when Marigold Cafe opened its doors in the Journal Center area retail space which also houses <a href=\"https:\/\/www.nmgastronome.com\/?p=51616\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Restoration Pizza<\/strong><\/a> and Cabela&#8217;s.\u00a0 Along with <a href=\"https:\/\/www.nmgastronome.com\/?p=40740\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Torinos @ Home<\/strong><\/a>, these two bookend restaurants just may make the Journal Center area a dinnertime dining destination instead of just two other restaurants serving the burgeoning area&#8217;s lunch crowd.<\/p>\n<figure id=\"attachment_54148\" aria-describedby=\"caption-attachment-54148\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2020\/02\/Marigold02.gif?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"wp-image-54148 size-full lazyload\" style=\"--smush-placeholder-width: 750px; It&#8217;s an idea whose time has come and best of all, it&#8217;s executed exceptionally well. Credit that to the passion of its dynamic owners. We prepare each dish with love, care, and pride. We make an effort to create fresh and exciting flavors throughout our menu. We strive for consistency in all of our dishes and aim to have you leaving full and happy every time<\/em>.&#8221;<\/p>\n<p>Of course mission statements don&#8217;t translate to &#8220;mission accomplished.&#8221;\u00a0 Great restaurants&#8211;those with staying power and passionate customer loyalty&#8211;recognize they have to execute to the mission statement every day.\u00a0 The Marigold Cafe is off to a good start, its owners&#8217; passion evident in a day-to-day operational model that emphasizes customer service and great food. Violet gets up early in the morning to prep food items needed for the day. Harrison is a peripatetic presence at the restaurant, flitting attentively from table to table to ensure guests are enjoying their food and the Marigold experience.\u00a0 The restaurant&#8217;s attentive staff mirrors the owners&#8217; Salads, Burgers &amp; Sandwiches, Favorites, Tacos with a Twist and Bowls.\u00a0 It would be easy to gravitate toward familiar New Mexican and American favorites, but what&#8217;s the fun in that?\u00a0 We purposely pursued Indian and Indian-inspired or Indian fusion items and there are plenty of them on the menu.\u00a0 During our inaugural visit, we enjoyed an Indian beverage (mango lassi), appetizer (samosas), entrees\u00a0 (tikka mac n&#8217; Cheese<\/figcaption><\/figure>\n<p>Samosas fall under that broad classification of <a href=\"https:\/\/en.wikipedia.org\/wiki\/List_of_dumplings\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>dumplings<\/strong><\/a> that includes virtually everything made\u00a0 of dough wrapped around a filling, or of dough with no filling.\u00a0 Somewhat similar to Greek spanakopita (and almost contemporaneous in terms of age), samosas are usually triangular in shape and made with a pastry crust or filo dough stuffed with curried potatoes or meats with spices.\u00a0 They&#8217;re almost always fried which imbues them with a delightfully crispy exterior and they&#8217;re usually served with a chutney variant.<\/p>\n<p><strong>8 February 2020<\/strong>: The Marigold Cafe&#8217;s <em><strong>samosas<\/strong><\/em> are a unique India meets New Mexico treat stuffed with potato, green chile, and cheese.\u00a0 Offered a number of chutneys, we opted for the sweet, tangy tamarind and spicy mint-coriander chutney, dipping sauces with polar opposite flavors.\u00a0 The samosas are terrific with the green chile adding a unique twist, that of a lively punch.\u00a0 If you enjoy the piquancy of the green chile, the mint-coriander chutney amps it up even more.\u00a0 If you prefer a fruity contrast, you&#8217;ll enjoy the tamarind chutneys influence.\u00a0 Both are excellent.<\/p>\n<figure id=\"attachment_54151\" aria-describedby=\"caption-attachment-54151\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2020\/02\/Marigold05.gif?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"wp-image-54151 size-full lazyload\" style=\"--smush-placeholder-width: 750px; cheese that strikes your fancy, the Marigold Cafe&#8217;s menu is your hook-up.\u00a0 It&#8217;s got all three and others which made the Huffington Post&#8217;s list of the <a href=\"https:\/\/www.huffpost.com\/entry\/best-comfort-food_n_4698104\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>25 best comfort foods<\/strong><\/a>.\u00a0 It&#8217;s hard to argue with Mac n&#8217; cheese making the list at number three though after enjoying Marigold&#8217;s elevated version, we&#8217;re inclined to believe it would supplant standard American mac n&#8217; cheese.\u00a0 Introducing the <em><strong>tikka mac n&#8217; cheese<\/strong><\/em>.