This will be happening Mondays, but maybe not every Monday; the next one looks to be slated for February 26. <\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">Here are a few tips if you&#8217;ve got \u00a0a trip planned to Japan and would like to practice terms to convey your enthusiasm for the delicious meals you&#8217;re sure to experience, \u00a0 \u00a0After your first bite, use the term &#8220;<em>umai&#8221; <\/em>to express how delicious that first bite was. As you continue to eat, use\u00a0the term &#8220;<em>oishii<\/em>&#8221; frequently to convey with alacrity that the food you&#8217;re eating is fantastic. \u00a0<\/span><span style=\"font-size: small; font-family: Verdana;\">Because it&#8217;s considered good manners in Japanese culture not only to finish every single morsel on your \u00a0plate but to ask for a second serving, the phrase &#8220;<em>okawari<\/em>&#8221; font-family: Verdana;\">On the last Sunday of October when our planned lunch excursion was to Kitsune, a Japanese term for &#8220;<em>fox<\/em>,&#8221; I had hoped to be able to display this <em>gaijin&#8217;s<\/em> (foreigner&#8217;s) mastery of Japanese culinary terms even if my butchered pronunciation might make those terms nearly unrecognizable. \u00a0Alas, that was not to be. \u00a0When I greeted whom I assumed to be our server with &#8220;<em>konnichiwa<\/em>&#8221; (Hi; good afternoon) he looked at me as if I was speaking Roswellian alien.\u00a0 \u00a0Having heard Iron Chef Morimoto utter that phrase numerous times, I knew my pronunciation was correct.<\/span><span style=\"font-size: small; font-family: Verdana;\">In all fairness, Kitsune isn&#8217;t so much a Japanese eatery as it is an Asian-inspired slash fusion restaurant with a menu showcasing elements of Korean, Thai, Japanese, Hawaiian, China, Southeast Asia and even New Mexican cuisines. \u00a0It&#8217;s not a sweeping menu, listing fewer than twenty items in three categories: Shareables, Rice Dishes and Sides. \u00a0That&#8217;s just a few items more than Kitsune offered when it was a successful and highly popular food truck. \u00a0Chef-owners Thomas Groff and Tony Chiado are admittedly &#8220;culinary school drop-outs&#8221; but you wouldn&#8217;t know that by the sophistication, innovation and deliciousness of their cuisine. \u00a0This dynamic duo basically takes flavors they like and morph them into foods everyone will enjoy. \u00a0They create their own sauces which just might transport you to New York City or some other metropolitan area with a large Asian population.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">In July, 2021, Kitsune launched a brick-and-mortar restaurant near the Romero Street entrance to Albuquerque&#8217;s Old Town. \u00a0Kitsune sits in a very familiar location&#8211;the former home of the controversial Candy Lady where it shares space with the Taproom at Old Town. \u00a0Prefacing the restaurant&#8217;s entrance is a small patio from where you can watch tourists and locals alike vie for a parking spot. \u00a0There&#8217;s a larger patio in back of the rather austere, almost minimalist dining room. \u00a0<\/span><\/p>\n<figure id=\"attachment_58799\" aria-describedby=\"caption-attachment-58799\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2021\/10\/Kitsune03-scaled.jpeg?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"wp-image-58799 lazyload\" style=\"--smush-placeholder-width: 750px; font-family: Verdana;\">Not long after Kitsune&#8217;s brick-and-mortar launch it received a three-and-a-half star rating from the <a href=\"https:\/\/www.abqjournal.com\/2433810\/new-flavors-in-old-town.html\" target=\"_blank\" rel=\"noopener\"><strong>Albuquerque Journal<\/strong><\/a>. \u00a0Shortly thereafter Kristin Satterlee also waxed eloquent about Kitsune on her fabulous blog <a href=\"http:\/\/unfussyepicure.com\/2021\/10\/kitsune-and-taproom-at-old-town.html\" target=\"_blank\" rel=\"noopener\"><strong>Unfussy Epicure<\/strong><\/a>. \u00a0Though we never managed to visit Kitsune in its food truck instantiation, the two reviews clearly told us we had missed a pretty special dining experience. \u00a0It didn&#8217;t