gastronomes have come to know as “umami.” Umami is a Japanese word which translates to “delicious taste.” Umami is a rich, savory, meaty flavor found in such foods as aged cheeses, cured meats, mushrooms and soy sauce. It’s not often discerned in fried chicken.

My Kim ordered a six piece “Chickenjoy” This gravy is known for its distinct umami flavor, often described as having hints of beef and chicken, despite being a side dish for the latter. Unlike some chain restaurant gravy which has the viscosity of peanut butter, this gravy is an easy pour.

<img decoding="async" class="wp-image-72042 lazyload" style="--smush-placeholder-width: 692px;
