By sheer necessity, food trucks must be limited, well-defined, maybe even singularly focused.\u00a0 The advantage the successful ones have is that they can concentrate on creating memorable dishes around their concept using a few common ingredients.\u00a0 Rollin&#8217; On In, for example, lists only four entrees on its menu: three tacos, a quesadilla, three enchiladas and a burrito.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">With those four <em>entrees<\/em>, however, there are an infinite number of &#8220;build-your-own&#8221; possibilities.\u00a0 Your construction options include four <em>fillings<\/em> (shredded chicken, shredded pork, ground beef and potato and veggie mix), eleven <em>fresh faves<\/em> (cheese, lettuce, tomato, onion, fresh jalape\u00f1o, grilled corn, green onion, red cabbage, cucumber, cilantro and lime) and four <em>sauces<\/em> (lime and cilantro ranch, salsa, red chile and green chile).\u00a0 Okay, mathematically the number of options isn&#8217;t infinite, but with over 300 million possible combinations for each entree, (don&#8217;t ask me to show my math) that&#8217;s still an impressive number.<\/span><\/p>\n<figure id=\"attachment_49893\" aria-describedby=\"caption-attachment-49893\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-49893 size-full lazyload\" style=\"--smush-placeholder-width: 750px; --smush-placeholder-aspect-ratio: 750\/600;border: 4px solid black; margin-top: 3px; margin-bottom: 3px;\" data-src=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2018\/10\/Rollin02.gif?lossy=2&strip=1&webp=1\" alt=\"\" width=\"750\" height=\"600\" data-srcset=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2018\/10\/Rollin02.gif?lossy=2&amp;strip=1&amp;webp=1 750w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2018\/10\/Rollin02.gif?size=128x102&amp;lossy=2&amp;strip=1&amp;webp=1 128w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2018\/10\/Rollin02.gif?size=256x205&amp;lossy=2&amp;strip=1&amp;webp=1 256w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2018\/10\/Rollin02.gif?size=384x307&amp;lossy=2&amp;strip=1&amp;webp=1 384w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2018\/10\/Rollin02.gif?size=512x410&amp;lossy=2&amp;strip=1&amp;webp=1 512w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2018\/10\/Rollin02.gif?size=640x512&amp;lossy=2&amp;strip=1&amp;webp=1 640w\" data-sizes=\"(max-width: 750px) 100vw, 750px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" \/><figcaption id=\"caption-attachment-49893\" class=\"wp-caption-text\">Quesadillas<\/figcaption><\/figure>\n<p><span style=\"font-size: small; font-family: Verdana;\">Food Network celebrity chef Bobby Flay once lamented, &#8220;<em>when people pile seven things onto one burger, it drives me nuts<\/em>!.&#8221;\u00a0 Similarly, seven ingredients on any of the four entrees on the Rollin&#8217; On In menu would be a hodgepodge, a medley, a potpourri.\u00a0 It&#8217;s everything <em>including<\/em> the kitchen sink.\u00a0 It&#8217;s ingredients competing against one another for your rapt attention and all that serves to do is confuse your taste buds.\u00a0 Who wants confused taste buds when the goal of any meal should be to tantalize and titillate those taste buds with ingredients that work very well together? <\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">With that realization, we asked for only four ingredients on our <em><strong>quesadilla<\/strong><\/em>: shredded chicken, grilled corn, onion and for dipping, the lime with cilantro ranch dressing. The lime with cilantro ranch dressing is genius, a blending of distinct and complementary flavors that coalesce beautifully and provide a nice counterbalance to the fatty, salty, melted cheese. It\u2019s a terrific alternative to salsa which seems to be a de rigueur accompaniment to quesadillas. The shredded chicken isn\u2019t \u201ctorn and tattered\u201d as some \u201cshredded\u201d meats tend to be. It\u2019s silky and fine with no extraneous sinew or fat. Thankfully my Kim isn\u2019t quite as \u201cexperimental\u201d with ingredients as her husband who sometimes gets carried away\u2014often to the detriment of a dish. She opted for a simple is best approach on the <em><strong>three tacos <\/strong><\/em>we shared: shredded pork, grilled corn, onions and the terrific lime and cilantro ranch dressing. Hmm, that sounds just like the ingredients from which our quesadilla was constructed. Why mess with a good thing? These tacos were terrific. The corn shells were a perfectly pliable envelope to hold ingredients intact and had a pronounced corn flavor, too.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">More than any dish we enjoyed at Rollin\u2019 On In, the enchiladas made us wish we were dining at a brick-and-mortar establishment. That\u2019s because the enchiladas are far too good for a paper plate and plastic utensils. In the spirit of carnivorous diversity, we ordered the <em><strong>enchiladas<\/strong><\/em> with beef and potato, grilled corn, onions and cheese (unfortunately fried eggs are not an available option) smothered with red and green chile. While the enchiladas are fork tender, they aren\u2019t plastic fork tender. They are, however, very tasty with pleasantly piquant chile. Large niblets of roasted corn impart sweet notes to the dish while the white onions give the chile a bit more bite.
