Parents\u2013yes, including parents of four-legged fur babies\u2013utter it in baby talk intonations to get our children to eat something, especially when that something is \u201cgood for them\u201d but doesn\u2019t actually look or taste good. Nom nom was, of course, the favorite expression of Sesame Street\u2019s Cookie Monster as he ravenously devoured a plate or six of cookies, a fusillade of crumbs flying from his chewing mouth. Grade school teachers use nom nom as an example of an onomatopoeia, a word that imitates a sound. My friend Michael Gonzales, the dynamic owner of Rio Rancho\u2019s <a href=\"https:\/\/www.nmgastronome.com\/?p=14575\" target=\"_blank\" rel=\"noopener\"><strong>Cafe Bella<\/strong><\/a> uses it to describe great new restaurant finds. English majors recognize it as an expression used to convey pleasure at eating or at the prospect of eating. It\u2019s also a verb meaning \u201c<em>to eat something, typically with great enjoyment<\/em>.\u201d <\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">See anything wrong with the term nom nom? Though it may never grace Gil\u2019s Thrilling\u2026 in a descriptive manner, I don\u2019t see anything wrong with it either. So, if it sounds innocent and innocuous enough, why does the <a href=\"https:\/\/www.huffpost.com\/entry\/om-nom-origin-_n_2410967\" target=\"_blank\" rel=\"noopener\"><strong>Huffington Post<\/strong><\/a>rank the word nom nom with \u201c<em>moist<\/em>\u201d as \u201c<em>the worst offender of words when it comes to food or the English language in general<\/em>.\u201d How can it possibly creep out anyone that much? While the Huffington Post declares \u201c<em>when it comes to the use of nom nom, and our bubbling hatred for it, we almost feel like we don\u2019t have to explain ourselves<\/em>,\u201d explain themselves they do. \u201c<em>Nom nom is what the Cookie Monster says. And while we have a soft spot for this cookie glutton, he wasn\u2019t the brightest crayon in the box. So why in the world would we want to start talking like him? Worse, \u201cIn our opinion, the use of the phrase nom nom is as offensive as partaking in baby talk. That\u2019s the age in which we live. <\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">After my inaugural visit to Albuquerque\u2019s Cafe Nom Nom in its inaugural location (Monte Vista and Central), I actually tried out some of those alternative words for the delightful Vietnamese fusion restaurant which had just captured my affections: \u201cCafe Nectarous. Cafe Palatable. Cafe Titillating. Cafe Toothsome.\u201d Nah, none of those fit. Cafe Nom Nom does. It\u2019s entirely possible an utterance or two of \u201cnom nom\u201d or some derivative thereof escaped my mouth as I thoroughly enjoyed the deliciousness set before me. It occupied the space which previously housed <a href=\"https:\/\/www.nmgastronome.com\/?p=43104\" target=\"_blank\" rel=\"noopener\"><strong>Kitchen Se7ven<\/strong><\/a> and <a href=\"https:\/\/www.nmgastronome.com\/?p=38837\" target=\"_blank\" rel=\"noopener\"><strong>Kaktus Brewery Tap<\/strong><\/a> and before that <a href=\"https:\/\/www.nmgastronome.com\/?p=26313\" target=\"_blank\" rel=\"noopener\"><strong>Amore Neapolitan Pizzeria<\/strong><\/a> and <\/span><span style=\"font-size: small; font-family: Verdana;\">is <\/span><span style=\"font-size: small; font-family: Verdana;\"><a href=\"https:\/\/www.nmgastronome.com\/?p=11457\" target=\"_blank\" rel=\"noopener\"><strong>Bailey\u2019s on the Beach<\/strong><\/a>. Its neighbors included the transcendent <a href=\"https:\/\/www.nmgastronome.com\/?p=36354\" target=\"_blank\" rel=\"noopener\"><strong>The Shop<\/strong><\/a> and Taco Bell. Cafe Nom Nom didn&#8217;t have the most eye-catching signage. In fact, it was downright difficult to read. Much more prominent was the signage for Studio N, a hair salon next door. Somehow, intrepid foodies managed to find it and the initial buzz was scintillating. <\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">Cafe Nom Nom is the inaugural restaurant venture for Studio N owner and \u201ccelebrity stylist\u201d Nam Tram who did all the carpentry work\u2013including counters and tables\u2013for his rustic little restaurant. The interior&#8217;s look and feel paid tribute to his mother\u2019s homeland, displaying traditional Vietnamese attire and a conical leaf hat. There were three flat screen televisions positioned so that diners have a vantage point to at least one. A small, sun-shielding dog-friendly patio was available at ground level, but the expansive rooftop patio was the place to be. It offered exquisite city views as well as spectacular sunset panoramas.