It&#8217;s almost a full day&#8217;s ride from West Texas to &#8220;Lapland&#8221; (what the southeastern corner of Texas is called because of the overlapping of Cajun and Texas cultures). \u00a0The popularity of soul food is probably easier to explain. \u00a0As LaMyiah Harvel of the ABC affiliate in Amarillo explains: &#8220;<a href=\"https:\/\/www.facebook.com\/Lamyiahharveltv\/videos\/478807316128227\/\" target=\"_blank\" rel=\"noopener\"><strong>The roots of Soul Food<\/strong><\/a> <em>are tangled into each and every one of us. font-family: Verdana;\">We arrived at Delvin&#8217;s shortly before its Saturday closing time. \u00a0Instead of being rushed, we enjoyed the &#8220;Texas friendly&#8221; spirit that&#8217;s welcomed us at every restaurant during our stay in Amarillo. \u00a0The entire staff was friendly&#8211;even moreso when I told them about The Dude, our debonair dachshund. \u00a0Two of the young ladies quickly made their way to our car where they discovered I had undersold The Dude&#8217;s good looks (he takes after his mom). \u00a0It gave me more time to peruse the menu, a compendium of Southern, Soul and Barbecue.\u00a0<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">Delvin&#8217;s smokes its barbecue fresh daily for 12-14 hours, a low-and-slow process that ensures quality and deliciousness. \u00a0Smoked meats make their way onto sandwiches; one-, two-, or three-meat platters; half a smoked chicken and half- or full-slab of ribs. \u00a0Daily specials are available Tuesday through Saturday. \u00a0My Kim, a poultry paramour was craving <em><strong>fried chicken<\/strong><\/em>, such a popular offering that Delvin&#8217;s was down to its last two pieces of dark meat chicken. \u00a0She pounced on it. \u00a0The fried chicken was moist, delicious and imbued with a golden-brown crust that was\u00a0thin-yet-crackly. \u00a0How good was that crust? \u00a0My Kim usually disdains crust, but she polished it off.<\/span><\/p>\n<figure id=\"attachment_57253\" aria-describedby=\"caption-attachment-57253\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2021\/03\/Delvin04-scaled.jpeg?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"wp-image-57253 lazyload\" style=\"--smush-placeholder-width: 750px; font-family: Verdana;\">It&#8217;s almost unfair to offer two specials so equally enticing that no mere mortal can make a quick decision. \u00a0Such was my dilemma in seeing both oxtail and blackened catfish available. \u00a0Although it&#8217;s impossible to go wrong with either, I was left wondering just how good the special not taken would have been. \u00a0The <em><strong>blackened catfish<\/strong><\/em> was superb, flaky and slightly sweet with nary any hint of muskiness you sometimes find in the bottom-dwelling fish. \u00a0The blackening spices didn&#8217;t have much of a kick, but that works well with a fish as light and delicate as catfish.\u00a0<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">Both my Kim and I had the same sides&#8211;the relatively simple but delicious\u00a0<em><strong>corn o&#8217;Brien<\/strong><\/em> (pan-fried corn saut\u00e9ed with bell peppers and onions) and the <em><strong>twice-baked potato casserole<\/strong><\/em>. \u00a0As always, it surprised us just how much the addition of red and green peppers and onions can elevate the flavor of sweet corn, adding a contrasting flavor component that works well. \u00a0The twice-baked potato casserole isn&#8217;t as creamy as mashed potatoes but it&#8217;s studded with bacon and melted cheese, two components that elevate any dish.<\/span><\/p>\n<figure id=\"attachment_57254\" aria-describedby=\"caption-attachment-57254\" style=\"width: 566px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2021\/03\/Delvin05-scaled.jpeg?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"wp-image-57254 lazyload\" style=\"--smush-placeholder-width: 566px; font-family: Verdana;\">As our servers were making a fuss over The Dude, we asked which dessert would go best with a dachshund as sweet as ours. \u00a0Both servers agreed the <em><strong>Coke A Cola Cake<\/strong><\/em> might do the trick. \u00a0Having lived in the Deep South for eight years, we&#8217;ve had numerous versions of Coke A Cola Cake, but Delvin&#8217;s version might be the best. \u00a0The cake itself has just a hint of the carbonated flavor of Coke with none of its effervescence, but it&#8217;s light and fluffy with a frosting that also inherits some of Coke&#8217;s unmistakable sweetness. \u00a0<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">With impeccable service, outstanding food and tremendous value, Delvin&#8217;s is the type of restaurant we&#8217;d all like in our neighborhood. \u00a0It&#8217;s no wonder 68 Yelpers have given it a five-star rating and none have rated it any lower.<\/span><\/p>\n<p><span style=\"font-size: small;
