Grandfathers carry the spirit of the people. Grandmothers are even more sacred because they carry the heart and soul of the people. Grandmothers carry the sacred spirit of the Mother Earth. and &#8220;Tia&#8221; it brought a broad smile to their faces. \u00a0They knew we addressed them with terms of endearment as a sign of respect, not in a sarcastic manner. \u00a0It made them happy to be recognized with the esteem they deserve. \u00a0If you&#8217;re thinking &#8220;<em>this is Gil being Pollyanna again&#8221; <\/em>and that<em> &#8220;respect is earned not given<\/em>,&#8221; both my Kim and I \u00a0are would argue that every person has dignity and deserves to be treated kindly. \u00a0 It&#8217;s not Pollyanna, it&#8217;s just us having been taught well by elders we love and respect.<\/p>\n<p>You can find Tio&#8217;s Kitchen on the southwest intersection of Highway 550 and Camino Del Pueblo in Bernalillo. \u00a0Its next door neighbor is yet another marijuana dispensary. \u00a0Tio&#8217;s Kitchen is a pristine battleship grey beauty with a limited menu. \u00a0In fact, that menu is (almost in its entirety) listed just above the two windows where you place and receive your order. \u00a0 &#8220;Birria, Asada, Barbacoa and Angus Frescas&#8221; \u00a0are the menu&#8217;s &#8220;high-level categories.&#8221; \u00a0Another, more comprehensive, menu lists all items. \u00a0You won&#8217;t find a compendium listing much more than the four items listed above. \u00a0In the tandem operation, Tia runs the &#8220;front of the house,&#8221; These tacos are a portmanteau combining <em>queso<\/em> (cheese) and <em>birria<\/em>, a traditional Mexican stew usually made from the same beef. \u00a0Basically, it&#8217;s a beef birria taco with melted cheese&#8211;a kind of cross between a taco and a quesadilla. Almost everyone orders a cup of rich, chile-tinged consom\u00e9, or beef broth, on the side to sip between bites (or to dip the tacos into). \u00a0There&#8217;s only one thing that could have made these tacos better. \u00a0Had the consomm\u00e9 been flecked with little shards of beef, it would have been top tier.<\/p>\n<p>Because of her acquired aversion toward all things piquant, my Kim has never been able to enjoy birria. \u00a0In that respect she&#8217;s maybe the only person (excluding vegans and vegetarians) in the metro not caught up in the birria craze. \u00a0Not that she doesn&#8217;t have many options. \u00a0She loves carne asada which Tio serves in the form of tacos, burritos and quesadilla. \u00a0Sadly, none of her options include any type of salsa because she can no longer enjoy the heat. \u00a0Her <em><strong>carne asada burrito<\/strong><\/em> did include sliced avocados. \u00a0As burritos go, it lacks much personality. \u00a0It&#8217;s just carne and avocados enveloped in a flour tortilla. \u00a0My Kim liked it&#8230;which made it a good burrito.<\/p>\n<figure id=\"attachment_64342\" aria-describedby=\"caption-attachment-64342\" style=\"width: 605px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-64342 lazyload\" style=\"--smush-placeholder-width: 605px;
