Elotes Del Rancho is Now &#8220;No Te Rajes&#8221;<\/figcaption><\/figure>\n<p>The song title made absolutely no sense to me because the term &#8220;<em>rajes<\/em>&#8221; comes from the verb &#8220;<em>rajarse<\/em>&#8221; which means to &#8220;<em>crack<\/em>&#8221; or &#8220;<em>split<\/em>.&#8221;\u00a0 Dad explained that colloquially, &#8220;<em>no te rajes<\/em>&#8221; means &#8220;<em>don&#8217;t back out<\/em>&#8221; or &#8220;<em>don&#8217;t chicken out<\/em>.&#8221;\u00a0 He assured me the song was basically a love song to the Mexican state of Jalisco.\u00a0 He also told me it was the theme song to the 1941 Mexican movie of the same name, based on a novel by the same name.\u00a0 If you think I&#8217;m a wealth of information, you should have met my dad, one of the most brilliant men I&#8217;ve been blessed to know.<\/p>\n<figure id=\"attachment_60233\" aria-describedby=\"caption-attachment-60233\" style=\"width: 525px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-60233 lazyload\" style=\"--smush-placeholder-width: 525px; I was sure it would have something to do with the song my dad loved so much.\u00a0 Indeed it does.\u00a0 Edgar Padilla isn&#8217;t from Jalisco.\u00a0 He&#8217;s from Juarez, but like many Mexicans the notion of &#8220;<em>not chickening out<\/em>&#8221; is as much an approach to life as it is an approach to eating.\u00a0 Some of the salsas he serves with his outstanding Mexican cuisine will challenge you.\u00a0 Remember, &#8220;no te rajes&#8221; means &#8220;don&#8217;t chicken out.&#8221;\u00a0 Enjoy those salsas in all their fiery glory.&lt;<\/p>\n<h1 style=\"text-align: center;\"><strong>Original Review and Updates<\/strong><\/h1>\n<p><em>&#8220;Now you&#8217;re just being uppity<\/em>.&#8221;\u00a0 That&#8217;s my Kim putting me in my place the second I begin to crow haughtily about some highbrow or nouveau way to prepare something ordinary.\u00a0 Tandoori salmon pizza&#8230;that&#8217;s so me.\u00a0 Huitlacoche burgers&#8230;bring them on.\u00a0 Kimchi grilled cheese&#8230;why didn&#8217;t anyone think of this before?\u00a0 Flaming Hot Cheetos pancakes&#8230;the best part of waking up.\u00a0 Invariably when we visit a new restaurant, your gallant gastronome scans the menu for the most unique (aka weird, strange, unconventional) item on the menu.\u00a0 If it&#8217;s something I&#8217;ve never before had, it&#8217;s probably what I&#8217;ll order.\u00a0 An argument could be made that this is adventurous dining.\u00a0 For my Kim, it&#8217;s just more of her highfalutin husband&#8217;s &#8220;<em>I&#8217;ll try anything even if it hurts<\/em>&#8221; approach to life.<\/p>\n<p>As we luxuriated over steamy mugs of freshly ground coffee on lazy Saturday morning, I proposed lunch at a trendy new taqueria offering among other paragons of incongruity, Cajun deep-fried tacos with napolitos and mango salsa.\u00a0 &#8220;<em>For once why can&#8217;t you take me to a place that serves ordinary food?\u00a0 You know, the places you call &#8220;boring,<\/em> my Kim pleaded.\u00a0 Very much my better, more sensible half, my Kim loves tacos though unlike me, she doesn&#8217;t eschew traditional and proven favorites for unknown commodities which may or may not turn out to be good.\u00a0 She knows carnitas tacos are usually quite wonderful.\u00a0 She doesn&#8217;t trust that peanut butter rattlesnake satay tacos will be.<\/p>\n<figure id=\"attachment_54219\" aria-describedby=\"caption-attachment-54219\" style=\"width: 661px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2020\/02\/ElotesDelNorte02.gif?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"wp-image-54219 size-full lazyload\" style=\"--smush-placeholder-width: 661px; prerogative to change up the menu based on what&#8217;s selling best.\u00a0 One commonality between the menu we both saw was an anthropomorphic drawing of a steaming bowl of menudo chasing away a lizard-like creature called &#8220;La Cruda&#8221; should work for most people (unless you&#8217;re Texan).\u00a0 At first glance, the corn in a cup looks like a snowfall of Cotija cheese with just a bit of chile sprinkled on.\u00a0 You&#8217;ll want to ensure that cheese is distributed throughout your cup so swirl it around to your heart&#8217;s content.\u00a0 The results are a sweet, salty, creamy fresh flavored corn that evokes feelings of summer.<\/p>\n<p><strong>16 May 2020<\/strong>: Unlike some of the taco joints I tend to favor which proffer creative combinations which scream &#8220;<em>these aren&#8217;t your mother&#8217;s tacos<\/em>,&#8221; No Te Rajes offers only two types of tacos&#8211;<em><strong>carnitas<\/strong><\/em> and <em><strong>carne asada<\/strong><\/em>.\u00a0 These just happen to be my Kim&#8217;s favorites.\u00a0 Adorned solely with chopped onion and cilantro, these tacos are of the overstuffed variety.\u00a0 It takes two warm corn tortillas to hold in all the ingredients and that&#8217;s before you add salsa, a very piquant blend.\u00a0 These tacos are a wonderful reminder that sometimes going back to basics is best; Barbecue involves the low and slow preparation of food over a grill while barbacoa is a steaming-baking process.