B. As with many southern varieties of barbecue, Memphis-style barbecue is mostly made using pork&#8211;usually ribs and shoulders&#8211;though at many Memphis restaurants you can still find beef, chicken and (my favorite) baloney.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">Since about 2016, few dishes have captured the national imagination more than Nashville-style hot chicken, fried chicken that\u2019s taken a bath in an incendiary cayenne-paprika chile sauce. Even\u00a0<a href=\"http:\/\/www.thedailymeal.com\/news\/eat\/wait-over-kfc-s-nashville-hot-chicken-hits-restaurants-nationwide-monday\/011516\">\u00a0<strong>KFC\u2019s jumped on the bandwagon<\/strong><\/a>. Nashville-style hot fried chicken restaurants have popped up throughout the country. Nashville hot chicken isn\u2019t for the pusillanimous poultry-paramour. Most restaurants offer several levels of heat, but even \u201cmild\u201d is generally pretty spicy. Gus\u2019s fried chicken has been touted by culinary cognoscenti as some of the best fried chicken prepared under spacious skies, and not just of the spicy genre. In 2018, for example, The Daily Meal went in search of the <a href=\"https:\/\/www.thedailymeal.com\/best-fried-chicken-america-2018-gallery\" target=\"_blank\" rel=\"noopener\"><strong>best fried chicken places in America<\/strong><\/a> and rated Gus\u2019s second from among 75 purveyors of palate-pleasing poultry (<a href=\"https:\/\/www.nmgastronome.com\/?p=17564\" target=\"_blank\" rel=\"noopener\"><strong>Stroud\u2019s<\/strong><\/a> of Kansas City, my personal favorite ranked 13th). Other national publications, including Saveur and GQ have accorded similar praise. GQ once called Gus\u2019s Fried Chicken one of the top ten meals in the United States. Its birthplace of Memphis may be considered a barbecue hotbed, but culinary-crazed chicken aficionados pilgrimage to Gus\u2019s even before we take in Graceland.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">In the 65 years since its founding, Gus\u2019s Fried Chicken has seen significant expansion. It now has a presence in some <a href=\"https:\/\/gusfriedchicken.com\" target=\"_blank\" rel=\"noopener\"><strong>35 locations<\/strong><\/a> across the fruited plain, including several cities that already had long-established nationally-touted fried chicken restaurants (Austin, for example, had two fried chicken restaurants rated among The Daily Meal\u2019s exalted 75). It\u2019s probably safe to assume that wherever Gus\u2019s launches, it quickly becomes a local favorite. Gus\u2019s World Famous Fried Chicken lives up to the hype\u2013and then some. It\u2019s several orders of magnitude better than the Cajun fried chicken we enjoyed throughout the Deep South. Gus\u2019s in Mesa is situated in the bustling historic area where parking nearby is remarkably easy. \u00a0Gus\u2019s doesn\u2019t serve fried chicken by the bucket, but you can get a \u201csnack sized\u201d portion with as many as 20 pieces. You can also purchase it by the individual piece (breast, thigh, leg, wing) or by the plate where it\u2019s served with baked beans, slaw and white bread though substitutions will cost a bit more. A half-chicken, one of each piece, is a good bet. <\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">There\u2019s no one quality that makes Gus\u2019s fried chicken special. From the outside in let\u2019s start with the crust. It\u2019s the antithesis of the heavily breaded (and much dreaded) fried chicken of which Gil\u2019s Thrilling\u2026 has often lamented. Peanut oil renders the chicken crispy, glistening to an mahogany-hued color. This is crust you\u2019ll want to eat, not discard like some offensive shell. You\u2019ll feel the heat emanating from the Gus\u2019s crust right away. It then settles in with its pleasant piquancy, revealing a deeper, more complex flavor profile. The chicken is tender, moist and flavorful down to the bone (the only part of the bird we didn\u2019t eat), with a just right salty undercurrent. It\u2019s practically life-altering. So are the baked beans, some of \u00a0the best I\u2019ve ever had. I\u2019m still cursing myself for not having ordered a double portion.<\/span><\/p>\n<figure id=\"attachment_60493\" aria-describedby=\"caption-attachment-60493\" style=\"width: 525px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-60493 lazyload\" style=\"--smush-placeholder-width: 525px; font-family: Verdana;\">Kathleen, our gracious server, told us we couldn&#8217;t leave without having a slice of <em><strong>chess pie a la mode<\/strong><\/em>. \u00a0How can you say no to such a delicious invitation. \u00a0Besides we haven&#8217;t had a good chess pie since leaving Mississippi in 1995. \u00a0According to What&#8217;s Cooking America, &#8220;<em>chess pies are a Southern specialty that has simple filling of eggs, sugar, butter and a small amount of butter. \u00a0Flavorings such as vanilla, lemon juice or chocolate are also added to vary the basic recipe<\/em>.&#8221; \u00a0&#8220;<em>The origin of the name, Chess Pie, is uncertain, but there are plenty of guesses and a bit of folklore surrounding the name. \u00a0The most probable explanation is that since the English lemon curd pie filling is very close to lemon chess pie, and they believe the word \u201cchess\u201d is an Americanization of the English word \u201ccheese,\u201d referring to curd pie. \u00a0Basically the Chess Pie is a cheese-less cheesecake<\/em>.&#8221;
