This program originally aired in 2002, also the year a companion book titled <a href=\"https:\/\/www.amazon.com\/Sandwiches-That-You-Will-Like\/dp\/0971308020\" target=\"_blank\" rel=\"noopener\"><strong>Sandwiches That You Will Like<\/strong><\/a> was published.\u00a0 The book was written by fabulous food author Becky Mercuri.<\/p>\n<figure id=\"attachment_71810\" aria-describedby=\"caption-attachment-71810\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-71810 lazyload\" style=\"--smush-placeholder-width: 850px; from <a href=\"https:\/\/www.schwabls.com\/\" target=\"_blank\" rel=\"noopener\"><strong>Schwabl&#8217;s<\/strong><\/a> in West Seneca, New York, just outside of Buffalo.\u00a0 Schwabl&#8217;s claims to have invented the beef on weck.\u00a0 The segment on the beef on weck featured Becky Mercuri, one of my very favorite food authors.\u00a0 Becky&#8217;s enthusiasm for the sandwich was so heartfelt and genuine that I wanted to visit Buffalo to sample one (or ten) of them.\u00a0 Moreover, I hoped to share a few beef on weck sandwiches with Becky.<\/p>\n<figure id=\"attachment_71811\" aria-describedby=\"caption-attachment-71811\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-71811 lazyload\" style=\"--smush-placeholder-width: 850px; roll, topped with coarse salt and caraway seeds, and usually spread with pungent horseradish and dipped in beef\u00a0 au jus. It&#8217;s a regional staple, known for its soft interior and crusty roll, distinguishing it from other roast beef sandwiches by the unique seeded and salted roll.\u00a0 Alas, I was destined to make it well into my forties without ever having sampled the sandwich which dominated my curiosity.\u00a0 Wherever we traveled I scoured restaurant menus online to see if perhaps a Buffalo transplant had a restaurant in which the beef on weck was on the menu.<\/p>\n<p>In 2025, my Indiana Jones-like quest would come to an end in Glendale, Arizona.\u00a0 Pullano&#8217;s Wings &amp; Pizza not only listed the beef on weck on its menu, it did a darned good job describing what it is.\u00a0 Even better, our server was a Buffalo transplant who raved about its authenticity.\u00a0 Although you can&#8217;t find kummelweck in any Phoenix area bakery, she explained the process for converting an otherwise ordinary bread roll into a kummelweck roll.\u00a0 It&#8217;s a process that involves an egg wash followed by the application of carraway seeds and coarse salt.\u00a0 She told us Buffalo transplants get together for Buffalo Bills football games, ordering all the pepperoni pizza, Buffalo chicken wings and beef on weck they can eat.\u00a0 If you&#8217;ve never had Buffalo-style pizza, Pullano&#8217;s is a good place to try it.\u00a0 One of its distinguishing features is &#8220;cupped&#8221; pepperoni.<\/p>\n<figure id=\"attachment_71812\" aria-describedby=\"caption-attachment-71812\" style=\"width: 666px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-71812 lazyload\" style=\"--smush-placeholder-width: 666px; --smush-placeholder-aspect-ratio: 666\/800;border: 4px solid black; margin-top: 3px; margin-bottom: 3px;\" data-src=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/12\/Puliano04-scaled.png?lossy=2&strip=1&webp=1\" alt=\"\" width=\"666\" height=\"800\" data-srcset=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/12\/Puliano04-scaled.png?lossy=2&strip=1&webp=1 2130w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/12\/Puliano04-250x300.png?lossy=2&strip=1&webp=1 250w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/12\/Puliano04-852x1024.png?lossy=2&strip=1&webp=1 852w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/12\/Puliano04-125x150.png?lossy=2&strip=1&webp=1 125w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/12\/Puliano04-768x923.png?lossy=2&strip=1&webp=1 768w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/12\/Puliano04-1278x1536.png?lossy=2&strip=1&webp=1 