Frozen custard also includes at least 1.5 percent egg yolks and always has at least ten-percent higher milk fats than ice cream. <strong><a href=\"https:\/\/href.li\/?http:\/\/www.chefs.edu\/Student-Life\/Culinary-Central\/April-2012\/The-Great-Ice-Cream-Frozen-Custard-Debate\" target=\"_blank\" rel=\"noopener\">Cordon Bleu<\/a><\/strong> explains \u201c<em>The additional fats and proteins in the egg and butterfat give frozen custard a silkier, richer, and denser texture than ice cream. After churning, quality ice creams are between 25 and 75 percent air. Once churning is complete, ice cream goes in the freezer for a number of hours to harden. Frozen custard is churned for a shorter duration than ice cream, rendering it only be 15 to 20 percent air when finished. \u00a0Frozen custard makers will tell you it&#8217;s best eaten straight out of the churn, which means it\u2019s best enjoyed fresh (unlike ice cream, which has to be refrozen).<\/p>\n<p>When we moved back to New Mexico in 1995 we expected to find that frozen custard shops were as ubiquitous as yogurt shops were back then. \u00a0Alas, it wasn&#8217;t until Kurt Nilson launched <a href=\"https:\/\/www.nmgastronome.com\/?p=7272\" target=\"_blank\" rel=\"noopener\"><strong>Chillz Frozen Custard<\/strong><\/a> in June, 2009 that we were able to finally enjoy the thick, creamy, rich, heat-beating deliciousness of real frozen custard again (and no, that stuff Dairy Queen serves is neither frozen custard <a href=\"https:\/\/recipes.howstuffworks.com\/dairy-queen-ice-cream.htm\" target=\"_blank\" rel=\"noopener\"><strong>nor is it even ice cream<\/strong><\/a>). \u00a0In a day which shall forever live in infamy, Chillz shuttered its doors in 2015 leaving a trail of broken hearts in its wake.<\/p>\n<figure id=\"attachment_57938\" aria-describedby=\"caption-attachment-57938\" style=\"width: 642px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2021\/06\/BusyBee06-scaled.jpeg?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"wp-image-57938 lazyload\" style=\"--smush-placeholder-width: 642px; This Time With Butter Pecan Frozen Custard and Whipped Cream<\/figcaption><\/figure>\n<p>In March, 2019, those of us still in mourning the closure of Chillz found reason to celebrate once again with the launch of Busy Bee Frozen Custard. \u00a0Initially Busy Buy proffered its products at Albuquerque&#8217;s Growers Market and the Rail Yard. \u00a0In October, 2019, Busy Bee purchased an eight-foot wide, twenty-foot long food trailer specifically customized for making Italian ice and frozen custard. \u00a0It&#8217;s a self-contained operation specialized for catering, concessions and corporate and private events. \u00a0Concessions include lemonade, ice tea, frozen custard of various flavors (chocolate, vanilla, butter toffee, chocolate chip and more), ice cream sundaes, root beer floats, Italian ice and much more.<\/p>\n<p><strong>13 June 2021<\/strong>: Though we often saw Busy Bee stationed along Alameda Boulevard on weekends, it wasn&#8217;t until a 100-degree plus Sunday that we finally sought its refreshing comfort. \u00a0We cursed ourselves for not having visited sooner. \u00a0For my Kim, a <em><strong>waffle cone<\/strong><\/em> stuffed generously with three scoops&#8211;vanilla with raspberry swirl, chocolate and cookies and cream&#8211;provided the relief our car&#8217;s air conditioning couldn&#8217;t. \u00a0She raved about the smooth, creamy and dense texture of the frozen custard while lavishing an almost equal amount of yummy noises and requests for bites of my <em><strong>turtle sundae<\/strong><\/em>. \u00a0This sundae was a glorious expression of frozen custard with a swirl of caramel and chopped walnuts. \u00a0A couple of bouts with brain freeze attested to the authenticity and cold truth about the custard. \u00a0It is quite simply the real thing!<\/p>\n<p><strong>20 June 2021<\/strong>: According to <a href=\"https:\/\/whatscookingamerica.net\/History\/IceCream\/Sundae.htm\" target=\"_blank\" rel=\"noopener\"><strong>What&#8217;s Cooking America<\/strong><\/a>, &#8220;<em>Some historians claim, but never proven to be true, that the name \u201csundae\u201d was created in response to the \u201cBlue Laws\u201d which said that ice cream sodas could not be sold on Sundays because they were to \u201cfrilly.\u201d \u00a0For some reason the \u201crighteous\u201d very much against what they called \u201csucking soda\u201d (especially on the Sabbath and the clergy started preaching against them<\/em>).&#8221;
