From its headwaters in Colorado to its terminus in the Gulf of Mexico, communities rely on the Rio and its tributaries for drinking water, agriculture, abundant recreation and habitat for birds. \u00a0It is quite literally the backbone of local economies, including New Mexico&#8217;s sacrosanct green chile crop. \u00a0The Rio Grande supports 120 different species of fish (and not solely the much-maligned silvery minnow). In fact, almost 70 of those species are found nowhere else in the world. Likewise there are three specific areas that support bird species and even some mollusk.<\/p>\n<p>So, we may joke about our murky, misnamed Rio Grande, but most New Mexicans know how critical it is to our lifestyle. \u00a0It may not be blessed with abundant water, but we&#8217;re very proud of it. \u00a0So proud, in fact, that the sacred name &#8220;Rio Grande&#8221; is festooned on banners, buildings, mastheads and company names. \u00a0Among the latter is the Rio Grande Social, a yawning restaurant on Coors Blvd. \u00a0 That the eatery would sport the name &#8220;Rio Grande&#8221; was a given. \u00a0Initially, it was to be called the &#8220;Rio Grande Tavern,&#8221; but a New Mexico <a href=\"https:\/\/law.justia.com\/codes\/new-mexico\/chapter-24\/article-16\/section-24-16-3\/\" target=\"_blank\" rel=\"noopener\"><strong>state statute<\/strong><\/a> precluded using the name because the state defines &#8220;bar&#8221; (and tavern, nightclub, cocktail lounge and cabaret) as an establishment devoted to the selling or serving of alcoholic beverages for consumption by patrons on the premises and in which the serving of food is only incidental to the consumption of those beverages.<\/p>\n<figure id=\"attachment_66970\" aria-describedby=\"caption-attachment-66970\" style=\"width: 536px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-66970 lazyload\" style=\"--smush-placeholder-width: 536px; \u00a0You might ask why it isn&#8217;t &#8220;Rio Grande Social Club.&#8221; \u00a0In the Old West, miners&#8217; towns invited the business (or recreation) of prostitution. \u00a0Instead of &#8220;<em>Whore House<\/em>,&#8221; &#8220;<em>Bawdy House<\/em>,&#8221; &#8220;<em>Brothel<\/em>,&#8221; &#8220;<em>Bordello<\/em>&#8221; or &#8220;<em>House of Ill Repute<\/em>,&#8221; the politically correct term &#8220;Social Club&#8221; was used. \u00a0Today, business named &#8220;Social Club&#8221; might invite the &#8220;wrong&#8221; kind of customers.<\/p>\n<p>Rio Grande Social is going to attract a lot of patrons, especially during football season. \u00a0A bank of flatscreen televisions is the cynosure of the otherwise antiseptic (<span class=\"AraNOb\">scrupulously<\/span> clean or pure, especially so as to be bland or characterless.) restaurant. \u00a0High ceilings and industrial duct work keep the restaurant cool, but they don&#8217;t muffle sound well. \u00a0Seating is a plus. \u00a0It&#8217;s not in personal space proximity (though The Dude always attracts a crowd wherever we go).<\/p>\n<figure id=\"attachment_66972\" aria-describedby=\"caption-attachment-66972\" style=\"width: 599px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-66972 lazyload\" style=\"--smush-placeholder-width: 599px; \u00a0While most open kitchens offer half-wall views of the kitchen, you can actually see the entirety of the kitchen underneath the aphorism &#8220;It&#8217;s 505 somewhere.&#8221;<\/p>\n<p>Deciding what to order is always a challenge from a menu with so many options. \u00a0Because I like virtually everything, I leave it to my Kim to order whatever appetizer we&#8217;ll be sharing. \u00a0For our inaugural visit to Social, she wanted the <em><strong>pretzel fondue<\/strong><\/em> with a housemade queso. \u00a0Our server (the wonderful Beth) shared that the pretzel comes from <a href=\"https:\/\/pretzilla.com\" target=\"_blank\" rel=\"noopener\"><strong>Pretzel Zilla<\/strong><\/a>, America&#8217;s number one source for soft pretzel breads and buns. \u00a0Far from a conventional knot-shaped pretzel, its shape is more akin to a baked bread orb which in appearance resembles an overgrown hazelnut. \u00a0 Unlike many pretzels, each orb is low in salt which makes it more essential that the queso be good. \u00a0It is. \u00a0Only at Scottsdale&#8217;s <a href=\"https:\/\/www.nmgastronome.com\/?p=60497\" target=\"_blank\" rel=\"noopener\"><strong>Culinary Dropout<\/strong><\/a> have we experienced pretzels like these.<\/p>\n<figure id=\"attachment_66974\" aria-describedby=\"caption-attachment-66974\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-66974 lazyload\" style=\"--smush-placeholder-width: 750px; a pepperoni and green chile pizza. \u00a0The crust is of medium thickness and has a nicely charred cornicione (outer rim of the pizza crust), what most people just call &#8220;the crust.&#8221; \u00a0The cornicione isn&#8217;t covered in sauce or toppings&#8230;or even cheese. \u00a0You can taste the cornicione unencumbered. \u00a0Social&#8217;s cornicione tastes like bread right out of the oven. \u00a0That&#8217;s a great thing. \u00a0The middle section of the pizza&#8211;where the ingredients, sauce and cheese are&#8211;is also quite good. \u00a0The sauce is generously applied (my preference) and quite tasty.<\/p>\n<p>My Kim also went for Italian, albeit something pasta-based. \u00a0Her choice was <em><strong>cacio y pepe<\/strong><\/em>\u00a0(spaghetti, pepper, butter, Pecorino Romano). \u00a0Though cacio y pepe (which translates simply to pasta and pepper) is an iconic dish of The Eternal City, it&#8217;s really only caught on across the fruited plain in the past few years. \u00a0As with most trendy dishes, cacio y pepe was virtually everywhere. \u00a0Though it&#8217;s a relatively simple dish, it&#8217;s not always prepared well. \u00a0My preference is lots of cheese and lots of pepper (the way it&#8217;s made at <a href=\"https:\/\/www.nmgastronome.com\/?p=27997\" target=\"_blank\" rel=\"noopener\"><strong>M&#8217;Tucci&#8217;s<\/strong><\/a>. \u00a0Like the stereotypical Italian, my Kim prefers an emphasis on pasta, not so much any accompanying sauces or cheeses. \u00a0She enjoyed Social&#8217;s cacio y pepe very much.<\/p>\n<figure id=\"attachment_66976\" aria-describedby=\"caption-attachment-66976\" style=\"width: 598px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-66976 lazyload\" style=\"--smush-placeholder-width: 598px;
