font-family: Verdana;\">In the dark ages before satellite radio and podcasts, my Kim and I usually listened to books on tape to pass the time during long trips. \u00a0Mystery author Patricia Cornwell was one of my Kim&#8217;s very favorites. \u00a0The protagonist for Cornwell&#8217;s\u00a0best-selling novels was medical examiner Kay Scarpetta, a perfectionist and workaholic who uses forensic technologies to solve crime. \u00a0Most of Cornwell&#8217;s novels kept us enthralled from onset to finale. \u00a0Then came that one novel, the one building up toward a slowly revealing and scintillating climax but which finished abruptly. \u00a0The bad guy did it! \u00a0The end! \u00a0That abrupt conclusion torqued so much I swore I&#8217;d never listen to another Kay Scarpetta novel.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">My aggravation was so deep I removed a New York City restaurant named Scarpetta&#8217;s from my lengthy restaurant bucket list. \u00a0In my disappointment at the novel&#8217;s ending, I bucketed Scarpetta&#8217;s the fabulous Italian restaurant with Scarpetta, the forensic examiner who dared solve a murder before my Kim and I were ready to stop listening. \u00a0Though we haven&#8217;t visited New York City in decades, my bucket list was lightened by one all because a novelist thought 400-pages was enough. \u00a0Talk about short-sighted&#8230;her, not me.<\/span><\/p>\n<figure id=\"attachment_60524\" aria-describedby=\"caption-attachment-60524\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-60524 lazyload\" style=\"--smush-placeholder-width: 750px; font-family: Verdana;\">When owner-chef Scott Conant left New York City and launched two restaurants&#8211;The Americano in Scottsdale and Mora Italian in Phoenix&#8211;in 2017, I was relieved to learn neither would be named Scarpetta&#8217;s. \u00a0 Now my Kim and I would finally dine at one of the celebrated chef&#8217;s restaurants. \u00a0Alas, with the Cabrona virus surge nationwide, Mora Italian was closed for nearly a year, finally reopening in April 2021. \u00a0The silver lining in the closure was the opportunity to streamline the menu and\u00a0undergo design renovations to reinvigorate the space\u00a0and hone in on what makes Mora a special dining destination. \u00a0When it first launched in 2017, the modern osteria earned glowing reviews and numerous \u201cbest restaurant\u201d awards. \u00a0Look for more of the same.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">If the name <a href=\"https:\/\/www.foodnetwork.com\/fn-dish\/shows\/2013\/04\/scott-conant-chopped-all-stars\" target=\"_blank\" rel=\"noopener\"><strong>Scott Conant<\/strong><\/a> sounds familiar, you just might tune in periodically to the Food Network program &#8220;<a href=\"https:\/\/www.foodnetwork.com\/shows\/chopped\" target=\"_blank\" rel=\"noopener\"><strong>Chopped<\/strong><\/a>&#8221; for which Conant serves as a judge along with other celebrity chefs and culinary personalities. \u00a0We were under no illusion that the famous chef would be preparing our meal, but to illustrate the point to my Kim I asked our server. \u00a0She confirmed that the chef visits &#8220;<em>about once a month<\/em>&#8221; though she&#8217;s never met or even seen him. \u00a0She explained that he&#8217;s still got business interests in New York that he looks after. \u00a0Hopefully they&#8217;re in a lower rent district than during his previous tenure. \u00a0In an <a href=\"https:\/\/www.worth.com\/restaurateur-scott-conant-new-york-city-scottsdale-arizona\/\" target=\"_blank\" rel=\"noopener\"><strong>interview with Worth<\/strong><\/a>, he lamented &#8220;<em>I had an office space I paid about $5,000 a year in taxes to. And then over time, with De Blasio as mayor, it became $100,000 in taxes a year<\/em>.&#8221; \u00a0Maybe Albuquerque&#8217;s Mayor Keller \u00a0isn&#8217;t so bad after all.<\/span><\/p>\n<figure id=\"attachment_60525\" aria-describedby=\"caption-attachment-60525\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-60525 lazyload\" style=\"--smush-placeholder-width: 750px; font-family: Verdana;\">Mora, an Italian term for blue raspberries, is a spectacular venue. \u00a0One brick wall on the expansive front dining room is festooned with photographs of such golden age Hollywood celebrities as Audrey Hepburn,\u00a0Dean Martin, Frank Sinatra and others. \u00a0A sleek bar described \u00a0beautifully by <a href=\"https:\/\/www.phoenixmag.com\/2021\/10\/08\/happy-hour-mora-italian\/\" target=\"_blank\" rel=\"noopener\"><strong>Phoenix Magazine&#8217;s<\/strong><\/a> Leah Lemoine as having &#8220;<em>cushy wraparound banquette seating, polished wood tables\u00a0and\u00a0coppery modern light\u00a0fixtures\u00a0facing a gleaming bar\u00a0framed\u00a0by patterned blue tiles and\u00a0periwinkle Italian barstools (with backs! can more bars please have stools with\u00a0backs?)