It occupies the very high turnover space which most recently housed <a href=\"https:\/\/www.nmgastronome.com\/?p=59681\" target=\"_blank\" rel=\"noopener\"><strong>Whiptail<\/strong><\/a> and before that <a href=\"https:\/\/www.nmgastronome.com\/?p=127\" target=\"_blank\" rel=\"noopener\"><strong>Banana Leaf<\/strong><\/a>.\u00a0 \u00a0Visionaries (residents of Rio Rancho) have long surmised that one of the reasons tenants don&#8217;t last long at the space is because there is no direct entrance or egress.\u00a0 in fact, if you didn&#8217;t previously visit previous tenants, you&#8217;ll probably be confused as to how to get to Las Villas.\u00a0 Most of us just drive through the <a href=\"https:\/\/www.nmgastronome.com\/?p=416\" target=\"_blank\" rel=\"noopener\"><strong>Twisters<\/strong><\/a> parking lot.\u00a0 You won&#8217;t see many vestiges of Whiptail though the space&#8217;s configuration is unchanged.\u00a0 Table seating is at floor level while booth seating is in an elevated platform.<\/p>\n<figure id=\"attachment_74592\" aria-describedby=\"caption-attachment-74592\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-74592 lazyload\" style=\"--smush-placeholder-width: 850px; --smush-placeholder-aspect-ratio: 850\/530;border: 4px solid black; margin-top: 3px; margin-bottom: 3px;\" data-src=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/02\/LasVillasTaqueria03.png?lossy=2&strip=1&webp=1\" alt=\"\" width=\"850\" height=\"530\" data-srcset=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/02\/LasVillasTaqueria03.png?lossy=2&strip=1&webp=1 640w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/02\/LasVillasTaqueria03-300x187.png?lossy=2&strip=1&webp=1 300w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/02\/LasVillasTaqueria03-150x94.png?lossy=2&strip=1&webp=1 150w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/02\/LasVillasTaqueria03.png?size=510x318&lossy=2&strip=1&webp=1 510w\" data-sizes=\"(max-width: 850px) 100vw, 850px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" \/><figcaption id=\"caption-attachment-74592\" class=\"wp-caption-text\">Chips and Salsa<\/figcaption><\/figure>\n<p>Step inside and you\u2019ll quickly espy a colorful array of Mexican papel picado banners (traditional folk art banners resembling decorative handkerchiefs) hanging from the ceiling.\u00a0 A few framed items hang on the restaurant&#8217;s walls, but honestly, Las Villas won&#8217;t win many awards for its aesthetics.\u00a0 It might, however, earn accolades a plenty for its food.\u00a0 Several of the usual suspects adorn the menu: tacos, burritos, quesadillas and tortas, but you&#8217;ll also espy such unique menu items as &#8220;<em>alambre<\/em>&#8221; (grilled meat (usually steak) chopped and mixed with bacon, onions, bell peppers, and topped with melted cheese), &#8220;<em>mulitas<\/em>&#8221; (essentially a &#8220;tortilla sandwich&#8221; made with two corn tortillas filled with cheese, meat (such as carne asada, chorizo, or carnitas), and other toppings such as onions and cilantro, then grilled until crispy and the cheese is melted), and &#8220;<em>vampiros<\/em>&#8221; (a cross between a taco, tostada, and quesadilla. Vampiros feature a crispy, toasted tortilla (often corn) covered in melted cheese\u2014typically Oaxaca\u2014and topped with meat such as carne asada, adobada, or birria).<\/p>\n<figure id=\"attachment_77139\" aria-describedby=\"caption-attachment-77139\" style=\"width: 782px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-77139 lazyload\" style=\"--smush-placeholder-width: 782px; --smush-placeholder-aspect-ratio: 850\/618;border: 4px solid black; margin-top: 3px; margin-bottom: 3px;\" data-src=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/02\/LasVillasTaqueria06.png?lossy=2&strip=1&webp=1\" alt=\"\" width=\"850\" height=\"618\" data-srcset=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/02\/LasVillasTaqueria06.png?lossy=2&strip=1&webp=1 640w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/02\/LasVillasTaqueria06-300x218.png?lossy=2&strip=1&webp=1 300w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/02\/LasVillasTaqueria06-150x109.png?lossy=2&strip=1&webp=1 150w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/02\/LasVillasTaqueria06.png?size=510x371&lossy=2&strip=1&webp=1 510w\" data-sizes=\"(max-width: 850px) 100vw, 850px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" \/><figcaption id=\"caption-attachment-74594\" class=\"wp-caption-text\">Two Barbacoa Tacos<\/figcaption><\/figure>\n<p>I&#8217;ve visited many a taqueria in which I haven&#8217;t had a single taco.\u00a0 That wouldn&#8217;t happen at Las Villas.\u00a0 Not when tacos are constructed with your choice of al pastor, carne asada, barbacoa, pollo, nopal or vegetal.