<br \/>\n<\/span><\/p>\n<figure id=\"attachment_59779\" aria-describedby=\"caption-attachment-59779\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-59779 lazyload\" style=\"--smush-placeholder-width: 750px; font-family: Verdana;\">When Cafe Nom Nom shuttered its doors in 2019, we hoped we hadn&#8217;t seen the last of the unique Vietnamese-Asian fusion cuisine conceived by its founder-owner. \u00a0In 2021 those hopes were realized when we started seeing Nom Nom on Wheels regularly parked at <a href=\"http:\/\/www.exnovobrew.com\/corrales\" target=\"_blank\" rel=\"noopener\"><strong>Ex Novo<\/strong><\/a> in Corrales. \u00a0Not too long thereafter, we espied signage indicating Cafe Nom Nom had a kitchen at the <a href=\"https:\/\/boxingbearbrewing.com\/locations\/#brewpub\" target=\"_blank\" rel=\"noopener\"><strong>Boxing Bear Brewery<\/strong><\/a> on Corrales. \u00a0We learned Cafe Nom Nom offered its unique cuisine Thursday through Sunday from noon until closing time. \u00a0The online <a href=\"https:\/\/selflane.com\/bizs\/nom-nom-on-wheels_los-ranchos_nm\" target=\"_blank\" rel=\"noopener\"><strong>take-out menu<\/strong><\/a> from Selflane is replete with the quirky culinary deliciousness with which we had fallen in love at Cafe Nom Nom&#8217;s initial location.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">In person at Boxing Bear is the best way to enjoy a meal from Cafe Nom Nom. \u00a0Not only does the brewery offer a capacious Dude-friendly patio, its dining room is an attractive venue, service is on-the-spot and adult libations flow freely. \u00a0Cafe Nom Nom operates independently from the brewery. \u00a0You&#8217;ll place your order and pay for your meal on a point of sale system positioned on a lectern just in front of a door to the kitchen. \u00a0Either Chef Tram or Taylor, the personable and talented sous chef and Tram&#8217;s culinary collaborator will make themselves available in the event you have questions. \u00a0Your order will be delivered to your table in short order.<\/span><\/p>\n<figure id=\"attachment_59780\" aria-describedby=\"caption-attachment-59780\" style=\"width: 525px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-59780 lazyload\" style=\"--smush-placeholder-width: 525px; font-family: Verdana;\">Chef Tram told us he closed the original instantiation of Cafe Nom Nom because he and his bride had just had a baby (which he jokingly described as a blond, blue-eyed Asian) and he just didn&#8217;t have enough staff to manage all his business enterprises. \u00a0Mind you, this was \u00a02019, a year before the Cabrona virus shut down the entire planet. \u00a0He&#8217;s not only bounced back, he&#8217;s better than ever. \u00a0 How good is that? He was parked outside of Ex Novo Brewery in Corrales and business was &#8220;worse than slow&#8221;, so he offered to make a house call &#8212; while you should not anticipate a similar offer, you need to know about Nam&#8217;s character, he&#8217;s wonderful. And his food&#8230; it&#8217;s Vietnamese Foodie\/Fried\/Fresh\/Fire Fusion. Peep the photo of my B\u00e1nh M\u00ec Burger with Garlic Aioli, it was loaded, beef perfectly pink, more than a handful. Ditto with the BBQ Pork Steamed Buns, a fantastic dinner that fed two people. font-family: Verdana;\">Befitting its food truck operation, Cafe Nom Nom doesn&#8217;t have a gigantic menu, offering only a smattering of items in several menu sections: Appetizers, Noodles, Sandwiches, Sides and Rice Bowls.\u00a0 If you&#8217;ve ever loved Vietnamese cuisine you&#8217;ll recognize each item on the menu and will probably be tempted to order several items.\u00a0 Give in to those temptations.\u00a0 What you don&#8217;t finish at the restaurant you can always take home to enjoy later.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\"><strong>14 January 2022<\/strong>: Not every item will be a complete copy of the same item at a more traditional Vietnamese restaurants, but the differences are definitely exciting.\u00a0 Take the <em><strong>banh mi<\/strong><\/em>, for example.\u00a0 Nestled in a fresh baked 6-inch toasted French bread hoagie, you&#8217;ll find &#8220;<em>crisp green leaf lettuce, succulent cucumber, plump Roma tomatoes, fresh Thai basil, mint, cilantro, red onions, green chile kimchi, Sriracha aioli and black sesame seeds<\/em>&#8221; along with your choice of protein: bulgogi beef, applewood smoked prime rib, sauteed hand-crafted tofu, sauteed shrimp or baked Scottish salmon.\u00a0 It&#8217;s a veritable smorgasbord of vegetables, sauces and protein.\u00a0 Our choice was the applewood smoked prime rib, thinly shaved slices of pure meat candy.\u00a0 As with all outstanding banh mi, this sandwich offers a balance of flavors&#8211;savory, tangy, smoky and sweet.