Is it pretentious and haughty to use labels with which English-speaking diners might be impressed even though we don&#8217;t know what they mean?\u00a0 Is it instead great marketing, a clever way to increase the number of guests?\u00a0 \u00a0It&#8217;s something I actually ponder when visiting Italian restaurants.\u00a0 For example, when our friend Greg Hamilton introduced us to &#8220;Joe&#8217;s Restaurant&#8221; in Farmington, I momentarily wondered if it could possibly be good considering its humble name.<\/p>\n<p>Far too many Italian restaurants label themselves as trattorias, osterias and tavolas<em>.\u00a0<\/em> Not knowing what those labels mean, many of us are impressed, believing those terms must signify much more than an &#8220;ordinary&#8221; restaurant.\u00a0 In truth, a <em>trattoria<\/em> is just a type of informal Italian restaurant known for its traditional, home-style, and regional cuisine served in a relaxed, family-like atmosphere).\u00a0 An <em>osteria <\/em>is a simple Italian establishment traditionally focused on serving wine and light snacks, similar to a wine bar or pub.\u00a0 A <em>tavola calda<\/em> (literally &#8220;hot table&#8221;), is an Italian cafeteria-style establishments that offer a variety of pre-made, ready-to-eat hot dishes, similar to a deli or buffet, where customers select their food from a counter).\u00a0 \u00a0Not so impressive now are those terms.<\/p>\n<figure id=\"attachment_71065\" aria-describedby=\"caption-attachment-71065\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-71065 lazyload\" style=\"--smush-placeholder-width: 850px; --smush-placeholder-aspect-ratio: 850\/600;border: 4px solid black; margin-top: 3px; margin-bottom: 3px;\" data-src=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/09\/JoesItalianRestaurant02-scaled.png?lossy=2&strip=1&webp=1\" alt=\"\" width=\"850\" height=\"600\" data-srcset=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/09\/JoesItalianRestaurant02-scaled.png?lossy=2&strip=1&webp=1 2560w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/09\/JoesItalianRestaurant02-300x212.png?lossy=2&strip=1&webp=1 300w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/09\/JoesItalianRestaurant02-1024x723.png?lossy=2&strip=1&webp=1 1024w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/09\/JoesItalianRestaurant02-150x106.png?lossy=2&strip=1&webp=1 150w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/09\/JoesItalianRestaurant02-768x542.png?lossy=2&strip=1&webp=1 768w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/09\/JoesItalianRestaurant02-1536x1085.png?lossy=2&strip=1&webp=1 1536w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/09\/JoesItalianRestaurant02-2048x1446.png?lossy=2&strip=1&webp=1 2048w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/09\/JoesItalianRestaurant02.png?size=384x271&lossy=2&strip=1&webp=1 384w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/09\/JoesItalianRestaurant02.png?size=512x361&lossy=2&strip=1&webp=1 512w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/09\/JoesItalianRestaurant02.png?size=640x452&lossy=2&strip=1&webp=1 640w\" data-sizes=\"(max-width: 850px) 100vw, 850px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" \/><figcaption id=\"caption-attachment-71065\" class=\"wp-caption-text\">Capacious dining room<\/figcaption><\/figure>\n<p>As English-speaking diners are prone to do, we&#8217;re impressed by such labels as trattoria, osteria and tavola calda.\u00a0 Surely, those terms ascribe quality and greatness that an Italian eatery calling itself <em>just<\/em> a restaurant couldn&#8217;t possibly live up to.\u00a0 Normally, even I (ostensibly a fairly savvy guy when it comes to dining) might call into question an Italian eatery that isn&#8217;t prefaced or suffixed by &#8220;one of those fancy Italian terms.&#8221;\u00a0 What diffused that fallacious reasoning was the fact that our friend Greg spoke so highly of it.<\/p>\n<p>Greg is not only one of the most genuine and generous people we know, he&#8217;s been a very successful restaurant impresario among all the entrepreneurial ventures in which he&#8217;s been involved.\u00a0 \u00a0He knows his stuff!\u00a0 To me, Greg and his brother Tom are like the 1970s slogan for the brokerage E. F. Hutton: &#8220;<em>When E. F. Hutton speaks, people listen<\/em>.&#8221;\u00a0 Greg and Tom are like E. F. Hutton to me.\u00a0\u00a0With full confidence in Greg&#8217;s taste buds, we visited Joe&#8217;s Restaurant on a rare (for the 2025 monsoon season) evening in which torrential rain pelted the parched earth and lightning illuminated ebony skies.<\/p>\n<figure id=\"attachment_71066\" aria-describedby=\"caption-attachment-71066\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-71066 lazyload\" style=\"--smush-placeholder-width: 850px; restaurant.\u00a0 A red and white checkered pattern adorns each tablecloth.\u00a0 Yes, that&#8217;s a stereotype, but quite often that stereotype speaks of delicious food and generous potions at a reasonable price.<\/p>\n<p>Joe&#8217;s Restaurant is an eponymous eatery founded by Joe Haliti, an Albanian immigrant (to New Jersey) who learned to cook from his father.