Honors<\/figcaption><\/figure>\n<p>As soon as work began on the Highway 528 restaurant that for years had housed <a href=\"https:\/\/www.nmgastronome.com\/?p=127\" target=\"_blank\" rel=\"noopener\"><strong>Banana Leaf,<\/strong><\/a> City of Vision residents became giddy with excitement.\u00a0 It&#8217;s not everyday a new restaurant opens up in Rio Rancho.\u00a0 Social media postings, particularly on Nextdoor swelled excitement and divulged revelations. &#8220;Visionaries&#8221; (the tapas), the menu includes two salads, four &#8220;sandwhiches&#8221; and two desserts.\u00a0 During our inaugural visits, we found both an &#8220;exclusive sneak peek menu&#8221; and a smaller menu of intriguing specials on our table.\u00a0 As introductions to the bites concept goes, both menus are winners.<\/p>\n<figure id=\"attachment_59686\" aria-describedby=\"caption-attachment-59686\" style=\"width: 525px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-59686 lazyload\" style=\"--smush-placeholder-width: 525px; by Albuquerque The Magazine readers. \u00a0During its inaugural full year, Whiptail also earned &#8220;Best Appetizers&#8221; honors, an accolade it would repeat in 2023. \u00a0With a frequently changing menu of tapas, it&#8217;s possible (maybe likely) Whiptail will dominate the &#8220;best appetizers&#8221; category for years.<\/p>\n<p><strong>3 January 2022<\/strong>: The unnamed smaller menu listed only four items including a 16-ounce grilled rib eye, a charcuterie board, crushed whipped potatoes and <em><strong>tuna ceviche <\/strong><\/em>(diced ahi tuna, jicama, jalapeno, coconut soy vinaigrette, micro shisho).\u00a0 Acid from a citrus marinade acts as a catalyst that both alters the texture of the ahi and &#8220;cooks&#8221; O&#8217;Rourke believes &#8220;<em>A fruit is a vegetable with looks and money. In New Mexico&#8217;s desert climes, this means that if there\u2019s no monsoon, there are no mushrooms\u2014or, at least, very few fungi. In a good year when rain is plentiful and temperatures cooperate, fall can be a productive mushroom season in northern New Mexico. \u00a0Thank goodness for mushroom producers such as <a href=\"https:\/\/www.nmfungi.com\" target=\"_blank\" rel=\"noopener\"><strong>New Mexico Fungi<\/strong><\/a>, \u00a0This &#8220;fun guy&#8221; proudly offers a wide variety of 14 rotating species including: Black Pearl Oyster, Blue Oyster, Golden Oyster, Pink Oyster, Chestnut, Cordyceps, Combtooth, Lion&#8217;s Mane, Maitake, Enoki, Reishi, Shiitake, Shimeji and Turkey Tail. \u00a0Mushrooms are grown in a controlled indoor environment, allowing New Mexico Fungi to cultivate many species throughout the year while catering to seasonal tastes.<\/p>\n<figure id=\"attachment_66038\" aria-describedby=\"caption-attachment-66038\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-66038 lazyload\" style=\"--smush-placeholder-width: 750px; a platful of locally sourced mushrooms, garlic, chile flake, shallots and truffle oil. \u00a0 Our experience with this plate is strictly ogling it as it was delivered to an adjacent table. \u00a0We did, however, sate our lust for fungi wit the &#8220;<em><strong>What a Fungi Risotto<\/strong><\/em>&#8221; (risotto, locally sourced mushrooms, white truffle oil, Parmesan cheese). \u00a0 This is a good risotto, replete with mushrooms of various types and sizes. \u00a0The umami-rich pairing of Parmesan and fungi makes this a very special dish, but our preference would have been for the grains of arborio rice to have been less clumped together. \u00a0It&#8217;s a &#8220;babysitting&#8221; challenge to make a great risotto, but it&#8217;s worth the effort.<\/p>\n<p><strong>14 March 2024<\/strong>: \u00a0The Shareable Large Plates menu includes a number of Italian favorites such as fruitti del mar and <em><strong>chicken piccata<\/strong><\/em> (pan-fried chicken cutlets, lemon cream sauce, capers, lemon slices). \u00a0Though my preference is always veal, its chicken counterpart is quite good. \u00a0The piccata sauce is wonderfully lemony without pursing your lips. \u00a0It&#8217;s got a nice fatty texture courtesy of the fat (or maybe butter) in which it&#8217;s prepared. \u00a0Capers provide floral notes, a lemony tang and salty flavor profile with a brininess reminiscent of green olives.<\/p>\n<figure id=\"attachment_66040\" aria-describedby=\"caption-attachment-66040\" style=\"width: 463px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-66040 lazyload\" style=\"--smush-placeholder-width: 463px;
