brava translates from Spanish and Italian to &#8220;well done,&#8221; &#8220;excellent,&#8221; or &#8220;good.&#8221; Brava is often used to praise a female performer, often in conjunction with or preceding requesting an encore for a performance well executed.\u00a0 Stemming from Italian and Spanish, brava can also be used to mean brave, angry or fierce.\u00a0 I&#8217;m one of those Hispanic gents who expects&#8230;make that demands, salsa to be fierce and angry.\u00a0 I want my salsa to bite me back, to reenforce through its potency and piquancy that pain is a flavor.\u00a0 That&#8217;s especially true when a Mexican restaurant sports the audacious name &#8220;Salsa Brava.&#8221;<\/p>\n<figure id=\"attachment_71794\" aria-describedby=\"caption-attachment-71794\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-71794 lazyload\" style=\"--smush-placeholder-width: 850px; award-winner in Flagstaff.\u00a0 It&#8217;s been earning &#8220;best Mexican&#8221; and &#8220;best salsa&#8221; accolades for the entirety of its nearly four decades years serving &#8220;The City of Seven Wonders.&#8221;\u00a0 My hopes were that one of those seven wonders was indeed Salsa Brava&#8217;s eponymous salsa.\u00a0 Make that salsas.\u00a0 Shortly after you&#8217;re seated, your server will ferry to your table three salsas and a basket of chips.\u00a0 The three salsas are a classic <em><strong>pico de gallo<\/strong><\/em> (mild), <em><strong>fire roasted-tomato chipotle<\/strong><\/em> (medium), and a <em><strong>pineapple\/habanero<\/strong><\/em> (spicy).\u00a0 Salsa is complimentary, increasingly a rarity among Mexican restaurants.\u00a0 Though my asbestos-lined taste buds didn&#8217;t find any of the three salsas especially fiery, they were all super delicious.\u00a0 The pineapple\/habanero was especially good, an interplay between tropical sweetness and fruity heat with tropical nodes.\u00a0 The fire-roasted tomato chipotle salsa was also superb with a sublime smokiness!\u00a0 Salsa Brava&#8217;s salsas are handcrafted daily.\u00a0 More than 700 pounds of tomatoes a week are used in the creation of these terrific salsas.<\/p>\n<figure id=\"attachment_71795\" aria-describedby=\"caption-attachment-71795\" style=\"width: 600px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-71795 lazyload\" style=\"--smush-placeholder-width: 600px; Salsa Brava has continued to be recognized both by the local and national cooking communities for the last 38 years.\u00a0 The front-facing facade depicts whom I surmise to be La Llorona, the notorious weeping woman of Mexican mythology.<\/p>\n<p>Salsa Brava has twice been featured on the Food Network&#8217;s <a class=\"GI370e\" href=\"https:\/\/www.google.com\/search?q=Diners%2C+Drive-Ins+and+Dives&amp;oq=when+was+salsa+brava+on+diners%2C+d&amp;gs_lcrp=EgZjaHJvbWUqBwgBECEYoAEyBggAEEUYOTIHCAEQIRigATIHCAIQIRigATIHCAMQIRigATIHCAQQIRiPAjIHCAUQIRiPAjIHCAYQIRiPAtIBCDkyMjRqMGo3qAIAsAIA&amp;sourceid=chrome&amp;ie=UTF-8&amp;mstk=AUtExfB90xl7ZJtgh1nZ52k3gqbf7hfuFdBXdXTqqJZ-BfLILdhWCRw3n9cFOIAJx_lUd0gYyLvR5FksN1EqGdwQV8BdFLtOxWEcZ7PfGM3F93T5gpI40dMJo9K2Xzhw5ytXbvwgTCeRwg4ZHSfPR8C7FAsQtDHJ60lfINH0mbbhTZp4YwOSgKHLe4CeLlSRhFRjxQqTo7GqJLq7Bg6ZE-La1IVOJw&amp;csui=3&amp;ved=2ahUKEwjm0dOphtWRAxXIFTQIHYFzB3oQgK4QegQIAhAB\" data-wiz-uids=\"bNJu6e_1b\" data-ved=\"2ahUKEwjm0dOphtWRAxXIFTQIHYFzB3oQgK4QegQIAhAB\" data-hveid=\"CAIQAQ\" data-processed=\"true\"><strong>Diners, Drive-Ins and Dives<\/strong>.<\/a> Its first appearance was on Season 5, Episode 5\u00a0 in 2009 when the show&#8217;s theme was &#8220;Return to Route 66.&#8221;\u00a0 \u00a0Salsa Brava was also featured in a 2014 episode entitled &#8220;Real Deal Mexican.&#8221;\u00a0 \u00a0Host Guy Fieri appreciated Chef Conley&#8217;s cuisine so much that he also visited Fat Olives.\u00a0 In a section titled &#8220;What Guy Ate,&#8221; Salsa Brava&#8217;s menu pays homage to the two dishes Fieri enjoyed during his visit: stuffed sopaipilla and a Navajo taco.\u00a0 Chef Conley has since become a recurring figure in the &#8220;Guy Fieri universe,&#8221; and &#8220;chile&#8221; though out server couldn&#8217;t tell us where the chile was sourced.\u00a0 Carnitas, burritos, enchiladas, tacos and chimichangas are featured fare.\u00a0 Despite the fierceness of the restaurant&#8217;s name, not every dish is sauced for those of us who can eat lava straight from a volcano.\u00a0 My Kim&#8217;s choice, for example, had the piquancy of ketchup.\u00a0 That was the <em><strong>classic carnitas plate<\/strong><\/em> (slow roasted pork glazed in it&#8217;s own juices, accented with fresh citrus orange with a side of guacamole and hand stretched flour tortillas).\u00a0 The fresh citrus accent was reminiscent of the marinade used on cochinita pibil, one of the very best dishes to come out of Mexico.\u00a0 Only the tortillas were a disappointment.\u00a0 &#8220;Hand-stretched&#8221; must mean stretched to the thinness of tissue paper.\u00a0 There was no way we could use those tortillas to fashion tortilla spoons with which to scoop up beans and rice.<\/p>\n<p>It certainly wasn&#8217;t because of my admiration for Food Network glitterati Guy Fieri that I ordered the <em><strong>stuffed sopaipilla<\/strong><\/em> (traditional frybread \/ house pinto beans \/ smoked chicken \/ topped with cilantro cream sauce \/ cilantro and onion blend \/ pickled red onion \/ lime cr\u00e8me \/ sour cream).\u00a0 \u00a0As an unabashed New Mexican, it galled me to see the sopaipilla described as &#8220;frybread.&#8221;\u00a0 Sure, it is frybread, but that&#8217;s a term more closely associated with Native Americans.\u00a0 Nor was the sopaipilla particularly fluffy and flaky as those prepared by savvy sopaipilla savants in the Land of Enchantment.\u00a0 It had a texture somewhat reminiscent of pizza dough.\u00a0 Not that this stuffed sopaipilla wasn&#8217;t delicious.\u00a0 It had much to like.\u00a0 The smoked chicken had the texture and moistnesx of a stewed chicken but with smoky notes.\u00a0 Also quite excellent was the cilantro cream sauce and the pickled red onion.\u00a0 Cilantro cream sauce may never replace red and green chile in my book, but in a pinch it will do.<\/p>\n<div class=\"modSections\" role=\"list\">\n<figure id=\"attachment_71797\" aria-describedby=\"caption-attachment-71797\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-71797 lazyload\" style=\"--smush-placeholder-width: 850px;
