font-family: Verdana;\">With\u00a0more than 6,000 burger restaurants, California has more eateries dedicated to the sacrosanct burger than any other state.\u00a0 That&#8217;s only fitting considering the Golden State also gave us McDonald&#8217;s, Jack In The Box, In-N-Out and the &#8220;Impossible Burger,&#8221; a burger made with a plant-based meat substitute.\u00a0\u00a0The first half of the 20th century introduced the designation &#8220;California Burger&#8221; in recognition of burgers topped with lettuce, onion and tomato, the fresh produce grown year-round in the Golden State.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">In 1924, one of the most significant and lasting innovations to the burger occurred in Pasadena when a\u00a0<a href=\"https:\/\/www.roadsideamerica.com\/tip\/55912\" target=\"_blank\" rel=\"noopener\"><strong>16-year-old invented the cheeseburger<\/strong><\/a>.\u00a0 Nearly a hundred years later, machines began cranking out the world&#8217;s <a href=\"https:\/\/interestingengineering.com\/the-worlds-first-robot-made-burger-is-served-in-san-francisco-for-6\" target=\"_blank\" rel=\"noopener\"><strong>first robot-made hamburger<\/strong><\/a> in San Francisco.\u00a0 In 2009, a Los Angeles restaurateur introduced the <a href=\"https:\/\/www.umamiburger.com\/\" target=\"_blank\" rel=\"noopener\"><strong>Umami Burger<\/strong><\/a> which incorporates popular Japanese ingredients to a line of savory burgers.\u00a0 Asian fusion burgers have since exploded across the fruited plain.\u00a0 In 2014, the Santa Barbara born <a href=\"https:\/\/www.habitburger.com\/\" target=\"_blank\" rel=\"noopener\"><strong>Habit Burger Grill<\/strong><\/a> became the first better-burger chain to file for an Initial Public Offering (IPO) and saw its stock price skyrocket 100-percent within the first day of trading.<\/span><\/p>\n<figure id=\"attachment_50737\" aria-describedby=\"caption-attachment-50737\" style=\"width: 225px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2018\/12\/GrillABurger06.jpg?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"wp-image-50737 size-full lazyload\" data-src=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2018\/12\/GrillABurger06.jpg?lossy=2&strip=1&webp=1\" alt=\"\" width=\"225\" height=\"225\" data-srcset=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2018\/12\/GrillABurger06.jpg?lossy=2&strip=1&webp=1 225w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2018\/12\/GrillABurger06-150x150.jpg?lossy=2&strip=1&webp=1 150w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2018\/12\/GrillABurger06-80x80.jpg?lossy=2&strip=1&webp=1 80w\" data-sizes=\"(max-width: 225px) 100vw, 225px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" style=\"--smush-placeholder-width: 225px; font-family: Verdana;\">In 2017, Guy Fieri, host of the Food Network&#8217;s top-rated show &#8220;Diners, Drive-Ins and Dives&#8221;\u00a0 visited Grill-A-Burger in Palm Desert, California.\u00a0 One year later so did your humble blogger.\u00a0 Okay, so this last event probably wouldn&#8217;t qualify under anyone&#8217;s list of significant events in the history of the burger, but it meant a lot to me.\u00a0 Not so much because Guy Fieri had been there, but because Grill-A-Burger was named one of the top ten burgers across the fruited plain by TripAdvisor readers&#8230;and because I was able to enjoy two all-beef patties, special sauce, lettuce, cheese, pickles and onions on a sesame seed bun without having to go to McDonald&#8217;s (but more on that later).<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">Fittingly Grill-A-Burger&#8217;s &#8220;mascot&#8221; is a cartoonish gorilla holding a burger nearly as big as his head.\u00a0 There&#8217;s nothing cartoonish about the size of the burger.\u00a0 Just ask Guy Fieri who had a hard time getting the burger into his well-exercised mouth.\u00a0 Fieri enjoyed the most incendiary burger on the menu, the aptly named Devil&#8217;s Revenge, a behemoth burger made\u00a0with all the heat of fried Serrano chilies, caramelized chipotle onions, pepper jack cheese, and crisp hardwood smoked bacon, slathered with hot and spicy Spontaneous Combustion Habanero Pepper Relish, Sriracha mayo, and chipotle ketchup on a jalapeno-cheese bun. <\/span><\/p>\n<figure id=\"attachment_50700\" aria-describedby=\"caption-attachment-50700\" style=\"width: 578px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-50700 size-full lazyload\" style=\"--smush-placeholder-width: 578px; font-family: Verdana;\">The menu bespeaks of the restaurant&#8217;s passion for burgers and of providing &#8220;high-quality fresh food, excellent service and a few laughs each and every day.&#8221;\u00a0 Some of those laughs and a little double-entendre can be found on the menu, too.\u00a0 The menu, for example, speaks of changing the &#8220;zero trans fat oil every days&#8221; for the restaurant&#8217;s &#8220;a-peeling spuds and stuff.&#8221;\u00a0 It boasts &#8220;you can&#8217;t beat our meat&#8221; and &#8220;we have nice buns, too.