\u00a0In the village of Corrales, that term could conceivably not be used as a pejorative. \u00a0Every year during the last weekend of the Corrales Harvest Festival, a pet mayor is named. \u00a0If the newly elected mayor is unable to fulfill his or her duties, a pet mayor pro tem is named to assume the duties of the mayoral office. \u00a0Corrales has long prided itself on being a paragon of democratic values and inclusivity though the winning candidate is usually a dog or a horse. \u00a0In 2022, the winning candidate was a peacock and in 2020, it was \u00a0Chip, a five month old miniature donkey.<\/p>\n<figure id=\"attachment_66058\" aria-describedby=\"caption-attachment-66058\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-66058 lazyload\" style=\"--smush-placeholder-width: 750px; In 2021, for example, Jewel, a Standard Poodle&#8217;s slogan was \u201c<em>The world needs more love, belly rubs, and paws-itivity<\/em>!\u201d \u00a0If mayoral approval ratings were compiled, you can bet the Corrales pet mayor receive universal praise.<\/p>\n<figure id=\"attachment_66060\" aria-describedby=\"caption-attachment-66060\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-66060 lazyload\" style=\"--smush-placeholder-width: 750px; we naturally wondered if a mule was running for pet mayor. \u00a0<a href=\"https:\/\/www.bterzesphoto.com\" target=\"_blank\" rel=\"noopener\"><strong>Bruce Terzes<\/strong><\/a>, the extraordinary photographer and my trusted source for restaurant news in Corrales discovered and apprised me that Mulas was to be the name of a new restaurant to be launched at the former site of the <a href=\"https:\/\/www.nmgastronome.com\/?p=137\" target=\"_blank\" rel=\"noopener\"><strong>Corrales Bistro Brewery<\/strong><\/a>.<\/p>\n<figure id=\"attachment_66061\" aria-describedby=\"caption-attachment-66061\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-66061 lazyload\" style=\"--smush-placeholder-width: 750px; \u00a0Elizabeth and her husband Gabriel also own Debajo Tapas, an Albuquerque Old Town area showcasing Spanish tapas.<\/p>\n<p>From the outside, there aren&#8217;t many apparent changes to the complex housing Mulas save for a single mule bearing a burden perched on a platform. \u00a0Inside, however, changes are readily apparent&#8211;and dramatic. \u00a0Walls are festooned with mule-themed accoutrements such as horseshoes fashioned in the shape of a mule, harnesses and other frontier New Mexico farm and ranching implements. \u00a0Views to an expansive kitchen are now available. \u00a0A large trastero is one of that kitchen&#8217;s highlights. \u00a0So is the pizza oven which should get a lot of use.<\/p>\n<figure id=\"attachment_66062\" aria-describedby=\"caption-attachment-66062\" style=\"width: 571px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-66062 lazyload\" style=\"--smush-placeholder-width: 571px; Sopas (salad and soup) section of the menu lists only three items, including gazpacho, the legendary Spanish cold soup. \u00a0&#8220;A Taste of Home&#8221; on the menu delivers on its implied promise, highlighting such New Mexican favorites as pork tamales, burritos and a green chile cheeseburger. \u00a0Other sections on the menu are dedicated to tacos, bocadillos and pizza. \u00a0Yes, pizza&#8230;and it&#8217;s a good one.<\/p>\n<figure id=\"attachment_66065\" aria-describedby=\"caption-attachment-66065\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-66065 lazyload\" style=\"--smush-placeholder-width: 750px; was a surprise in that it interacted very well with the roasted lamb. \u00a0This is an entree-sized appetizer. \u00a0We wound up taking most of it home. \u00a0By then, the fry bread was too crispy to eat&#8211;even after heating it. \u00a0Scraping off the other ingredients and nestling them on a tortilla took care of that problem.<\/p>\n<p>There are five pizzas on the menu. \u00a0Frankly the pizza dough would have made a better platform for the botanas del cordero than the Navajo fry bread did. \u00a0I tried to dissuade my Kim from ordering a <em><strong>Margerita Pizza<\/strong><\/em> (wood-fired, fresh basil, tomato) which I&#8217;ve always found as boring as driving through Iowa. \u00a0Thankfully the accommodating staff allowed her to top the pizza with shredded pork. \u00a0Okay, it&#8217;s no longer a Margerita, but it&#8217;s a a fabulous pie&#8230;the very best Margerita I&#8217;ve ever had. \u00a0First, the wood-fire oven does a magnificent job, imparting a delicious char on the cornicione (the an Italian term for the \u201clip\u201d or puffy outer edge of the pizza). \u00a0 More than any pizzeria of recent memory, the wood fire had a wood fire flavor. \u00a0 Cheese, sauce and basil worked together in beautiful harmony to impart memorable flavors. \u00a0Before settling on the Margerita pizza, I asked for a sample of the roasted corn salsa so my Kim can determine if it&#8217;s too piquant for her. \u00a0It was indeed too much for my delicate bride, but it was perfect for me. \u00a0That salsa is featured on the Rio Grande pizza, a future choice for me.<\/p>\n<figure id=\"attachment_66064\" aria-describedby=\"caption-attachment-66064\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-66064 lazyload\" style=\"--smush-placeholder-width: 750px; section of the menu, the enchiladas (three green chile chicken, red Chimayo chile beef or cheese served with Spanish rice and pinto beans). \u00a0Ask for one of each. \u00a0The red Chimayo chile was especially resplended in its complexity and sweet notes. \u00a0Few things in life are as wonderful as Chimayo chile. \u00a0The green chile chicken enchilada was superb thanks to moist tendrils of shredded chicken. \u00a0The beans were wonderful!<\/p>\n<p>Our dessert was perhaps mislabeled. \u00a0It&#8217;s called a <em><strong>bu\u00f1uelo<\/strong><\/em> and like the aforementioned Navajo fry bread didn&#8217;t look much like what it&#8217;s supposed to be. \u00a0It&#8217;s wholly unlike any of the hundreds of bu\u00f1uelos I&#8217;ve had. \u00a0Our first impression was that our dessert was churros topped with a scoop of vanilla drizzled with caramel. \u00a0By any name, call this dessert delicious. \u00a0Almost every survey (and there have been many) on America&#8217;s favorite ice cream flavor indicates the land of the sugar-free and dessert crave prefers vanilla to all other flavors. \u00a0My Kim certainly does. \u00a0She enjoyed the bu\u00f1uelos as much as I enjoyed the chile.<\/p>\n<figure id=\"attachment_66066\" aria-describedby=\"caption-attachment-66066\" style=\"width: 618px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-66066 lazyload\" style=\"--smush-placeholder-width: 618px;
