Dine&#8217; is what Navajos call themselves. \u00a0It is, in fact, more appropriate than \u00a0Navajo, a term which comes from a Tewa-Puebloan word &#8220;nava hu&#8221; meaning &#8220;<em>place of large planted fields<\/em>.&#8221; \u00a0We&#8217;ve known Kris for the four years in which we&#8217;ve been renting a wonderful <a href=\"https:\/\/www.airbnb.com\/rooms\/45422195?bev_ref=&amp;c=.pi80.pkYm9va2luZy92MV9taWdyYXRpb24vcmVzZXJ2YXRpb25fYWNjZXB0YW5jZV9jb25maXJtYXRpb25fZ3Vlc3Q%3D&amp;eal_exp=1610910850&amp;eal_sig=0beb8bbc1c8273256cf40938784b0aeff1591b3e1dd0d4f904400956dbacf9e8&amp;eal_uid=162023163&amp;euid=edb0deee-f4a1-e382-ddce-ccec8e411a03&amp;photo=&amp;s=&amp;user_id=&amp;source_impression_id=p3_1672679630_BHTMxByF6gYTwY3K\" target=\"_blank\" rel=\"noopener\"><strong>home in Tempe. <\/strong><\/a>Kris has deep roots in New Mexico so he&#8217;s intimately acquainted with New Mexican food, culture and politics. \u00a0He&#8217;s an affable, good-humored guy and a great neighbor. \u00a0So, when I joked about him being an &#8220;Indian&#8221; who&#8217;s never had &#8220;Indian&#8221; food, he knew of what I spoke.<\/p>\n<p>There&#8217;s no shortage of Indian restaurants in the Phoenix area. \u00a0Unlike in Albuquerque where the generic terms &#8220;Southern Indian&#8221; and &#8220;Northern Indian&#8221; are used to refer to the cuisine they proffer, in Tempe you can actually find a Punjabi restaurant. \u00a0According to the Collins Dictionary, Punjabi means &#8220;<em>belonging or relating to the Punjab region of India or Pakistan, its people, or its language<\/em>.&#8221; \u00a0In essence, calling a Punjabi restaurant &#8220;Indian&#8221; is as much a faux pas as calling a Dine<b>&#8216; <\/b>&#8220;Indian.&#8221; \u00a0 It was actually the realization that The Dhaba was a Punjabi restaurant that drew me to it.<\/p>\n<figure id=\"attachment_65416\" aria-describedby=\"caption-attachment-65416\" style=\"width: 525px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-65416 lazyload\" style=\"--smush-placeholder-width: 525px; \u00a0Here&#8217;s Eater&#8217;s synopsis of The Dhaba: &#8220;<em>The Dhaba features dishes from the Punjab region and is known for mixing its own blend of cumin, coriander, cloves, cinnamon, chili powder, cardamom, and nutmeg. There is no shortage of tandoor naan or halal meats on the menu and there\u2019s also plenty of street foods like pani-puri, bhel puri, and samosa chaat. It is served as side dish or a standalone snack; Indian restaurants will often bring them out as an appetizer with an array of chutneys for dipping. \u00a0<\/em>Chutneys are essentially dipping sauces or relishes with diverse flavor profiles.<\/p>\n<p>The papadum is crisp, delicate, and replete with cumin seeds. \u00a0It&#8217;s \u00a0light-as-air and works best when dipped. \u00a0It&#8217;s too brittle for scooping the delightful chutneys. \u00a0Kris quickly proved his mettle for heat tolerance by proclaiming how much he liked the <em><strong>chili garlic chutney<\/strong><\/em> which was more piquant than most New Mexican chile. \u00a0His eyes didn&#8217;t water and he didn&#8217;t sputter and choke as I feared he might. \u00a0 The second chutney was <em><strong>mint cilantro<\/strong><\/em>, nearly as piquant as the chili garlic chutney. It showcases freshness from the herbs and heat from the green chili (typically added when preparing this chutney). \u00a0My Kim eschewed the two piquant chutneys and even ordered an extra portion of <em><strong>tamarind chutney<\/strong><\/em>. He enjoyed the rich tomato-based sauce and its melt-in-your-mouth tender chicken immensely.<\/p>\n<p>Many of my very favorite Indian dishes feature paneer, the Indian &#8220;farmer&#8217;s&#8221; cheese made from curdled milk and some sort of fruit or vegetable acid like lemon juice. \u00a0Paneer is a soft, unaged cheese that doesn&#8217;t melt. \u00a0Paneer is typically cut into bite-size chunks that remain intact despite the heat of dishes in which it is used. \u00a0One of the most delicious paneer-based dishes is <em><strong>Kadahi<\/strong><\/em> Paneer, a fragrant, warming dish replete with personality courtesy of a unique spice profile melded with bell peppers and paneer. \u00a0 At spice level &#8220;7&#8221; this dish is absolutely addictive. \u00a0At level &#8220;10&#8221; it might have obfuscated the richness of paneer altogether.<\/p>\n<figure id=\"attachment_65414\" aria-describedby=\"caption-attachment-65414\" style=\"width: 525px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-65414 lazyload\" style=\"--smush-placeholder-width: 525px; or even one at a minus level, my Kim would have ordered it. \u00a0Our server assured her she would enjoy the <em><strong>Gazab Ka Kadahi Murgh<\/strong><\/em>\u00a0(barbequed boneless chicken marinated in a spicy yogurt, baked in a clay oven and mixed with sliced onions, colorful bell peppers and tomatoes in a thick sauce with exotic spices). \u00a0 Chunks of tender chicken are plentiful within the rich tomato-based sauce. \u00a0Rich, tangy yogurt punctuates this dish, giving it a subtle sour tang. \u00a0This dish is smooth, creamy and thoroughly memorable.<\/p>\n<p>I&#8217;ve often committed sacrilege by declaring naan better than New Mexico&#8217;s sacrosanct tortillas. \u00a0Kris didn&#8217;t quite go that far, but he did notice the similarities between naan and tortillas. \u00a0He delighted in dipping the <em><strong>garlic naan<\/strong><\/em> into the three aforementioned chutneys. \u00a0India is widely acknowledged as one of the world&#8217;s best bread cultures. \u00a0Naan is just one of the reasons. \u00a0Another is <em><strong>roti<\/strong><\/em>, a very simple bread made from only two ingredients: atta (wheat flour) and water. \u00a0While naan is exclusively baked in a tandoor oven traditionally fired by charcoal or wood, roti is prepared on a tawa (flat skillet). \u00a0Roti is thinner than most naan. \u00a0Both are wonderful!<\/p>\n<figure id=\"attachment_65415\" aria-describedby=\"caption-attachment-65415\" style=\"width: 525px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-65415 lazyload\" style=\"--smush-placeholder-width: 525px;
