font-family: Verdana;\">&#8220;<em>Why<\/em>,&#8221; my Kim wondered aloud &#8220;<em>would a food truck call itself Sopaipilla Lust.<\/em>&#8221; Obviously reflecting on one of Father Simeon&#8217;s fiery sermons on the seven deadly sins, my naive bride was serious.\u00a0 It got me thinking&#8230;also out loud.\u00a0 &#8220;<em>Sopaipilla Gluttony would conjure images of buffet-goers gorging themselves from a trough.\u00a0 Sopaipilla Greed calls to mind diners hoarding more sopaipillas than they could possibly eat.\u00a0 You can&#8217;t call it Sopaipilla Anger because, well, who could possibly be angry when eating sopaipillas<\/em>.\u00a0 <em>Sopaipilla Sloth<\/em>?\u00a0 <em>Nah, no one would be too lazy to work for their daily bread&#8230;er, sopaipilla.<\/em>&#8220;<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">&#8220;<em>Sopaipilla Envy?\u00a0 Well, maybe that would work.\u00a0 Many a time have I envied diners at another table for whom a stuffed sopaipilla plate was being delivered.\u00a0 Sopaipilla Pride?\u00a0 That might work, too.\u00a0 A food truck or restaurant excelling in the preparation of outstanding sopaipillas would have reason to be proud of their culinary fare.\u00a0 Lust, of course, is the carnal craving for the pleasures of the flesh and few things are as pleasurable as eating stuffed sopaipillas.<\/em>\u00a0 <em>As you can see<\/em>, &#8220;<em>Sopaipilla Lust&#8221; font-family: Verdana;\">Lust, a theological scholar might argue, goes beyond just badly wanting something. Lust is more primal, more intense, more all-consuming. It\u2019s an obsession, an animal longing and (fittingly) a hunger.\u00a0 At what point then does mere coveting become carnal lust? For us, it was knowing that in order to sate our craving for stuffed sopaipillas from Sopaipilla Lust, we&#8217;d have to drive halfway through Corrales, the picturesque village that&#8217;s home to the slowest drivers in New Mexico. Sure enough, the vehicle in front of us was a farm tractor, the driver of which was visibly frustrated because he couldn\u2019t get around the car in front of him going 15mph on a 25mph zone. <\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">Sopaipilla lust is prominent in Taos county where I grew up.\u00a0 During the nearly three decades in which legendary food columnist <a href=\"https:\/\/taostable.wordpress.com\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Fayne Lutz<\/strong><\/a> published recipes in <a href=\"https:\/\/www.taosnews.com\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>The Taos News<\/strong><\/a>, the recipe most in demand was&#8211;by far&#8211;for the Northern New Mexican staple, the <a href=\"https:\/\/taostable.wordpress.com\/recipes\/breads\/sopaipillas\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>sopaipilla<\/strong><\/a>.\u00a0 Denizens of Taos county lustily devour these deep-fried pillows which we used to sop up our chile, frijoles, chicos and posole like the fluffy, crusty bread scoops they are.\u00a0 We didn&#8217;t always have the patience to stuff our sopaipillas like the restaurants did.\u00a0 That takes time and when you&#8217;re hungry, who wants to wait.<\/span><\/p>\n<figure id=\"attachment_55581\" aria-describedby=\"caption-attachment-55581\" style=\"width: 553px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2020\/08\/SopaipillaLust03.jpeg?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"wp-image-55581 lazyload\" style=\"--smush-placeholder-width: 553px; --smush-placeholder-aspect-ratio: 553\/700;border: 4px solid black; margin-top: 3px; margin-bottom: 3px;\" data-src=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2020\/08\/SopaipillaLust03.jpeg?lossy=2&strip=1&webp=1\" alt=\"\" width=\"553\" height=\"700\" data-srcset=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2020\/08\/SopaipillaLust03.jpeg?lossy=2&amp;strip=1&amp;webp=1 553w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2020\/08\/SopaipillaLust03.jpeg?size=128x162&amp;lossy=2&amp;strip=1&amp;webp=1 128w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2020\/08\/SopaipillaLust03.jpeg?size=256x324&amp;lossy=2&amp;strip=1&amp;webp=1 256w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2020\/08\/SopaipillaLust03.jpeg?size=384x486&amp;lossy=2&amp;strip=1&amp;webp=1 384w\" data-sizes=\"(max-width: 553px) 100vw, 553px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" \/><\/a><figcaption id=\"caption-attachment-55581\" class=\"wp-caption-text\">The Heisenburg with Pasta Salad<\/figcaption><\/figure>\n<p><span style=\"font-size: small; font-family: Verdana;\">Growing up in Chilili, Julia Cox learned to cook New Mexican cuisine at the apron strings of her grandmothers, both of whom were scratch cooks who never wrote down their recipes.\u00a0 Julia herself experimented with &#8220;a little of this and a little of that&#8221; before coming up with a <a href=\"https:\/\/www.kob.com\/new-mexico-news\/abuela-cooks-sopapillas\/5396789\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>sopaipilla dough recipe<\/strong><\/a> that won over her own family.\u00a0 Her sopaipillas were a huge hit with the carry out and kitchen operations she ran before retiring.\u00a0 Her children decided Julia&#8217;s sopaipillas should be shared with the world.\u00a0 In October, 2018, they launched Stuffed Lust, their goal to present diners with delicious chef-inspired recipes all stuffed into their mom&#8217;s amazing sopaipillas.\u00a0 We first encountered Stuffed Lust at the <a href=\"https:\/\/www.facebook.com\/Ex-Novo-Brewing-Company-New-Mexico-415835255901911\/\" target=\"_blank\" rel=\"noopener noreferrer\"><strong>Ex Novo Brewing Company<\/strong><\/a> in Corrales.