\u00a0 Results from both processes are delicious.\u00a0 Regional variations of barbacoa exist, but what most barbacoa has in common is very rich, very moist, absolutely delicious shredded barbacoa beef.\u00a0 My very favorite torta is one made with barbacoa.\u00a0 No Te Rajes&#8217;s version is as wonderful as any you&#8217;ll find anywhere (including San Antonio, Texas).\u00a0 A smear of guacamole, just a little bit of lettuce, cilantro and onions cut into the richness of the beef, but you&#8217;ll probably want to add some of the salsa picante, too.\u00a0 The salsa is made by Edgar&#8217;s loving bride.\u00a0 It&#8217;s a superb salsa, one that will leave your lips tingling with delight and because it has some serious bite.\u00a0 The <em><strong>torta de barbacoa<\/strong><\/em> is a fabulous sandwich&#8230;so good I had it five visits in a row (a rarity for a guy who loves changing things up), so good it made my <a href=\"https:\/\/www.nmgastronome.com\/?page_id=18649\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>best sandwich list<\/strong><\/a>.<\/p>\n<p><strong>16 May 2020<\/strong>: During our second visit, Edgar changed up the menu, offering an item heretofore unseen at any Mexican restaurant we&#8217;ve visited.\u00a0 Chicharr\u00f3n prensado (pressed pork) is just something you don&#8217;t often find save for in Mexican homes or if you&#8217;re lucky, your favorite carniceria.\u00a0 If you&#8217;re scratching your head as to what chicharr\u00f3n prensado is, you&#8217;re probably not alone.\u00a0\u00a0 Chicharr\u00f3n prensado actually get its start as pork carnitas which go through a <a href=\"https:\/\/www.mexicoinmykitchen.com\/how-to-make-chicharron-prensado\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>rather simple process<\/strong><\/a> you can duplicate at home&#8230;or you can do as we did and let Edgar do the hard work.\u00a0\u00a0 Tacos stuffed with <em><strong>chicharr\u00f3n prensado<\/strong><\/em> are beyond good; \u00a0 In his terrific tome <a href=\"https:\/\/www.amazon.com\/Tacos-Tortas-Tamales-Griddles-Streetside\/dp\/1118190203\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Tacos, Tortas, and Tamales<\/strong><\/a>,\u00a0 Roberto Santiba\u00f1ez argued that translating the word torta to &#8220;sandwich&#8221; \u00a0 Adelitas are &#8220;two corn quesadillas with the meat of your choice, onion, cilantro, red salsa.&#8221; \u00a0 \u00a0Though like every item on No Te Rajes&#8217;s menu we knew we&#8217;d love them both, we ordered only the the Ignacias (along with our usual elotes and my torta de barbacoa). \u00a0At first glance, the Ignacias resemble a flatbread or pizzetta though the toppings were certainly not what you&#8217;d see on an Italian restaurant menu. \u00a0Our meat of choice was al pastor. \u00a0The verdict&#8211;another delicious offering. \u00a0My research on the name Ignacias continues. \u00a0With any luck Edgar will be available to help me out when we visit again.<\/p>\n<p><strong>19 March 2022<\/strong>:\u00a0 Changing the name of the food truck from &#8220;Elotes Del Rancho&#8221; to &#8220;No Te Rajes&#8221; isn&#8217;t all that&#8217;s happening with my favorite food truck in the universe.\u00a0 Edgar has help now&#8211;two lovely young ladies to take and deliver your order and perform some prep duties.\u00a0 Having help means Edgar can now focus on what he does best&#8211;creating delicious food.\u00a0 He&#8217;s expanded the menu, adding among other things a hamburger and two new tortas\u00a0 Considering my love for tortas, you can bet that&#8217;s what I ordered.<\/p>\n<figure id=\"attachment_60230\" aria-describedby=\"caption-attachment-60230\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-60230 lazyload\" style=\"--smush-placeholder-width: 750px; means &#8220;don&#8217;t chicken out,&#8221; I was determined not only to finish the behemoth between buns, but not to quell the burn with water or milk.\u00a0 Piquancy isn&#8217;t this torta&#8217;s sole redeeming quality.\u00a0 It&#8217;s absolutely delicious, one I&#8217;ll have time and again (it&#8217;ll mean fewer tortas de barbacoa)<\/p>\n<p>26 May 2023<span style=\"font-family: Verdana; font-size: small;\">: Mexican street food vendors and even restaurants have made serving food in a cup or goblet fashionable. \u00a0When Edgar Padilla launched Elotes Del Rancho, he served the dish for which his food truck was named in a cup. \u00a0Technically, elotes are served on the cob while the correct name for corn in a cup is esquites. \u00a0Very few people would argue they&#8217;re enjoying esquites, not elotes. \u00a0It doesn&#8217;t matter. \u00a0Another unique offering served in a cup I haven&#8217;t seen in New Mexico and to my knowledge originated in the San Diego-Tijuana area is <em><strong>tosti vaso<\/strong><\/em>. \u00a0 <\/span><\/p>\n<figure id=\"attachment_63735\" aria-describedby=\"caption-attachment-63735\" style=\"width: 524px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-63735 lazyload\" style=\"--smush-placeholder-width: 524px;
