font-family: Verdana;\">When my friend <strong><a href=\"https:\/\/davidpwagnerauthor.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">David Wagner,<\/a><\/strong> author of the spell-binding Rick Montoya Italian mysteries, invited us to dinner at the Shamrock Brewing Co. in his hometown of Pueblo, Colorado, I quickly leapt to the conclusion that Shamrock just might be the inspiration for O&#8217;Shea&#8217;s Irish Pub, the favorite gathering spot for Rick Montoya and other English-speaking expats living in Rome.\u00a0 I pictured &#8220;<em>a decor that could best be described as mid-century modern, that century being the seventeenth<\/em>&#8221; with wood being the dominant feature.\u00a0 My picture included a &#8220;<em>professional tavern owner<\/em>&#8221; with an appropriated name, maybe something like Guido Shamrock, would preside over the place.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">Shamrock wasn&#8217;t much like O&#8217;Shea&#8217;s.\u00a0 Thankfully, it wasn&#8217;t much like contemporary Irish pubs across the fruited plain either.\u00a0 You know the type:\u00a0 the de rigueur Irish name (O&#8217;Casey, O&#8217;Brien, O&#8217;MyGod), tacky green paint with decorative leprechauns leaping around, super-cooled Guinness and lots of that good old-fashioned Irish <em>craic <\/em>(an old Gaelic term referring to the lively essence of the pub experience).\u00a0 It&#8217;s gotten so bad Irish pubs have become a parody of stereotypes, prompting\u00a0 some Europeans to denounce them as \u201c<em>the McDonald\u2019s of the pub trade.<\/em>\u201d\u00a0 \u00a0\u00a0<\/span><\/p>\n<figure id=\"attachment_52766\" aria-describedby=\"caption-attachment-52766\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-52766 size-full lazyload\" style=\"--smush-placeholder-width: 750px; font-family: Verdana;\">In terms of look, feel and attitude, Shamrock may not be quite as hoary and timeworn as O&#8217;Shea&#8217;s but it&#8217;s pretty venerable in its own right.\u00a0 Having been founded in 1940, the Shamrock actually reminded me very much of <a href=\"https:\/\/www.doylescafeboston.com\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Doyle&#8217;s<\/strong><strong> Cafe,<\/strong><\/a> an Irish neighborhood haunt in Boston.\u00a0 Though Shamrock is 58 years younger than Doyle&#8217;s, it certainly precedes the contemporary Irish pub template.\u00a0 That makes it pretty authentic in my book.\u00a0 Never mind that was founded by the Calantino family, not a very common Irish name, but then neither was &#8220;Guido &#8220;O&#8217;Shea,&#8221; the &#8220;<em>American pretending to be Irish<\/em>&#8221; proprietor of O&#8217;Shea&#8217;s in Rick Montoya&#8217;s Rome.<\/span><\/p>\n<p><span style=\"font-family: Verdana; font-size: small;\">Though Shamrock may not have been David Wagner&#8217;s inspiration for O&#8217;Shea&#8217;s Irish Pub, it&#8217;s almost as close to his heart as is the fictional watering hole that transported Rick Montoya from Rome to Dublin.\u00a0 Not only is Shamrock within easy walking distance to his beautiful downtown Pueblo home, it&#8217;s consistently rated as one of the top-ten best restaurants in Pueblo.\u00a0 That explains why David and Mary, his beautiful better-half, are so very well acquainted with the menu.\u00a0 Their familiarity &#8220;saved me from myself&#8221; and my tendency to order the weirdest, most obscure sounding dish on the menu.\u00a0 Okay, maybe boxty is just a little obscure&#8230;<\/span><\/p>\n<figure id=\"attachment_52767\" aria-describedby=\"caption-attachment-52767\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-52767 size-full lazyload\" style=\"--smush-placeholder-width: 750px; font-family: Verdana;\">If lamb is the core of the quintessential Irish meal,\u00a0 boxty is the true test of Irish womanhood. An old Irish rhyme declares, \u201c<em>Boxty on the griddle, boxty on the pan; if you can\u2019t make boxty, you\u2019ll never get a man<\/em>.\u201d Boxty is a traditional Irish potato pancake whose Irish name &#8220;Aran Boct Ti&#8221; actually translates to \u201cpoor house bread.\u201d\u00a0 Culinary Irish history records that boxty has been around almost as long as the potato itself.\u00a0 Shamrock offers two versions: a beef boxty stuffed with Irish pot roast in a porter ale sauce and topped with Gorgonzola cream and a vegetarian boxty (and I had thought the only vegetarians in Ireland were sheep) stuffed with artichoke hearts, roasted peppers and spinach and topped with sun-dried tomato cream. <\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">Being neither a sheep or a vegetarian, my choice was obviously the <em><strong>beef boxty<\/strong><\/em>.\u00a0 Now, to describe boxty as Irish potato pancake would be to sell it short.\u00a0 It&#8217;s much more than that and not just in terms of cultural importance.\u00a0 Nor is it delicious solely because of the sum of its ingredients (grated potatoes, mashed potatoes, flour, and buttermilk).\u00a0 It&#8217;s got a homey, creamy crepe, comfort food quality.\u00a0 Moreover, boxty is tabula rasa, a blank slate, upon which you can heap other delicious elements, perhaps none as good as Irish pot roast.\u00a0 As if tender tendrils of moist pot roast reminiscent of mom&#8217;s Sunday best isn&#8217;t enough, the porter ale sauce and Gorgonzola cream alone are worth a trip to Pueblo.<\/span><\/p>\n<figure id=\"attachment_52768\" aria-describedby=\"caption-attachment-52768\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-52768 size-full lazyload\" style=\"--smush-placeholder-width: 750px; --smush-placeholder-aspect-ratio: 750\/563;border: 4px solid black; margin-top: 3px; margin-bottom: 3px;\" data-src=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2019\/08\/Shamrock04.gif?lossy=2&strip=1&webp=1\" alt=\"\" width=\"750\" height=\"563\" data-srcset=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2019\/08\/Shamrock04.gif?lossy=2&amp;strip=1&amp;webp=1 750w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2019\/08\/Shamrock04.gif?size=128x96&amp;lossy=2&amp;strip=1&amp;webp=1 128w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2019\/08\/Shamrock04.gif?size=256x192&amp;lossy=2&amp;strip=1&amp;webp=1 256w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2019\/08\/Shamrock04.gif?size=384x288&amp;lossy=2&amp;strip=1&amp;webp=1 384w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2019\/08\/Shamrock04.gif?size=512x384&amp;lossy=2&amp;strip=1&amp;webp=1 512w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2019\/08\/Shamrock04.gif?size=640x480&amp;lossy=2&amp;strip=1&amp;webp=1 640w\" data-sizes=\"(max-width: 750px) 100vw, 750px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" \/><figcaption id=\"caption-attachment-52768\" class=\"wp-caption-text\">Black and Blue Steak Salad<\/figcaption><\/figure>\n<p><span style=\"font-size: small; font-family: Verdana;\">It&#8217;s oft been said that &#8220;<em>everyone&#8217;s Irish on St. Patrick&#8217;s Day<\/em>.&#8221;\u00a0 I&#8217;m still waiting for my Irish-Swedish bride to explain how her <em><strong>black and blue steak salad<\/strong><\/em> (crisp romaine lettuce tossed with a roasted shallot and peppercorn vinaigrette, Roma tomatoes, Gorgonzola cheese, topped with grilled, sliced sirloin steak prepared medium-rare) is Irish.\u00a0 Gorgonzola is Italian.\u00a0 So are Roma tomatoes.