\u00a0 <\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">Your first utterance at perusing the Stuffed Lust menu will probably be something like &#8220;<em>these aren&#8217;t my mom&#8217;s stuffed sopaipillas<\/em>.&#8221; \u00a0 Beyond beans, chile and meat, most of New Mexico&#8217;s abuelitas didn&#8217;t stuff sopaipillas with anything but love.\u00a0 Stuffed Lust&#8217;s avant-garde approach to stuffed sopaipillas brings them into the 21st Century.\u00a0 Traditionalists might scratch their heads, maybe even take offense, but it&#8217;ll take only a couple of bites to win them over.\u00a0 Aside from the unorthodox mishmash of ingredient combinations with which the sopaipillas are stuffed, some are christened with names more apropos for an Italian restaurant: Gambino and Original Gangster, for example.\u00a0 Others are named for New Mexico landmarks and places: Chimayo, Cabezon, Taos (tostadas) and yes, Heisenberg. Not all of them are graced with chile. <\/span><\/p>\n<figure id=\"attachment_55582\" aria-describedby=\"caption-attachment-55582\" style=\"width: 565px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2020\/08\/SopaipillaLust04.jpeg?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"wp-image-55582 lazyload\" style=\"--smush-placeholder-width: 565px; font-family: Verdana;\">Who can ever forget Archie Bunker&#8217;s description of his son-in-law Mike: &#8220;&#8221;<em>Meathead, Dead from the Neck Up<\/em>.&#8221;\u00a0 Whether by design or by accident, Stuffed Lust named its limited quantity green chile stuffed sopaipilla <em><strong>Archie Bunker.\u00a0<\/strong><\/em> In addition to the green chile meatloaf, the sopaipilla is engorged with bacon, caramelized onions and Hatch red chile BBQ sauce then drizzled with red chile aioli with a side of hash browns.\u00a0 The crescent moon shaped sopaipilla is unlike any stuffed sopaipilla we&#8217;d ever seen.\u00a0 Most stuffed sopaipillas are covered in melted cheese and chile.\u00a0 They&#8217;re typically unkempt and frumpy, beautiful only to the hungry diner.\u00a0 The Archie Bunker presents more like a work of art.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">It tastes like edible art, too, a melange of delicious ingredients that work very well together.\u00a0 Made on the premises and plated (albeit on Styrofoam boxes) piping hot, the sopaipilla is a perfect canvas for one of the most unique stuffed sopaipillas imaginable.\u00a0 The green chile meatloaf is moist and though the green chile is only mild at best, it&#8217;s got a nice roasted flavor that\u00a0 shines through.\u00a0 The Hatch red chile BBQ sauce and red chile aioli aren&#8217;t especially piquant either, but boy are they good.\u00a0 Crispy hash browns make a surprisingly good complement to the stuffed sopaipilla as does a small (maybe a tablespoon) portion of sweet corn pudding (one of my guilty pleasures).<\/span><\/p>\n<figure id=\"attachment_55583\" aria-describedby=\"caption-attachment-55583\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2020\/08\/SopaipillaLust05.jpeg?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"wp-image-55583 lazyload\" style=\"--smush-placeholder-width: 750px; font-family: Verdana;\">My Kim&#8217;s choice could only be described as slightly more traditional than mine though it could be argued that the name Heisenberg has done as much recently for New Mexico tourism as some of our historical and topographical landmarks.\u00a0 It could also be argued that\u00a0 the <em><strong>Heisenberg<\/strong><\/em> (<em>sopaipilla stuffed with thin sliced sirloin, house seasoned mushrooms, peppers and onions, tortilla strips and house made cheese sauce all topped with\u00a0 red and green chile aioli served with beans and rice<\/em>) is addictive as some of the cocktails a certain chemistry teacher concocted in a beige 1986 Fleetwood Bounder recreation vehicle and motor home.\u00a0 <\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">As diverse and delicious as stuffed sopaipillas have proven to be, as vehicles for desserts they&#8217;re vastly underutilized.\u00a0 Not so at Stuffed Lust where postprandial sopaipillas extend beyond the traditional sopaipilla served with honey.\u00a0 Stuffed Lust has one of those, too, calling it the Han Solo and dusting it with powdered sugar.\u00a0 Since your main course will probably be non-traditional, you my as well enjoy a non-traditional dessert sopaipilla.\u00a0 Make it <em><strong>Peaches And Cream<\/strong><\/em> (<em>sopaipilla stuffed with slow-cooked natural peaches and a blend of spices layered with vanilla whipped cream topped with house made caramel then dusted with angel\u2019s dust<\/em>).\u00a0 Reminiscent of peach pie, this is a sopaipilla self-actualized, a dessert you&#8217;ll love.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">Even better, if that&#8217;s possible, is <em><strong>La Bonita<\/strong><\/em> (<em>a sopaipilla stuffed with fresh strawberries, blueberries and whipped cream, drizzled with berry coulis topped with lavender cookie crumble<\/em>), a soiree of sweet and tart flavors that truly earns its name.\u00a0 Each component in a collage of concordant ingredients would be thoroughly enjoyable on its own, especially the lavender cookie crumble and whipped cream.\u00a0 The fresh strawberries and blueberries provided just enough tartness to serve as a foil to the sweet ingredients.\u00a0 Then there was the sopaipilla, a magnificent exemplar of what our state legislature should designate New Mexico&#8217;s official state bread.<br \/>\n<\/span><\/p>\n<p><span style=\"font-size: small;
