He clarified for the Arizona Republic: &#8220;<em>I was born in Chihuahua, but I grew up [in Arizona],\u201d \u201cSo Nadia (his business partner Nadia Holguin) and I are in this weird limbo of just trying to create something that\u2019s ours<\/em>.\u201d \u00a0 Without the evolution of Mexican food \u00a0over the centuries, there would be no chiles rellenos en nogada (circa 1821), Caesar salad (1904) or even enchiladas (19th Century). \u00a0So what&#8217;s to say Chefs Hernandez and Holguin aren&#8217;t creating dishes that won&#8217;t someday become essential elements of Mexican cuisine. \u00a0Frankly, that would suit me very well.<\/p>\n<p>Similar to her partner, Chef Holguin was born in Chihuahua. \u00a0Both trained in some of the Valley&#8217;s most prominent kitchens. They partnered in the creation Tacos Chiwas, a drive-through taco shop that has since expanded into a mini-empire of critically acclaimed restaurants. In recent years, they teamed up with Rene Andrade and Roberto Centeno to launch <a href=\"https:\/\/www.bacanoraphx.com\/\" target=\"_blank\" rel=\"noopener\"><strong>Bacanora<\/strong><\/a> and <a href=\"https:\/\/www.espiritumesa.com\/menu\" target=\"_blank\" rel=\"noopener\"><strong>Espiritu<\/strong><\/a>, both among the toughest reservations to get in the Valley.\u00a0 Both have also garnered national accolades&#8211;including a James Beard &#8220;Best Chef&#8221; nomination for Bacanora in 2022. \u00a0 Their latest concept, Cocina Chiwas, opened in Tempe in February, 2023.<\/p>\n<figure id=\"attachment_65343\" aria-describedby=\"caption-attachment-65343\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-65343 lazyload\" style=\"--smush-placeholder-width: 750px; by the way, has two potential meanings, neither of which our server was able to confirm.\u00a0 Chiwas could mean &#8220;<em>the act of running swiftly and gracefully, resembling the movement of a deer<\/em>.&#8221;\u00a0 That term originates from the indigenous language of the Tarahumara people who are renown as tremendous distance runners.\u00a0 The second definition&#8211;and this is all mine&#8211;is that &#8220;Chiwas&#8217; could be a diminutive for &#8220;Chihuahuans&#8221; as in people from the Mexican state of Chihuahua.<\/p>\n<p>Scour Cocina Chivas&#8217; menu and you&#8217;ll glean immediate confirmation as to what Chef Hernandez told the Phoenix New Times.\u00a0 This is definitely not your grandma&#8217;s menu.\u00a0 Nor is the restaurant&#8217;s ambiance fit any tired stereotyped template.\u00a0 The menu is more contemporary than it is traditional, more avant-garde than it is time-honored and classical.\u00a0 There are familiar elements to the menu, but they&#8217;re interpreted just a little differently.\u00a0 You&#8217;ll see that in dishes you&#8217;ve probably been enjoying for a long time: enchiladas, quesadillas, chile rellenos.\u00a0 They&#8217;re definitely not interpreted the way your grandmother would have.<\/p>\n<figure id=\"attachment_65344\" aria-describedby=\"caption-attachment-65344\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-65344 lazyload\" style=\"--smush-placeholder-width: 750px; (boring, if you will) to this dish. \u00a0Not so at Cocina Chiwas. \u00a0This is chile con queso with personality. \u00a0That doesn&#8217;t necessarily mean piquancy. \u00a0In my book, the &#8220;heat&#8221; wouldn&#8217;t register high on a Scoville scale. \u00a0In terms of flavor, however, the con queso was excellent. \u00a0Alas, the chips were rather brittle and snapped in half as we tried to scoop up the con queso.<\/p>\n<figure id=\"attachment_65345\" aria-describedby=\"caption-attachment-65345\" style=\"width: 497px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-65345 lazyload\" style=\"--smush-placeholder-width: 497px; --smush-placeholder-aspect-ratio: 497\/700;border: 4px solid black; margin: 3px;\" data-src=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2023\/12\/CocinaChiwas05-scaled.jpeg?lossy=2&strip=1&webp=1\" alt=\"\" width=\"497\" height=\"700\" data-srcset=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2023\/12\/CocinaChiwas05-scaled.jpeg?lossy=2&strip=1&webp=1 1817w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2023\/12\/CocinaChiwas05-213x300.jpeg?lossy=2&strip=1&webp=1 213w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2023\/12\/CocinaChiwas05-727x1024.jpeg?lossy=2&strip=1&webp=1 727w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2023\/12\/CocinaChiwas05-106x150.jpeg?lossy=2&strip=1&webp=1 106w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2023\/12\/CocinaChiwas05-768x1082.jpeg?lossy=2&strip=1&webp=1 