<\/p>\n<p>That elevated version is available with bacon (which makes everything better) and chicken, but even sans protein, cavatappi (Italian for \u201ccorkscrew\u201d) pasta baked in home-made tikka sauce and blended with mozzarella cheese is an exceptional dish.\u00a0 In fact, my Kim (who just might be more prone to hyperbole than her alliterative husband) said it was the best mac n&#8217; It was called the Sheepherder\u2019s Cafe and the specialty of the house was a lamb burger with green chile. The closure of this unique student favorite was a heart-breaker. They&#8217;re supplied by <a href=\"https:\/\/www.nmgastronome.com\/?p=42966\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Swiss Alps Bakery<\/strong> <\/a>and they look fabulous. The Marigold Cafe also offers a unique dessert made on the premises. It&#8217;s called <em><strong>cinna-naan<\/strong> <\/em>and as the name hints, it features both cinnamon and tandoor-baked naan. A rather large naan is first slathered with butter then sprinkled with cinnamon and a caramel sauce before three generous scoops of ice cream are piled on. Boneless chicken wings are just chicken tenders, which <em>are already boneless<\/em>. I don\u2019t go to order boneless tacos. I don\u2019t go and order boneless club sandwiches. \u2026 It\u2019s just what\u2019s expected.\u201d \u00a0\u00a0<\/em>Not all Americans feel the same about the concept of boneless wings. \u00a053-percent of respondents polled believe &#8220;boneless wings&#8221; should count as wings. \u00a0Only 34-percent claimed they &#8220;<em>felt duped by the term<\/em>,&#8221; believing boneless wings are more chicken nugget than wing.<\/p>\n<p>We&#8217;ve always known what to expect from boneless wings, overwhelmingly preferring bone-in wings. \u00a0From a tactile, experiential and flavor perspective, they&#8217;re just better&#8230;much better. \u00a0Alas, the Marigold Cafe offers only boneless wings, described as &#8220;<em>tender pieces of chicken breast fried or grilled, tossed in one of our homemade sauces: BBQ, sweet chili or garlic buffalo<\/em>.&#8221; \u00a0At eight pieces per order, it&#8217;s a generous appetizer. \u00a0As with so many chicken wings we&#8217;ve had, these have a tendency toward mushiness especially since we had to transport them fifteen miles. \u00a0We didn&#8217;t find much balance in the &#8220;sweet chili&#8221; \u00a0The Lincoln logophile would certainly not appreciate the fact that the Marigold Cafe&#8217;s version is served on a croissant and in addition to grilled ham and Cheddar cheese it&#8217;s got raspberry jam. \u00a0The horror!<\/p>\n<p>That unique interpretation of the Monte Cristo is one of twelve items on the Marigold Cafe&#8217;s breakfast menu. \u00a0The croissant, it turns out, is a nice replacement for the egg-dipped bread of the traditional Monte Cristo sandwich. \u00a0Though light and flaky, the crescent-shaped bread proved a worthy substitute and that raspberry jam should be part of every Monte Cristo. \u00a0Its tart sweetness counter-balanced the saltiness of the ham and sharpness of the Cheddar. \u00a0The Monte Cristo is served with a fruit cup.<\/p>\n<figure id=\"attachment_67683\" aria-describedby=\"caption-attachment-67683\" style=\"width: 525px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-67683 lazyload\" style=\"--smush-placeholder-width: 525px; Silver Enjoys Green Chile Chicken Curry<\/figcaption><\/figure>\n<p><strong>25 July 2024<\/strong>: \u00a0In the mood for Indian curry, but not wanting to travel to the Northeast Heights, my friend Bruce &#8220;Sr. Plata&#8221; Silver was thrilled to peruse Marigold Cafe&#8217;s menu and espy not only the variety of dishes, but the diversity of cultures represented on the menu. \u00a0During his inaugural visit, he opted for a New Mexico meets India dish of <em><strong>green chile chicken curry <\/strong><\/em>(Indian curry with slow-cooked chicken and green chile) served with a fluffy seasoned rice and both the garlic naan and the chili naan.<\/p>\n<p>Unlike far too many dishes claiming to showcase New Mexico&#8217;s sacrosanct chile, this dish has real heat. \u00a0Fortunately Sr. Plata has lived in the Land of Enchantment for decades so it didn&#8217;t faze him much, especially after he dumped in the seasoned rice. \u00a0That rice tempered the piquancy of the green chile and gave the curry more body. \u00a0The curry is on the thin side, but it has plenty of Indian curry&#8217;s characteristically robust and spicy heat. \u00a0It&#8217;s a very balanced curry with both savory and sweet elements lending to a diverse flavor profile.<\/p>\n<div class=\"food-item-title\"><\/div>\n<figure id=\"attachment_67681\" aria-describedby=\"caption-attachment-67681\" style=\"width: 644px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-67681 lazyload\" style=\"--smush-placeholder-width: 644px;
