People would pick up a pre-cooked bird along with several side dishes, and have a family dinner that felt homemade. The concept of slowly rotating more than one chicken on a spit over a heat source is depicted in medieval European art dating back to the 14th century.\u00a0 From the onset, the appeal of rotisserie chicken is the roasting of the meat using &#8220;spit&#8221; skewers, metal rods that went in one end of a chicken and came out the other end.\u00a0 The meat would be rotated and cooked slowly over a heat source.\u00a0 Rotating meat allowed it to be cooked evenly.\u00a0 Records exist that show the first rotisserie was turned by dogs (though there&#8217;s no way a dachshund could ever have been exploited for this demeaning task).<\/span><\/p>\n<figure id=\"attachment_59874\" aria-describedby=\"caption-attachment-59874\" style=\"width: 525px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-59874 lazyload\" style=\"--smush-placeholder-width: 525px; font-family: Verdana;\">Today rotisserie chicken restaurants can be found in every continent across the globe save for Antarctica.\u00a0 Rotisserie chicken is all the rage in Peru where pollo a la brasa (an entire chicken prepared on a rotisserie charcoal oven) is as ubiquitous and beloved as burgers are in America.\u00a0 (By the way, you can enjoy fabulous Peruvian rotisserie chicken at Albuquerque&#8217;s own <strong><a href=\"https:\/\/www.nmgastronome.com\/?p=13783\" target=\"_blank\" rel=\"noopener\">Pollito Con Papas<\/a><\/strong>.)\u00a0 Or you can visit <a href=\"https:\/\/www.nmgastronome.com\/?p=390\" target=\"_blank\" rel=\"noopener\"><strong>Seasons<\/strong><\/a> in the Old Town district for the most artistically prepared rotisserie chicken in town.\u00a0 And if you&#8217;re looking for something less upscale, try <a href=\"https:\/\/www.nmgastronome.com\/?p=213\" target=\"_blank\" rel=\"noopener\"><strong>Bandido Hideout<\/strong><\/a> on Central Avenue.\u00a0 Still, for my money you can&#8217;t beat the Tikka spiced rotisserie chicken at <a href=\"https:\/\/www.nmgastronome.com\/?p=57694\" target=\"_blank\" rel=\"noopener\"><strong>Tikka Hut<\/strong> <\/a>on 1st Street.\u00a0 Options abound for very good to excellent rotisserie chicken across the Duke City.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">During visits to France, I had the great fortune of experiencing poulet r\u00f4ti (roasted chicken) straight off the spit at a hypermarket in Calais.\u00a0 No country in the world is as serious about its chicken as is France which boasts of dozens of heritage breeds.\u00a0 With more than thirty-percent of the chickens consumed having been pasture-raised, you&#8217;re almost assured of having a good chicken&#8211;whether you enjoy it at a small outdoor market or at at Michelin-rated restaurant. <\/span><\/p>\n<figure id=\"attachment_59875\" aria-describedby=\"caption-attachment-59875\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-59875 lazyload\" style=\"--smush-placeholder-width: 750px; font-family: Verdana;\">Memories of the poulet r\u00f4ti I enjoyed in France came flooding back when \u00dcber Chef Dennis Apodaca of Albuquerque&#8217;s <a href=\"https:\/\/www.nmgastronome.com\/?p=59852\" target=\"_blank\" rel=\"noopener\"><strong>Tikka Hut <\/strong><\/a>told me about Roti N.M. Rotisserie Kitchen at the <a href=\"https:\/\/www.sawmillmarket.com\/\" target=\"_blank\" rel=\"noopener\"><strong>Sawmill Market<\/strong><\/a>.\u00a0 His endorsement was the impetus for me to introduce my friend Bruce &#8220;Sr. Plata&#8221; Silver to the the historic urban market which houses 27 individual local merchants.\u00a0 Sr. Plata would give Napoleon Bonaparte competition in the chicken consumption department.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">I&#8217;ll be honest, we both experienced a bit of sticker shock when perusing the menu at the concession stand-sized restaurant pod.\u00a0 A whole chicken goes for $28, half a chicken for $18 and a quarter chicken is a relative bargain at $16.\u00a0 &#8220;<em>We&#8217;re not at Costco anymore<\/em>,&#8221; Sr. Plata remarked.\u00a0 Indeed, we were not.\u00a0 You could buy five rotisserie chickens at Costco for the cost of one at Roti.\u00a0 But then, you wouldn&#8217;t be getting chickens that &#8220;<em>are grass fed using rotational grazing methods that build healthy soils, preserve water, and do not pollute the air, soil, or water. The birds are moved daily on fresh grasses with fresh air and sunshine.