768w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2023\/12\/CocinaChiwas05-1090x1536.jpeg?lossy=2&strip=1&webp=1 1090w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2023\/12\/CocinaChiwas05-1454x2048.jpeg?lossy=2&strip=1&webp=1 1454w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2023\/12\/CocinaChiwas05.jpeg?size=384x541&lossy=2&strip=1&webp=1 384w\" data-sizes=\"(max-width: 497px) 100vw, 497px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" \/><figcaption id=\"caption-attachment-65345\" class=\"wp-caption-text\">Iberico Bone-In Chop<\/figcaption><\/figure>\n<p>Much better&#8211;as in maybe the best we&#8217;ve ever had&#8211;is the <em><strong>roasted beet salad<\/strong><\/em> (arugula, honey pecans, crema Jocoque, roasted elote, poppy seed vinaigrette). \u00a0 Its become almost inevitable that we order beet salad when it&#8217;s on the menu. \u00a0We love the sweet earthiness of the beets along with any accompanying ingredients. \u00a0Crema Jocoque, a buttermilk-style cream with a balance between cream and yogurt was a first for us both. \u00a0It&#8217;s got a flavor somewhat between creme fraiche, sour cream, and Lebanese labneh and provides a wonderful counterbalance to the honey pecans and roasted elote, both of which are pleasantly sweet. \u00a0The roasted beets were superb in their earthiness and sweet profile. \u00a0Then there&#8217;s the poppy seed vinaigrette with sweet and mild notes reminiscent of citrus.<\/p>\n<p>Seeing &#8220;<em><strong>Ibeico bone-in pork chop<\/strong><\/em>&#8221; was a no-brainer as to what Kim would be having. \u00a0Available on the daily specials menu, it&#8217;s a dish that showcases the capabilities of the wood-fired grill. \u00a0Ordinarily served with a morita chile glaze (which my Kim eschewed), mashed potatoes and a cucumber, jicama and cilantro salad, this is a magnificent plate. \u00a0The pork chop is sliced into half-inch thick medallions with the bone detached so diners can gnaw on it. \u00a0Flame-kissed with just a hint of sweetness, the pork was as tender as my Kim&#8217;s heart and were moist and delicious. \u00a0The mashed potatoes were whipped to within an inch of their lives (the way we like them) and were enhanced with cracked pepper and sesame seeds. \u00a0Very few restaurant-made mashed potatoes have impressed us as much.<\/p>\n<figure id=\"attachment_65346\" aria-describedby=\"caption-attachment-65346\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-65346 lazyload\" style=\"--smush-placeholder-width: 750px; Silver made it my mission to scout the Valley for Korean beef short ribs. \u00a0Ironically, we found them at a Mexican restaurant. \u00a0Cocina Chiwas calls them &#8220;<em><strong>Costilla de Res<\/strong><\/em>,&#8221; but by any other name they&#8217;re Korean-style beef short ribs served with rice, whole beans, sweet salsa macha, cebollitas and a flour tortilla. \u00a0 Unlike galbi, the Korean version of beef short ribs, these don&#8217;t have a sweet barbecue-like marinade. \u00a0Instead, they&#8217;re glazed with a sweet salsa macha that carame&#8217;lizes when kissed by flame. \u00a0This is one salsa that should be bottled and sold at your favorite retailer. \u00a0The ribs are meaty and absolutely meant to be picked up with your hands and eaten. \u00a0Only snobs (the type of which eat a Snickers bar with knife and fork) will eat them otherwise. \u00a0The beans and rice are exemplars of how beans and rice should be prepared. \u00a0Only the tortilla (too thin and insubstantial) was lacking.<\/p>\n<p>My Kim has never liked carrot cake (which might explain her need to wear glasses and contact lenses). \u00a0 My vision (20\/15) is almost the equal of Bugs Bunny&#8217;s though you can&#8217;t attribute my acuity to carrots. \u00a0Maybe I can develop x-ray vision by eating more slabs of Cocina Chiwas&#8217; <em><strong>tres leches carrot cake<\/strong><\/em> (with candied pecans, cajeta and berry compote). \u00a0Even if all it does is make me more rotund, this is one carrot cake not to be passed up. \u00a0We didn&#8217;t get much conventional &#8220;tres leches&#8221; out of it in that it didn&#8217;t leak profusely as we pressed our forks down on it, but hey, this isn&#8217;t grandma&#8217;s tres leches cake. \u00a0It&#8217;s still one of the very best we&#8217;ve had especially when we came upon candied pecans and cajeta, an unbeatable combination.<\/p>\n<figure id=\"attachment_65347\" aria-describedby=\"caption-attachment-65347\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-65347 lazyload\" style=\"--smush-placeholder-width: 750px;
