Deli on the Northwest Intersection of Central Avenue and 6th<\/figcaption><\/figure>\n<p>Most foodies have pondered the expession &#8220;<em>Never trust a skinny chef<\/em>.&#8221;\u00a0 Maybe you&#8217;ve even mused if there&#8217;s any truth to it.\u00a0 \u00a0Your line of thinking probably goes something like this: &#8220;<em>If a chef&#8217;s cooking is any good at all, how can that chef possibly resist stuffing himself (or herself)?<\/em>&#8221;\u00a0 With this train of thought, every chef should look like Paul Prudhomme, the brilliant Creole-Louisiana Cajun chef who once weighed more than 500 pounds.\u00a0 Celebrity chef Gordon Ramsay, who&#8217;s not shy about expressing his opinion, called the notion that you shouldn&#8217;t trust a skinny chef &#8220;<em>BS.<\/em>&#8221;\u00a0 To the contrary, the volatile Ramsay believes &#8220;<em>In order to be consistently excellent, a chef must &#8220;stay fit.<\/em>&#8221;<\/p>\n<figure id=\"attachment_68645\" aria-describedby=\"caption-attachment-68645\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-68645 lazyload\" style=\"--smush-placeholder-width: 750px; Deli, we ran into the very fit Chef Marc Qui\u00f1ones who had just finished his morning run.\u00a0 Chef Qui\u00f1ones runs distances some of us get tired driving.\u00a0 He&#8217;s the proverbial high-energy somatype, a dynamic whirling dervish in constant motion.\u00a0 Moreover, he exemplifies a paraphrase of a famous <a href=\"https:\/\/www.amazon.com\/MMM-donuts-Anything-Cartoons-Original-Postcard\/dp\/B085J2ZWK5\" target=\"_blank\" rel=\"noopener\"><strong>Homer Simpson quote<\/strong><\/a>: &#8220;<em>Chef Marc Qui\u00f1ones: Is there nothing he can&#8217;t do?<\/em>&#8221;\u00a0 At least in the culinary arena, the answer to that Jack Handy deep thought is &#8220;<em>no<\/em>.&#8221;\u00a0 Not only was Chef Qui\u00f1ones the founding director of culinary operations and executive chef for the fabulous <a href=\"https:\/\/www.nmgastronome.com\/?p=68341\" target=\"_blank\" rel=\"noopener\"><strong>Ex Novo Brewing Co<\/strong><\/a>., he&#8217;s the mastermind behind the menu at Sammy&#8217;s Cafe &amp; Deli is the more casual restaurant sibling to Ex Novo.\u00a0 Sammy&#8217;s is named for the son of Ex Novo CEO and founder Joel Gregory.\u00a0 The fact that sandwiches is its bailiwick is strictly coincidental (&#8220;sammys&#8221; or &#8220;sammies&#8221; is perhaps the most unpopular nickname for sandwiches).\u00a0 Sammy&#8217;s is located on the Route 66 intersection of Central Avenue and 6th Street.\u00a0 It&#8217;s got a &#8220;<em>cozy coffee shop meets bustling deli<\/em>&#8221; vibe.\u00a0 To the detriment of those of us who enjoy sandwiches at all hours of the day and night, Sammy&#8217;s is open only from 7AM to 1:30PM.<\/p>\n<p>A week before its launch in October, 2024, Chef Qui\u00f1ones gave me a tour of the wing which houses Sammy&#8217;s.\u00a0 My skeptical nature doubted the space would be ready for guests.\u00a0 I should have remembered my adage &#8220;<em>Chef Marc Quinones: Is there nothing he can&#8217;t do<\/em>?&#8221;\u00a0 The space is not only finished, it&#8217;s quite attractive, fully operational and a welcoming milieu.\u00a0 Best of all, the nauseous smell of fresh paint fumes was absent.\u00a0 Instead, the aromas were of freshly brewed coffee and condiments used on the construction of sandwiches.<\/p>\n<figure id=\"attachment_68646\" aria-describedby=\"caption-attachment-68646\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-68646 lazyload\" style=\"--smush-placeholder-width: 750px; and decided to do something about it.\u00a0 \u00a0Like so many of us who pay attention, Peter is a cautious optimist, especially of his beloved Albuquerque downtown.\u00a0 We waxed eloquent about its &#8220;Breaking Bad&#8221; breakfast sandwich.\u00a0 There are only three sections to the menu: All-Day Breakfast, Greens (salads) and Handhelds (sandwiches).