take long before the designation &#8220;special&#8221; was validated in our eyes. If you tuned in to the Food Network\u2019s Diners, Drive-Ins and Dives on Friday, February 25th, 2022, and hadn\u2019t already been familiar with the Albuquerque Asian inspired fusion restaurant named Kitsune, you probably got the impression from Guy Fieri\u2019s lavish praise that Kitsune is a long-time resident of Flavortown. \u00a0 In truth, Kitsune went from food truck to brick and mortar restaurant to an appearance on Triple D in a span of less than three years. \u00a0In the restaurant world that\u2019s warp speed. \u00a0Fieri fell in love with Kitsune\u2019s inventive\u00a0pork belly bowl and jackfruit burrito, rating the latter 9.5 out of 10. \u00a0He recommended Kitsune bottle its absolutely delightful Kitsune sauce and just couldn\u2019t get enough of the inventive cuisine that titillated his taste buds. <\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">As we perused the menu, we enjoyed <em><strong>Gosling Ginger Beer<\/strong><\/em>, a &#8220;barely&#8221; alcoholic beverage with which we fell in love during our week in Salt Lake City in August, 2021. \u00a0Alternatively, we could have had something more &#8220;adult&#8221; from the mixed drinks side of the laminated menu, but it was the other side in which we were interested. \u00a0That&#8217;s where the very compelling food menu lives. \u00a0Like we did, you&#8217;ll probably deliberate for a good long while before deciding what to order. \u00a0It all sounds so good.<\/span><\/p>\n<figure id=\"attachment_58800\" aria-describedby=\"caption-attachment-58800\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2021\/10\/Kitsune04-scaled.jpeg?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"wp-image-58800 lazyload\" style=\"--smush-placeholder-width: 750px; Furikake<\/figcaption><\/figure>\n<p><span style=\"font-size: small; font-family: Verdana;\">There are two French fry mash-ups on the Shareables menu. \u00a0One is Thai inspired, the other Korean. \u00a0 \u00a0We opted for the <em><strong>Bo-Samm Fries<\/strong><\/em> (pulled pork, gochujang, Kitsune sauce, queso fresco, pickled onions, cilantro) which are named in honor of a Korean slow-cooked pork roast dish. \u00a0A lavish portion of South Carolina-worthy pulled pork was replete with the bark we love even more than the Ivory Snow white pork meat. \u00a0The fries were thin-cut and crispy. \u00a0Crumbled white cheese (perhaps a Mexican variety) was strewn throughout, providing a nice foil for the tangy pickled onions. \u00a0Two sauces were drizzled onto the concoction. \u00a0More prominent was the gochujang, Korea&#8217;s answer to Sriracha. \u00a0With its telltale ginger red color, fiery personality and subtle sweet notes, the gochujang pairs well with the Kitsune sauce, a less spicy aioli. \u00a0Adventurous French fry fanatics will flip over this magnificent mash-up.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">Though on the Shareables menu, my Kim wanted the <em><strong>Ribs &amp; Furikake<\/strong><\/em>\u00a0(baby back ribs glazed in a pho spiced caramel and topped with peanut and chicharron furikake and fresh herbs)\u00a0<\/span><span style=\"font-size: small; font-family: Verdana;\">It doesn&#8217;t often surprise me to discover the melding of somewhat similar and very complimentary ingredients, but Kitsune&#8217;s <em><strong>red chile curry rice bowl<\/strong><\/em> (Hatch red chile curry, pulled pork, slow egg, cilantro and lime) blew me away. \u00a0There&#8217;s genius in this dish&#8211;sagacity in contriving of a Hatch red chile-based curry, erudition in pairing that curry with a generous portion of pulled pork and sheer brilliance in adding a slow egg to the mix. \u00a0Each of these components would work well alone, but combining them all is flair, artistry and&#8230;.genius. \u00a0<\/span><\/p>\n<figure id=\"attachment_58802\" aria-describedby=\"caption-attachment-58802\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2021\/10\/Kitsune06-scaled.jpeg?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"wp-image-58802 lazyload\" style=\"--smush-placeholder-width: 750px;
