitter nor particularly savory, either. It&#8217;s a bit of a cross between a rose and the herb rosemary with elements of mint and bright citrus<\/em>.&#8221;\u00a0 It&#8217;s precisely what we tasted. <\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\"><strong>30 October 2021<\/strong>:\u00a0 The Hollar offers a white- and red-wine menu, but if (like me) you&#8217;re not old enough for adult beverages or you&#8217;re craving something sweet for dessert, an excellent choice is a <em><strong>root beer float.<\/strong><\/em>\u00a0 Made with Way 2 Cool root beer (anise, licorice, clove, and mint blend and Madagascar Bourbon vanilla) in Moriarity&#8217;s <a href=\"https:\/\/www.sierrablancabrewery.com\/craft-brews-and-sodas.html\" target=\"_blank\" rel=\"noopener\"><strong>Sierra Blanca Brewing Company<\/strong><\/a>, this root beer has a home-brewed flavor and sweetness possible only from natural sugar.\u00a0 With a nice effervescence, it creates the frothy, fizzy delightful qualities we all love from root beer floats.<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">Biscuits play a prominent role in the\u00a0 menu and as wonderful as they are, I can&#8217;t help but wonder what a good jam would add. Still, if you&#8217;re looking for a refreshing departure from the de rigueur New Mexico brunch standards such as breakfast burritos, The Hollar is a welcome change. If you&#8217;re looking for a great meal in a terrific setting, the picturesque drive to Madrid should definitely be on your horizon.