1278w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/12\/Puliano04-1704x2048.png?lossy=2&strip=1&webp=1 1704w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/12\/Puliano04.png?size=384x461&lossy=2&strip=1&webp=1 384w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/12\/Puliano04.png?size=512x615&lossy=2&strip=1&webp=1 512w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2025\/12\/Puliano04.png?size=640x769&lossy=2&strip=1&webp=1 640w\" data-sizes=\"(max-width: 666px) 100vw, 666px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" \/><figcaption id=\"caption-attachment-71812\" class=\"wp-caption-text\">Cheese Sticks<\/figcaption><\/figure>\n<p>Pullano&#8217;s, it turns out, has been serving the Valley of the Sun since 1979.\u00a0 The restaurant started out in Phoenix, but relocated in 1987 to Glendale.\u00a0 Pullano&#8217;s is certainly not one of those obscure and hidden gems only regulars know about.\u00a0 Sure, it&#8217;s got its regulars, but newcomers continue to pour in thanks to a four-star review from the Arizona Republic.\u00a0 Channel 3 viewers also voted Pullano&#8217;s &#8220;best mom and pop Italian restaurant.&#8221;\u00a0 It&#8217;s not all about wings and pizza at this terrific restaurant.\u00a0 The <a href=\"https:\/\/pullanos.com\/pdf\/menu_250702.pdf\" target=\"_blank\" rel=\"noopener\"><strong>menu<\/strong><\/a> includes a phalanx of sumptuous starters, some o the most intriguing salads in the Valley, superb Subs, behemoth burgers, shrimp and wings, pizza (including a number of specialty pies), stromboli and calzones, Italian entrees and desserts.<\/p>\n<p>I had so hoped someone in our party of four would order a pepperoni pizza, but that&#8217;s a pizza for another day, another visit.\u00a0 My brother-in-law Tim and his comely bride Lola along with my Kim, all Chicago area transplants, had <em><strong>Italian beef sandwiches<\/strong><\/em>, a Chicago area staple. Ask any Chicago transplant in Albuquerque or anywhere else to list the five things they miss most about the Windy City and it\u2019s a good bet the list will include Italian beef sandwiches, a staple in Chicago. Citizens of the Toddlin\u2019 Town are almost as passionate about this sloppy sandwich as they are Da Bears. Chicagoans grow up worshiping at high counters on which they prop their elbows as they consume Italian beef sandwiches\u2013sometimes because the restaurant has no tables, but more often than not, because no matter how careful they are, they\u2019re bound to spill shards of beef, bits of giardiniera and drippings of spice-laden beef gravy onto their clothing. An Italian beef sandwich is made with roasted sirloin tip which is massaged with a blend of herbs and spices (oregano, black pepper, basil and more) before roasting. The beef is sliced Nicole Ritchie thin and is so tender it shreds into pieces. (Bella Bella) Just Like Buffalo, But Better! Loaded With Tender Beef Marinated In Our Delicious Homemade Italian Beef Juice Served On Our Homemade Kimelweck Roll With Caraway Seeds And Coarse Salt Baked On Top. Served With Our Homemade Horseradish Sauce And Au Jus. Served With Fries. A Buffalo Staple. Try It With A Side Of Giardiniera (Jard-en-air-a) Delicious<\/em>!!&#8221;\u00a0 Until I make it to Schwabl&#8217;s, I won&#8217;t know if this claim is audacious bragadoccio or if this sandwich really beats Buffalo&#8217;s best.\u00a0 I do know I thoroughly enjoyed it.\u00a0 Admittedly the horseradish could have had more napalm, but that&#8217;s just this fire-eater talking.\u00a0 The giardiniera does have plenty of bite and the roast beef is superb.\u00a0 Thanks to the coarse salt on the kummelweck, I was grateful the au jus wasn&#8217;t overly salty.<\/p>\n<p>There are only four items on the dessert menu, one of which is a pullookie which the menu describes thus: &#8220;<em>Pullookie. Oh Yea Baby! Chocolate Chip, White Chocolate Chip, Macadamia Nut Cookie Dough, Slightly Baked In A Pizza Pan Topped With Vanilla Bean Ice Cream.