\u00a0 Bagels and schmears are sourced from <a href=\"https:\/\/www.sundayabq.com\/\" target=\"_blank\" rel=\"noopener\"><strong>Sunday Bagels<\/strong><\/a> while pastries were sourced intially from the <a href=\"https:\/\/www.nmgastronome.com\/?p=64286\" target=\"_blank\" rel=\"noopener\"><strong>Knead Dough Bar<\/strong><\/a>\u00a0before it closed in 2025.<\/p>\n<p>If there&#8217;s one aroma that has a siren&#8217;s call effect on many of us hapless caffein-addicted souls, it&#8217;s the aroma of coffee being brewed.\u00a0 Sammy&#8217;s coffee comes from <a href=\"https:\/\/www.michaelthomascoffee.com\/\" target=\"_blank\" rel=\"noopener\"><strong>Michael Thomas Coffee Roasters<\/strong><\/a>, a local purveyor of life&#8217;s second most popular beverage (behind water) in the world.\u00a0 Sammy&#8217;s has two coffee artists (barista isn&#8217;t sufficiently descriptive).\u00a0 First is Derek who took excellent care of us when we visited <a href=\"https:\/\/www.nmgastronome.com\/?p=65899\" target=\"_blank\" rel=\"noopener\"><strong>Level Five<\/strong><\/a> .\u00a0 One of Chef Qui\u00f1ones greatest strengths is in recognizing and cultivating talent.\u00a0 \u00a0He recognized Derek&#8217;s strength in customer orientation and brought him onboard as the manager at Sammy&#8217;s.\u00a0 Another exceptionally talented employee is Stefan who probably served me a couple hundred red chile mochas at <a href=\"https:\/\/www.nmgastronome.com\/?p=14575\" target=\"_blank\" rel=\"noopener\"><strong>Cafe Bella<\/strong><\/a>.\u00a0 Seeing Stefan was akin to a family reunion.<\/p>\n<figure id=\"attachment_68648\" aria-describedby=\"caption-attachment-68648\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-68648 lazyload\" style=\"--smush-placeholder-width: 750px; milk shakes were &#8220;<em>frappes<\/em>&#8221; and sodas were &#8220;<em>tonic<\/em>.&#8221;\u00a0 It took me a while to get used to that vernacular&#8211;not to mention the\u00a0non-rhotic (or &#8220;r-dropping&#8221;) pronunciation of words that included the letter &#8220;r.&#8221;<\/p>\n<p>It made me both nostalgic and happy to see a grinder on Sammy&#8217;s menu.\u00a0 <em><strong>Gregory&#8217;s Italian Grinder<\/strong><\/em> (Genoa salami, Prosciutto, spiced ham, lettuce, tomato, pepperoncini, pickled red onion,\u00a0 red wine vinegar and oregano dressing, Provolone cheese on Italian bread) could have passed for one of the hundreds of grinders I enjoyed in the Boston area&#8211;not only in appearance, but in the melange of ingredients coalescing into a delicious whole.\u00a0 Crusty Italian bread is the perfect canvas for an Italian grinder.\u00a0 It&#8217;s nice to know when I&#8217;m craving the flavors of my former home, I can find them at Sammy&#8217;s.<\/p>\n<figure id=\"attachment_68658\" aria-describedby=\"caption-attachment-68658\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-68658 lazyload\" style=\"--smush-placeholder-width: 750px; outstanding.\u00a0 Though sauerkraut is a listed ingredient, the crispy, fresh greenery was more akin to a slaw, a very good one.\u00a0 Russian dressing is a huge plus even though I would never kick Thousand Island dressing off the table.\u00a0 The marble rye is a superb canvas for a superb sandwich.<\/p>\n<p><strong>31 October 2024<\/strong>:\u00a0 Bread is one of the many things my Kim eschews in pursuit of more healthful eating.\u00a0 I don&#8217;t tell her the term &#8220;banh&#8221; in her favorite sandwich (banh mi) actually translates from Vietnamese to &#8220;bread.&#8221;\u00a0 Chef Qui\u00f1ones knew there would be a risk in offering a banh mi on the menu, but he also knew he his version&#8211;called <em><strong>Excuse My Banh Mi<\/strong><\/em> would win over even staunch cynics.\u00a0 His banh mi (Chinese barbecued pork, pickled carrot and daikon, cilantro salad with sweet soy aioli on a crusty baguette) is fantastic.\u00a0 Even though my Kim essentially only ate the sandwich&#8217;s innards, she&#8217;s a believer.<\/p>\n<p>If every restaurant in Albuquerque&#8217;s Downtown was nearly as good as Sammy&#8217;s Cafe &amp;