<\/em>. \u00a0The Dude, our debonair dachshund, didn&#8217;t care much about the bar, but he was impressed by the street-side patio with unobstructed views of the bustling Seventh Street and several canine passers-by. \u00a0He did not, however, like the unmuffled thrum emanating from vehicle sound systems trying to share their &#8220;music&#8221; with everyone.<\/span><\/p>\n<p><span style=\"font-family: Verdana; font-size: small;\">Mora is intended to be &#8220;<\/span><em style=\"font-family: Verdana; font-size: small;\">a\u00a0modern take on the neighborhood eateries found throughout Italy<\/em><span style=\"font-family: Verdana; font-size: small;\">&#8221; while the menu &#8220;<\/span><i style=\"font-family: Verdana; font-size: small;\">chef Conant\u2019s contemporary approach to Italian cooking reimagines time-honored classics such as rich polenta with porcini sugo, and makes bold new impressions with innovative fare such as black campanelle pasta with clams,\u00a0<\/i><span style=\"font-family: Verdana; font-size: small;\"><i>Fresno<\/i><\/span><i style=\"font-family: Verdana; font-size: small;\">\u00a0chilis and bottarga breadcrumbs<\/i><span style=\"font-family: Verdana; font-size: small;\">.&#8221; Serving only dinner,\u00a0Mora is home to Chef Conant\u2019s seasonal menu of modern osteria fare. \u00a0It&#8217;s a menu which will challenge you to make a decision. \u00a0Absolutely every item listed reads like a best-selling novel&#8230;one that hopefully doesn&#8217;t end prematurely. \u00a0<\/span><\/p>\n<figure id=\"attachment_60526\" aria-describedby=\"caption-attachment-60526\" style=\"width: 525px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-60526 lazyload\" style=\"--smush-placeholder-width: 525px; font-family: Verdana;\">The menu includes a section dedicated to Italian breads. \u00a0Along with France, Italy has arguably the deepest ingrained bread culture in the world so you know it&#8217;s got to be good. \u00a0Eight items adorn the antipasto section of the menu and they&#8217;re not the &#8220;usual suspects.&#8221; \u00a0Charred octopus anyone? \u00a0Six wood-fired pizzas with a canvas of dough fermented for two days, are imbued with more texture and flavor. \u00a0Seafood, chicken and a pork chop make up the main menu, but steak lovers aren&#8217;t left out. \u00a0There&#8217;s also a bistecca menu, Argentinian prime beef served with prezzemolo chimichurri. \u00a0The menu also includes sections dedicated to pasta and vegetables. \u00a0<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">As is the egalitarian nature of our marriage, my Kim selected one &#8220;starter&#8221; and I selected the other. \u00a0Her choice&#8211;<em><strong>wood-fired baby carrots<\/strong><\/em>&#8211;came from the &#8220;Vegetables&#8221; section of the menu. \u00a0If you ever thought root vegetables were boring to anyone not named Bugs, these carrots will change your mind quickly. \u00a0And if you ever thought Mother Nature grew and shaped the Daucus carota into its inimitable size and shape, you&#8217;d be wrong. \u00a0According to the <a href=\"https:\/\/www.foodnetwork.com\/healthyeats\/2016\/05\/the-truth-about-baby-carrots\" target=\"_blank\" rel=\"noopener\"><strong>Food Network<\/strong><\/a>, &#8220;<em>In the 1980s, a California farmer lamented that many of his carrots were not salable because they were &#8220;ugly.&#8221; \u00a0Instead of tossing these ugly carrots, he used an industrial bean cutter to shape them into what are now called baby carrots. \u00a0Today, baby carrots consist of 70-percent of total carrot sales<\/em>.&#8221;<\/span><\/p>\n<figure id=\"attachment_60527\" aria-describedby=\"caption-attachment-60527\" style=\"width: 525px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-60527 lazyload\" style=\"--smush-placeholder-width: 525px; font-family: Verdana;\">There&#8217;s absolutely nothing ugly about the flavor of wood-fired baby carrots. \u00a0In addition to providing higher levels of some nutrients than &#8220;regular&#8221; carrots do, they&#8217;re absolutely delicious, like sweet vegetable candy. \u00a0Then there&#8217;s the wood-fired component. \u00a0We all know what wood-firing does for pizza. \u00a0It&#8217;s a quick heat that lightly chars orange, yellow and purple carrots, rendering them soft but not mushy. \u00a0The purple carrots, in particular, have an\u00a0intensely sweet flavor with slightly peppery notes. \u00a0 The carrots are served atop rich, creamy mascarpone and topped with a salsa verde which provides a slightly acerbic contrast. \u00a0In my early youth carrots were the bane of my existence; now they&#8217;re one of life&#8217;s joys.