&#8221;\u00a0 The &#8220;I Dream of Weenie&#8221; section of the menu listing fifteen different hot dog options asks &#8220;what&#8217;s your doggy style.&#8221;<\/span><\/p>\n<p><span style=\"font-family: Verdana; font-size: small;\">If you&#8217;ve got an irreverent sense of humor, you&#8217;ll appreciate the tongue-in-cheek, politically incorrect burger menu where you&#8217;ll find such double-take-inspiring creations as <strong>What A Friend We Have in Cheeses<\/strong> (American, Cheddar, Monterey Jack and Swiss), <strong>Blu Job<\/strong> (hardwood smoked bacon with creamy, crumbled Bleu cheese), <strong>Chili Chili Bang Bang<\/strong> (open-face burger with all-meat chili) and the <strong>Code Blue Orgasmic Burger<\/strong> (saut\u00e9ed mushrooms, deep-fried onions, blue cheese, chipotle mayo).\u00a0 The menu is a better read than many novels.<\/span><\/p>\n<figure id=\"attachment_50701\" aria-describedby=\"caption-attachment-50701\" style=\"width: 621px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-50701 size-full lazyload\" style=\"--smush-placeholder-width: 621px; font-family: Verdana;\">California is the largest producer of avocados grown in the United States.\u00a0 Grill-A-Burger serves avocados in a unique and delicious form we hadn&#8217;t previously seen&#8211;fittingly as an alternative to French or sweet potato fries.\u00a0 The <em><strong>California Avocado Fries<\/strong><\/em>, described on the menu as &#8220;<em>Everything you AVO wanted!\u00a0 Wedges of avocados beer battered, Panko breaded, lightly crisped and seasoned with sea salt<\/em>.&#8221;\u00a0 This is another California trend that needs to catch on.\u00a0 Avocado fries are absolutely delicious, even moreso when enlivened with one of the two accompanying dipping sauces, a housemade lime-cilantro and a chipotle-Ranch sauce.\u00a0 Puncture the Panko breading and you&#8217;re rewarded with wisps of steam heralding buttery, hot avocados resembling fries.\u00a0 Avocado lovers will love this wonderful alternative to guacamole.\u00a0\u00a0<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">For men of my generation, a Big Mac was a rite of passage, a graduation from Happy Meal cheeseburgers to a real adult burger.\u00a0 It was an\u00a0event akin to transitioning from training wheels to a ten speed bike.\u00a0\u00a0You can imagine my surprise upon reading a 2016\u00a0<em>W<\/em><em>all Street Journal\u00a0<\/em>report that only one in five adults between the ages of 18 and 34 has ever even tasted McDonald\u2019s signature burger. That\u2019s right!\u00a0\u00a0 Eighty percent of all millennials have never experienced a Big Mac!\u00a0Even more surprising, many of my generation\u2013those of us who grew up on Big Macs\u2013 haven\u2019t had one in decades (and I had thought it was only me).<\/span><\/p>\n<figure id=\"attachment_50702\" aria-describedby=\"caption-attachment-50702\" style=\"width: 598px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-50702 size-full lazyload\" style=\"--smush-placeholder-width: 598px; font-family: Verdana;\">Thank goodness we discovered Grill-A-Burger.\u00a0 Among other things, it saved me from someday having to visit McDonald&#8217;s to relive my Big Mac experiences.\u00a0 Grill-A-Burger&#8217;s answer to the Big Mac is the &#8220;<em><strong>Big Mock<\/strong><\/em> (double-decker with double patties, double slices of American cheese, chopped lettuce, chopped onions, pickles and the restaurant&#8217;s own &#8220;special sauce&#8221; on a sesame seed bun).\u00a0 This is essentially an optimized Big Mac, a Big Mac being all it can be.\u00a0 True to its name, it makes a mockery of the Big Mac, especially the beef which really did come from cows.\u00a0<\/span><span style=\"font-family: Verdana; font-size: small;\">It&#8217;s one of the very best burgers to cross my lips in five years.\u00a0\u00a0<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">In another one of those\u00a0mystifying Mars and Venus contradictions even Stephen Hawking would be unable to understand, my Kim ordered the <em><strong>Pancho Villa<\/strong><\/em> (fire-roasted green chile, avocado, pepper jack cheese, onion, tomato, Romaine lettuce and chipotle mayo).\u00a0 Much to my chagrin, she never orders a green chile cheeseburger in New Mexico.\u00a0 So why would she order one in California?\u00a0 &#8220;Because I was missing green chile,&#8221; she explained.\u00a0 Okay, she got me.\u00a0 The Pancho Villa is a terrific burger even though the green chile (a single strip laid atop the beef) is rather on the anemic side with not much more bite than a bell pepper (maybe it came from New York City).\u00a0 Despite the lack of piquancy, it&#8217;s such a flavorful burger we couldn&#8217;t help but appreciate it for what it was.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">Don&#8217;t be surprised if someday you read about Grill-A-Burger&#8217;s inventing a unique gourmet burger that establishes a new nationwide trend.\u00a0 It is, after all, a California born-and-bred eatery and no state innovates burgers like California does.\u00a0\u00a0<\/span><\/p>\n<p><strong style=\"font-family: Verdana;
