U, a Vietnamese Bakery Showcasing Vietnamese Sandwiches and Pastries<\/figcaption><\/figure>\n<p>According to The Tanner Food Group, a a food consultancy focused on international trade, industry preparedness and regulatory activities, there are now nearly 8,000 Vietnamese restaurants stateside.\u00a0 Food Scientist Michael Murdy, founder of <a href=\"https:\/\/robustkitchen.com\/?nab=11\" target=\"_blank\" rel=\"noopener\"><strong>robustkitchen.com<\/strong><\/a> attributes the\u00a0 popularity of Vietnamese food to the &#8220;<em>wide range of flavors and textures associated<\/em>,&#8221; and now offers European sandwiches in addition to Asian sandwiches.\u00a0 Over the years, Lee&#8217;s has expanded beyond California&#8217;s golden borders, including two locations in the Phoenix area.\u00a0 I visited the first of Lee&#8217;s satellites, a <a href=\"https:\/\/www.nmgastronome.com\/?p=46\" target=\"_blank\" rel=\"noopener\"><strong>Chandler store<\/strong><\/a> in 2005 (thank you again, Intel).\u00a0 Just a year later, Albuquerque saw the launch of <a href=\"https:\/\/www.nmgastronome.com\/?p=12167\" target=\"_blank\" rel=\"noopener\"><strong>Coda Bakery<\/strong><\/a>, which specialized in banh mi and Vietnamese pastries.\u00a0 Coincidentally, Coda Bakery was first called &#8220;Lee&#8217;s Bakery&#8221; before changing its name to &#8220;Banh Mi Coda&#8221; and eventually Coda Bakery.\u00a0 In 2025, Coda Bakery was named a semi-finalist in the James Beard Foundation&#8217;s &#8220;Outstanding Bakery&#8221; You entered the Vietnamese sandwich wars.<\/p>\n<p>If you haven&#8217;t yet experienced a banh mi and are wondering what the big deal is about what is essentially a smallish sandwich, the antithesis of those overstuffed\u00a0 behemoths crammed with ingredients, here&#8217;s a Banh Mi 101 primer.\u00a0 \u00a0Banh mi is a Vietnamese sandwich that combines a French baguette with fillings such as pickled vegetables, meats, and fresh herbs.\u00a0 Typical fillings include grilled pork, p\u00e2t\u00e9, pickled carrots, cucumber, cilantro, and mayonnaise. The popularity of banh mi\u2019s stems from its balance of fresh and savory flavors, and its portability as a satisfying, affordable meal (though not as affordable as in Vietnam where you can still get a banh mi for about a dollar).<\/p>\n<figure id=\"attachment_69793\" aria-describedby=\"caption-attachment-69793\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-69793 lazyload\" style=\"--smush-placeholder-width: 850px; You is ensconced in Montgomery Plaza east of the Lovelace Women&#8217;s Hospital.\u00a0 It resides in the former space once occupied by the second instantiation of <a href=\"https:\/\/www.nmgastronome.com\/?p=56949\" target=\"_blank\" rel=\"noopener\"><strong>Tako Ten<\/strong><\/a>.\u00a0 The south-facing eatery is next door to Jimmy John&#8217;s, a national chain which also specializes in sandwiches (albeit not the banh mi).\u00a0 We were curious to see which of the two sandwich shops Duke City diners would visit.\u00a0 During our brief visit to Banh Me &amp; You, we were heartened to see savvy diners spurning Jimmy John&#8217;s.\u00a0 Whether out of curiosity or familiar with the superior deliciousness of the banh mi, those diners seemed preternaturally drawn to the Banh Me&#8217;s pastry case.<\/p>\n<p>Just below an overhead menu are\u00a0 two pastry cases brimming with delicious baked goods.\u00a0 Unlike some other Asian nations, Vietnam is renowned for its desserts.\u00a0 Much of that can be traced back to the French colonial period in Vietnam, the pregenitor for the baguettes in which banh mi are constructed.\u00a0 The pastry cases are like beautifully baked art, a melange of colors, shapes and textures with the common element being deliciousness.\u00a0 It&#8217;s a challenge to study the banh mi menu when sweet temptations beckon.