\u00a0 It&#8217;s probably twice the cost of most banh mi in Albuquerque, but it&#8217;s worth the splurge.<\/span><\/p>\n<figure id=\"attachment_59782\" aria-describedby=\"caption-attachment-59782\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-59782 lazyload\" style=\"--smush-placeholder-width: 750px; font-family: Verdana;\"><strong>14 January 2022<\/strong>: Vietnamese cuisine began outdistancing Thai cuisine in our affections when the latter lost its sense of balance to suit American tastes, skewing heavily toward very sweet.\u00a0 Even items such as cucumber salad became nearly cloying.\u00a0 It was refreshing to find that Cafe Nom Nom&#8217;s version of cucumber salad won&#8217;t decay your teeth.\u00a0 We figured that out when we saw it was called <em><strong>umami cucumber salad <\/strong><\/em>on the menu.\u00a0 Umami and sweet aren&#8217;t usually mentioned on the same flavor profile.\u00a0 The name alone will tell you this isn&#8217;t candied cucumber.\u00a0 Pickle-thin slices of fresh, moist cucumber studded with sesame seeds and chile and perked up with a tangy dill sauce.\u00a0 It&#8217;s a cucumber salad everyone should love.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\"><strong>14 January 2022<\/strong>: Wow!\u00a0 That&#8217;s the very first adjective that comes to mind to describe the <em><strong>Szechuan Noodles<\/strong><\/em>(sliced noodles invigorated with an incendiary homemade spicy Szechuan sauce along with shiitake mushrooms, red onions, Chinese baby broccoli topped with the house mix of cilantro and mint and black sesame seeds).\u00a0 The Szechuan sauce is dynamite, an incendiary treasure that enlivens everything on the plate.\u00a0 This is a dish for fire-eaters, those of us who believe pain is a flavor.\u00a0 The sliced noodles are ridged somewhat like lasagna noodles though much thinner.\u00a0 They&#8217;re very slurp-worthy.\u00a0 Every vegetable on the dish is perfectly prepared to a crispy, fresh al dente texture.\u00a0 Though other proteins are available, the Scottish salmon proved a wonderful foil to the fiery noodle dish.\u00a0 Wow!\u00a0 Wow!\u00a0 Wow!<\/span><\/p>\n<figure id=\"attachment_59783\" aria-describedby=\"caption-attachment-59783\" style=\"width: 589px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-59783 lazyload\" style=\"--smush-placeholder-width: 589px; font-family: Verdana;\"><strong>14 January 2022<\/strong>: \u00a0For my Kim, the <em><strong>Street Cup Noodle<\/strong><\/em>dish (Shanghai eggplant, Chinese baby broccoli, shiitake mushrooms, yellow squash, bean sprouts, green chile kimchi, pickled red onion, black sesame seeds and the house cilantro-mint mix with her choice of protein) was equally enchanting without the heat she can&#8217;t handle.\u00a0 It&#8217;s akin to feng shui on a plate, the arrangement of ingredients and colors seemingly designed to make your mouth water.\u00a0 As with the Szechuan noodle dish, every vegetable was as good as it could be and each long, thin noodle strand as satisfying as when you first learned how much fun slurping up noodles could be.\u00a0 The bulgogi wasn&#8217;t overly sweet as Americanized &#8220;Korean barbecue&#8221; sometimes tends to be.\u00a0 My Kim might not take to the streets for a noodle dish this good, but she&#8217;d happily send me.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\"><strong>14 January 2022<\/strong>: The menu boasts &#8220;<em>If you love our BBQ steamed buns, then you&#8217;re going to love our <strong>twin bao tacos<\/strong> as we steam them first and fill them with pickled red onion, pickled carrots and daikon radishes with hoisin and topped with cilantro or tan sesame seeds and offered with your choice of protein.<\/em>&#8221;\u00a0 As Muhammad Ali would say &#8220;<em>it&#8217;s not bragging if you can back it up<\/em>.&#8221;\u00a0 That&#8217;s precisely with Cafe Nom Nom does.\u00a0 You will love these twin bao tacos.\u00a0 Our protein of choice was the applewood smoked prime rib, thinly sliced beef perfection.\u00a0 The bao have a chewy texture and smell and taste like fresh bread.\u00a0 Bao may never replace corn or flour tortillas, but as a vehicle for tacos, they&#8217;re pretty darned good!