\u00a0 He owns a number of restaurants in Texas where he&#8217;s earned a reputation as a community leader, serving more than 70,000 meals to hospital workers and first responders.\u00a0 That bodes well for Farmington.\u00a0 Joe wasn&#8217;t on the premises when we visited, but his staff spoke very highly of him.\u00a0 So did other diners with whom we spoke as they stopped by our table to ogle The Dude, our debonair dachshund and devoted service dog.\u00a0 Joe&#8217;s specializes in southern Italian cooking and also makes brick-oven New York-style pizza, homemade pasta and chicken, seafood and veal dishes.\u00a0 New Mexico law doesn&#8217;t allow the restaurant to serve alcohol due to proximity to a church, but Joe&#8217;s allows guests to bring in your their beer or wine.<\/p>\n<figure id=\"attachment_71067\" aria-describedby=\"caption-attachment-71067\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-71067 lazyload\" style=\"--smush-placeholder-width: 850px; taste.\u00a0 The calamari was served with a peppery, acidic (in the best possible way) red sauce.\u00a0 Every bit of this appetizer was first-rate and earns my highest recommendation.<\/p>\n<p>As we perused the menu, our gracious server ferried over a basket of <em><strong>garlic bread knots<\/strong><\/em> and asked what type of salad dressing we would like to have with our salad.\u00a0 Both the bread and the salad are complimentary (when is the last time you experience that).\u00a0 The bread knots are yeasty and fluffy with just a modicum of garlic, just enough to provide a delightfully nuanced flavor.\u00a0 We took three of them home and enjoyed them almost as much a day later.\u00a0 Our server took it as a challenge when I asked her to bring me &#8220;<em>as much blue cheese as you can carry<\/em>&#8221; for my salad.\u00a0 Yes, I could probably have a blue cheese dressing salad.<\/p>\n<figure id=\"attachment_71069\" aria-describedby=\"caption-attachment-71069\" style=\"width: 764px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-71069 lazyload\" style=\"--smush-placeholder-width: 764px; That&#8217;s a mortal sin!\u00a0 Before ordering the <em><strong>veal\u00a0 Marsala<\/strong><\/em> (saut\u00e9ed fresh mushrooms in a marsala wine sauce over your choice of pasta), Greg emphasized that the chef needed to pound the veal thinly.\u00a0 He chose spaghetti for his pasta.\u00a0 As with the calamari, it&#8217;s been a very long time since I&#8217;ve savored veal Marsala this tasty (though shamefully I didn&#8217;t photograph it).\u00a0 \u00a0Even though the sliced, boneless veal cutlets weren&#8217;t pounded as thinly as Greg requested, these pan-fried gems were as tender as a bird&#8217;s heart.\u00a0 The distinctive flavor of Marsala wine (a fortified wine from Sicily) gives this dish a distinct flavor.\u00a0 Marsala wine is simmered with such ingredients as tock, shallots, garlic and mushrooms which create a sweet, almost caramelized flavor balanced by earthy mushrooms.\u00a0 Indicative of just what a great guy he is, Greg let me take home what he couldn&#8217;t finish (did I mention portions are generous).<\/p>\n<p>As is my approach at new restaurants we visit, I scoured the multi-page menu for a dish I&#8217;d never or have rarely had.\u00a0 Though the menu surprisingly had several such dishes, my choice was christened &#8220;<em><strong>Diana<\/strong><\/em>&#8221; (saut\u00e9ed fresh mushrooms and artichoke hearts with a special sherry wine pink sauce over your choice of pasta).\u00a0 My sister-in-law Diana Calabrese Gardu\u00f1o would have been proud.\u00a0 If you don&#8217;t see &#8220;Diana&#8221; on a restaurant&#8217;s menu, that&#8217;s because it&#8217;s a regional- even restaurant-specific dish.\u00a0 There is no classic dish named Diana served throughout Italy.\u00a0 Like Greg, I reiterated the need for pounding the veal, asking our server to &#8220;<em>pound it within an inch of its life; means &#8220;<em>pick me up<\/em>&#8221; or &#8220;<em>cheer me up.<\/em>&#8221; The name comes from the phrase tirami su, which literally breaks down to tira (&#8220;pull&#8221;), mi (&#8220;me&#8221;), and su (&#8220;up&#8221;).\u00a0 Boy does a great tiramisu have that effect (both picking me up and cheering me up) on me.\u00a0 A great tiramisu\u00a0 is chracterized by a light, yet rich, layers of espresso-soaked ladyfingers interspersed with a smoth, creamy mascarpone and egg-yolk cream, all finished with a dusting of cocoa powder.\u00a0 Ideally, tiramisu balances\u00a0the bitter coffee flavor with the sweet, tangy cream, creating a luxurious, airyl texture that melts in your mouth.<span class=\"\" data-wiz-rootname=\"ohfaMd\" data-processed=\"true\"><span class=\"vKEkVd\" data-animation-atomic=\"\" data-processed=\"true\">\u00a0 \u00a0Mission accomplished, Joe&#8217;s.<\/span><\/span><\/p>\n<figure id=\"attachment_71070\" aria-describedby=\"caption-attachment-71070\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-71070 lazyload\" style=\"--smush-placeholder-width: 850px;