<\/p>\n<figure id=\"attachment_69794\" aria-describedby=\"caption-attachment-69794\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-69794 lazyload\" style=\"--smush-placeholder-width: 850px; You&#8217;s Drinks menu.\u00a0 On that menu you&#8217;ll find fruit teas, milk teas, &#8220;fizzies,&#8221; coconut teas, matcha latte and aviso tea.\u00a0 My Kim liked the <em><strong>passion fruit tea<\/strong><\/em> with boba which she described as refreshing and delicious.\u00a0 My choice was a <em><strong>tropical fizzie.\u00a0\u00a0<\/strong><\/em>Only the requisite tiny umbrella was lacking on this beverage constructed with slices of strawberrries, pineapple and oranges.\u00a0 It&#8217;s not as good as my favorite adult beverage (water), but it&#8217;s quite refreshing.<\/p>\n<p><strong>12 March 2025<\/strong>: There are eight banh mi on the menu.\u00a0 The baguette canvases for the banh mi are baked in-house as are all baked goods.\u00a0 \u00a0Literally, a wall of ovens and fridges line one wall in the kitchen.\u00a0 One of my very favorite banh mi showcases two other French contributions to Vietnam&#8217;s culinary repertoire.\u00a0 That&#8217;s the <em><strong>Banh Mi Pat\u00e9 Jamon<\/strong><\/em>, a cold-cut sandwich\u00a0 constucted with pat\u00e9, jambon (pork loin), jalape\u00f1os, mayonnaise, cucumber, pickled daikon and carrots and cilantro.\u00a0 \u00a0The baguette is characteristically light and airy with a crispy, crumbly exterior and fluffy interior.\u00a0 It&#8217;s the perfect canvas for a near perfect sandwich.\u00a0 The pat\u00e9 (a meat spread made by grinding meat and fat until it is the consistency of paste) is superb!\u00a0 Without pat\u00e9, a cold cut banh mi is incomplete.<\/p>\n<figure id=\"attachment_80781\" aria-describedby=\"caption-attachment-80781\" style=\"width: 788px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-80781 lazyload\" style=\"--smush-placeholder-width: 788px; developed from the fusion of French colonial charcuterie techniques and local Vietnamese ingredients.\u00a0 <span class=\"T286Pc\" data-sfc-cp=\"\" data-sfc-root=\"c\" data-sfc-cb=\"\" data-processed=\"true\">During the colonial period, Vietnamese chefs learned to make p\u00e2t\u00e9, ham, and sausages to satisfy the French palate. After the French left, they continued producing these, adapting recipes to include local ingredients.\u00a0 The outcome is flavor-packed fillings for banh mi.\u00a0 \u00a0An exemplar of this ingenuity and culinary fushion is Banh Mi &amp; You&#8217;s &#8220;<em><strong>Special<\/strong><\/em>,&#8221; number A1 on the menu.\u00a0 This fabulous banh mi includes a trio of cold cuts: ham, pork bologna, pate along with mayonnaise, jalape\u00f1os, cucumbers, pickled carrots, pickled daikon, cilantro and &#8220;meat floss&#8221; (a dried, seasoned and shredded meat (commonly pork) product with a light and fluffy texture and sweet-savory flavor).\u00a0 \u00a0It&#8217;s perhaps the closest you&#8217;ll find among banh mi to a &#8220;Dagwood&#8221; and indeed, they feature a weiner skewered on a stick, crusted with panko, deep-fried and often coated in sugar.\u00a0 This results in a sweet-and-salty flavor profile.\u00a0 Banh Mi &amp; You serves an excellent Korean-style hot dog.\u00a0 You can choose from among four flavor additives&#8211;cheese, spicy, blue heat and spicy lime.\u00a0 The &#8220;spicy&#8221; only slightly tempers the sweet batter.\u00a0 This is a hot dog for diners who don&#8217;t mind mixing flavor profiles, particularly sweet and savory.<\/p>\n<\/div>\n<div style=\"text-align: justify;\">\n<p><strong>12 March 2025<\/strong>: Displayed within the pastry case are diet-devastating desserts that would tempt Job himself.\u00a0 For me, it&#8217;s nigh impossible to resist <em><strong>chocolate croissants<\/strong><\/em> (pain au chocolat), one of the nicest gifts the French left for Vietnam.\u00a0 Pain au chocolat are not crescent shaped like traditional croissants and in fact, are called &#8220;chocolatines&#8221;