<\/span><\/p>\n<figure id=\"attachment_59843\" aria-describedby=\"caption-attachment-59843\" style=\"width: 525px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-59843 lazyload\" style=\"--smush-placeholder-width: 525px; font-family: Verdana;\"><strong>21 January 2022: <\/strong>\u00a0Vietnam may not offer classic barbecue in the style to which the Western palate has grown accustomed, but savvy diners know Vietnamese smoked meats are incomparable in their own right. Often the aroma of smoked meats emanate from a roaring charcoal brazier glowing red hot flames are fanned to coax incomparable flavors from simple meats. \u00a0Spices on Vietnamese smoked meats deliver more of a kick than American barbecue sauce while charcoal conveys an assertive personality wholly different than woods. \u00a0The process isn&#8217;t &#8220;low and slow&#8221; in any sense, but the results are absolutely delicious<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">We weren&#8217;t sure what to expect from a Vietnamese fusion menu special featuring\u00a0<em><strong>applewood smoked baby back barbecue ribs<\/strong><\/em>. \u00a0It was nothing like meats grilled on charcoal braziers. \u00a0Save for the sauce, in fact, these baby backs could have been grilled by an American pitmaster.\u00a0 Chef Taylor explained that the ribs are smoked on Chef Tran&#8217;s home smoker and that the sauce is a mix of hoisin, garlic, gochujang, maple syrup and other ingredients.\u00a0 It&#8217;s a winning sauce that melds beautifully with the applewood smoke.\u00a0 The smoke makes its presence felt without being overpowering.\u00a0 The pork has a bit of &#8220;give.&#8221;\u00a0 It isn&#8217;t &#8220;fall off the bone,&#8221; often a sign a meat has been smoked for too long.\u00a0 The baby backs are served with your choice of apple coleslaw or salad.<\/span><\/p>\n<figure id=\"attachment_59844\" aria-describedby=\"caption-attachment-59844\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-59844 lazyload\" style=\"--smush-placeholder-width: 750px; \u00a0You&#8217;ve got to love The Underbelly&#8217;s formulaic approach to storytelling&#8211;quotes, history, background. \u00a0I may have to try that. \u00a0What YOU have to try, especially if you, \u00a0too, love spicy noodles in a bowl is Cafe Nom Nom&#8217;s <strong><em>red Thai curry and coconut milk ramen with lemongrass chicken<\/em><\/strong>. \u00a0It was the special of the week during our March, 2022 visit. \u00a0Chef Taylor told us weekly specials are introduced on Wednesday and sometimes sell out by Friday. \u00a0I got the last one.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">All too often Thai restaurants in the metropolitan area tend to serve curry so sweet it could be a dessert. \u00a0Cafe Nom Nom&#8217;s rendition is far more balanced than most. \u00a0In fact, the coconut milk (one of the contributors to the cloying nature of some curries) barely announces its presence, allowing other flavor profiles (particularly piquant and savory) to compete for the rapt attention of your taste buds. \u00a0A tangle of chewy ramen noodles might inspire loud slurping which will make you grateful that seating is well-spaced. \u00a0A plentiful portion of lemongrass chicken with slightly lemony, slightly gingery notes rounds off one of the best curry dishes we&#8217;ve had in quite a while. \u00a0 \u00a0<\/span><\/p>\n<figure id=\"attachment_60166\" aria-describedby=\"caption-attachment-60166\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-60166 lazyload\" style=\"--smush-placeholder-width: 750px; font-family: Verdana;\"><strong>4 March 2022<\/strong>: One of the weekly specials that sold out before our Friday visit was the <em><strong>Hawaiian 5oh5 pork burger<\/strong><\/em> with a spicy pineapple chutney. \u00a0Because my Kim was heartbroken over not being able to enjoy what potentially could become a favorite, Chef Taylor (ever the gentleman) brought us a generous portion of that spicy pineapple chutney and chips. \u00a0There&#8217;s deliciousness in the simplicity of a minimalist chutney made from no more than four or five ingredients (red pepper, red onion, cilantro, jalape\u00f1o, pineapple). \u00a0It&#8217;s not especially piquant, but boy is it addictive. \u00a0Cafe Nom Nom should bottle and sell this chutney. \u00a0<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\"><strong>4 March 2022<\/strong>: As a culinary culture, the United States has nothing on China. \u00a0\u00a0Chinese buns and bread alone have been around for more than 1,600-years. \u00a0Over the years as the world continues to shrink and the foods of other cultures become more prominent across the fruited plain, one of the most popular increasingly mainstream Chinese dishes is baozi (bao for short). \u00a0Bao, of course are soft, fluffy pillows of milky and slightly sweet steamed buns filled with tender meat, poultry or fresh vegetables. \u00a0Okay, maybe &#8220;filled&#8221; may be a bit of an exaggeration. \u00a0Bao is akin to a surprise gift deep in the recesses of an elaborate package. \u00a0That package, in this case, is the soft steamed bread. \u00a0It&#8217;s wonderful on its own. \u00a0Stuffed with pork, it&#8217;s transcendent. \u00a0<\/span><span style=\"font-size: small;