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\"><span class=\"dropcap\" role=\"presentation\">F<\/span>or 33 months now, Phoenix, has <strong><a href=\"https:\/\/www.spglobal.com\/spdji\/en\/index-announcements\/article\/sp-corelogic-case-shiller-index-shows-annual-home-price-gains-increased-to-198-in-february\/\" target=\"_blank\" rel=\"noopener\">led the nation in home price increases<\/a>.<\/strong> In the last year alone, the cost of the median house in the area has risen by a third. It\u2019s an amazing dish Chef Kevin was taught to prepare by restaurant impresario and celebrity chef <strong><a title=\"Chef Roy Yamaguchi\" href=\"http:\/\/www.roysrestaurant.com\/about\/roy_yamaguchi.asp\" target=\"_blank\" rel=\"noopener\">Roy Yamaguchi<\/a><\/strong>, founder of Hawaiian fusion cuisine. Black cod, also known as \u201csablefish\u201d is a delicate, flaky fish with a rich, buttery flavor and silky sweet and rich overtones. It&#8217;s not often found on restaurants across the Land of Enchantment, but seeing it on Mora&#8217;s menu was one of the main reasons we visited. \u00a0Yeah, it&#8217;s that good!<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">Mora&#8217;s <em><strong>Calabrian Marinated Black Cod<\/strong><\/em> (salt baked sunchoke, charred radish, currants, caper-pignoli vinaigrette) showed me the versatility of black cod. \u00a0While Chef Yamaguchi&#8217;s version highlights black cod&#8217;s inherent sweet notes, Chef Conant&#8217;s rendition is more balanced, leaning toward savory. \u00a0Sadly, however, the portion was microscopic (it doesn&#8217;t even peek out from under the accompanying \u00a0veggies)&#8230;no more than five or six small bites. \u00a0That portion was a tease, a meager introduction to an outstanding filet that wouldn&#8217;t feed a child. \u00a0It&#8217;s probably easy to blame supply issues for the minuscule portion, but frankly there&#8217;s no excuse considering the price.<\/span><\/p>\n<figure id=\"attachment_60529\" aria-describedby=\"caption-attachment-60529\" style=\"width: 577px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-60529 lazyload\" style=\"--smush-placeholder-width: 577px; font-family: Verdana;\">Not long after the dreaded &#8220;Y2K,&#8221; Chef Chris Bianco cemented his legend as the country&#8217;s premier pizzaioli with his flagship <a href=\"https:\/\/www.nmgastronome.com\/?p=58\" target=\"_blank\" rel=\"noopener\"><strong>Pizzeria Bianco<\/strong><\/a>. \u00a0That Phoenix, Arizona, of all places could be celebrated for its pizza is still a shock to pizza snobs back East. \u00a0Virtually every national online and print media source that took notice of Bianco&#8217;s genius has since uncovered a number of Phoenix area pizzerias serving peerless pies. \u00a0We haven&#8217;t been to many of them, but it&#8217;s hard to imagine any pizza as good as Mora&#8217;s <em><strong>funghi pizza<\/strong><\/em> (truffled fontina fondue, pickled shallot). \u00a0Every element of that pizza was palate-pleasing to an nth-degree. \u00a0The crust and its charred cornicione had a wood-fired oven flavor reminiscent of the very best baked bread. \u00a0The mushrooms had a recently foraged flavor with an earthiness that coupled with the truffle flavor. \u00a0The pickled shallots were akin to what you might find at a Mexican restaurant. \u00a0For this pizza, I&#8217;d even dine at Scarpetta&#8217;s.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\">Just when we thought our meal couldn&#8217;t get any better (smallish portion of black cod not withstanding), our server recommended <em><strong>bomboloni<\/strong><\/em> (a duo of stuffed Italian doughnuts: chocolate hazelnut and dulce de leche), one of five desserts on the menu. \u00a0We&#8217;ve had bomboloni a number of times and were left with an indifferent impression&#8211;yeah, no big deal. \u00a0If you&#8217;re wondering what the difference is between American doughnuts and bomboloni, the former usually has a hole in the center, while the bombolini is like a jelly doughnut, made completely round and intended to be filled with a custard, jam, or cream. \u00a0<\/span><span style=\"font-size: small; font-family: Verdana;\">My Kim called Mora&#8217;s bomboloni the best dessert she&#8217;s had in years. \u00a0Who am I to argue? \u00a0Each bite of the ethereal dessert was a joy.<\/span><\/p>\n<figure id=\"attachment_60531\" aria-describedby=\"caption-attachment-60531\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-60531 lazyload\" style=\"--smush-placeholder-width: 750px;