\u00a0 You can also request tacos de alambre where you&#8217;ll be treated to a melange of meats, cheese and condiments.\u00a0 Alambre may also be a Spanish term for wire, referring to an uninsulated, long piece of metal commonly used for tying, fencing, or construction, but there&#8217;s nothing wiry about tacos constructed with this meat mix.<\/p>\n<p><strong>13 February 2026<\/strong>: In recent years, thanks mostly to <a href=\"https:\/\/www.nmgastronome.com\/?p=54217\" target=\"_blank\" rel=\"noopener\"><strong>No Te Rajes<\/strong><\/a> (my favorite food truck in the world), the first item I typically order (if it&#8217;s available) during our first visit to a Mexican restaurant is a torta constructed with barbacoa.\u00a0 All too often I&#8217;ve been left disappointed because the barbacoa just doesn&#8217;t measure up to No Te Raje&#8217;s version.\u00a0 At Las Villas, this quandary was remedied by ordering two <em><strong>tacos de barbacoa<\/strong><\/em>.\u00a0 Bill described the barbacoa as &#8220;<em>so meaty<\/em>.&#8221;\u00a0 Indeed, the beef cheek meat\u00a0 is rich and unctuous.\u00a0 You&#8217;ll appreciate the onions and cilantro for tempering that richness.\u00a0 Salsa would have done so even more, but the barbacoa is so unbelievably delicious that I couldn&#8217;t think of altering it further.\u00a0 The corn tortillas have a pronounced flavor of fresh corn.\u00a0 The tortillas are just thick enough that you don&#8217;t need two of them to hold in the meat.<\/p>\n<figure id=\"attachment_74596\" aria-describedby=\"caption-attachment-74596\" style=\"width: 681px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-74596 lazyload\" style=\"--smush-placeholder-width: 681px; made with two corn tortillas filled with cheese, meat (such as carne asada, chorizo, or carnitas), and other toppings such as onions and cilantro, then grilled until crispy and the cheese is melted.\u00a0 The chosen protein for my <em><strong>mulita<\/strong><\/em> was <em><strong>al pastor<\/strong><\/em>, magnificent pork marinated in dried chilies, spices, achiote, and pineapple.\u00a0 Rarely have I experienced al pastor this good.\u00a0 It was truly &#8220;una maravilla,&#8221; a delicious marvel that balanced sweet and savory notes in perfect harmony.\u00a0 This tortilla sandwich also included lettuce (just a little, unlike American sandwiches), onions, melted cheese, cilantro, salsa and guacamole. The melted cheese lent its salty, creamy qualities while the pineapple provided a much-appreciated tanginess.\u00a0 This is an outstanding (in all caps) sandwich!<\/p>\n<p><strong>23 April 2026<\/strong>: It&#8217;s bad enough that pinto beans (frijoles)&#8211;despite being one of the two official state vegetables of the great state of New Mexico&#8211;are a source of sophomoric humor.\u00a0 The groundbreaking Mel Brooks comedy Blazing Saddles may best be remembered by the &#8220;campfire symphony&#8221; of outlaws enjoying a pot of beans.\u00a0 Predictably, the campfire victuals quickly devolves into a chorus of belches, burps, and farts that goes on for nearly a minute.\u00a0 The memorable scene is onsidered the first time there was an audible fart in American cinema, or at least the first film to popularize the joke.\u00a0 If it sounds like potentially embarassing bodily emanations are a reason not to order beans at a restaurant, \u00a0I&#8217;ll give you a reason TO order them.<\/p>\n<figure id=\"attachment_80320\" aria-describedby=\"caption-attachment-80320\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-80320 lazyload\" style=\"--smush-placeholder-width: 850px; <em><strong>charro beans<\/strong><\/em>.\u00a0 Yeah, I know you&#8217;ve probably had charro beans before.\u00a0 More than likely they left you much more gaseous than impressed.\u00a0 These charro beans are outstanding!\u00a0 Picture a serving of pinto beans simmered with carne asada, Mexican wienies and onion seasoned to absolute perfection.\u00a0 Only one thing could make them better (I&#8217;ll suggest this).\u00a0 That&#8217;s including a flour tortilla with which to fashion New Mexico &#8220;spoons&#8221; in which to spoon out bite-size portions of the charro beans.\u00a0 No matter what else I may order during future visits, I can&#8217;t imagine not ordering charro beans at Las Villas&#8217;.<\/p>\n<p><strong>11 March 2026<\/strong>:\u00a0 When she married a New Mexican, my Kim didn&#8217;t know she&#8217;d be cooking a pot of beans with some regularity.\u00a0 Pinto beans the way her son likes them is one of the first things my mom taught my Kim.\u00a0 She didn&#8217;t teach my Kim how to create a quesadilla, probably surmising that this popular tortilla &#8220;sandwich&#8221; Las Villas had its grand opening on 11 October 2025.
