Fierce rivalries exist among the five branches. We&#8217;ve been known to throw down with brothers-in-arms in defense of our particular branch. During a visit to <a href=\"https:\/\/www.nmgastronome.com\/?p=134\" target=\"_blank\" rel=\"noopener\"><strong>Chope&#8217;s<\/strong><\/a> in La Mesa in 2025, we couldn&#8217;t help but notice the burly, leather-clad biker gang occupying a corner of the restaurant.\u00a0 While other diners avoided that corner, I recognized the tatoos sported by several of the gang&#8217;s members and went over to thank them for their service.\u00a0 Grateful for my sincerity, they asked if I, too, served.\u00a0 My proud admission to being an Air Force retiree met with affable persiflage about the Air Force being a country club, not a military branch.\u00a0 I retaliated with a comment about having been too smart to be recruited by the Marines.\u00a0 Rather than thrashing me mercilessly, they invited me to join in their war stories. Almost invariably that&#8217;s what my comrades-in-arms do when meeting someone in our exclusive fraternity.<\/p>\n<p>Upon learning of a new restaurant in Albuquerque&#8217;s south valley about 30 miles south of our Rio Rancho home, my initial reaction was a dismissal&#8211;it&#8217;s too far to go for more tacos.\u00a0 Then I read that the restaurant, Al Trompo Mexican Grill, is owned by a former Marine and his son, also a Marine.\u00a0 To me, that&#8217;s like the Armed Forces seal of approval.\u00a0 You can trust former military members to emphasize quality.\u00a0 It&#8217;s just the way we&#8217;re wired.\u00a0 There&#8217;s no doubt we&#8217;d not only have a great meal, but we&#8217;d be treated with respect and kindness.\u00a0 Sure enough, as we were perusing the menu, Al Trompo&#8217;s genial owner came over and we confabbed about our time in the service.\u00a0 His experiences at Marine boot camp were dissimilar to mine&#8211;mine like a grade school P.E. class, his like the Bataan Death March without all the death.<\/p>\n<figure id=\"attachment_82383\" aria-describedby=\"caption-attachment-82383\" style=\"width: 761px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-82383 lazyload\" style=\"--smush-placeholder-width: 761px; --smush-placeholder-aspect-ratio: 761\/800;border: 4px solid black; margin-top: 3px; margin-bottom: 3px;\" data-src=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo03.png?lossy=2&strip=1&webp=1\" alt=\"\" width=\"761\" height=\"800\" data-srcset=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo03.png?lossy=2&strip=1&webp=1 609w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo03-285x300.png?lossy=2&strip=1&webp=1 285w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo03-143x150.png?lossy=2&strip=1&webp=1 143w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo03.png?size=456x479&lossy=2&strip=1&webp=1 456w\" data-sizes=\"(max-width: 761px) 100vw, 761px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" \/><figcaption id=\"caption-attachment-82383\" class=\"wp-caption-text\">Tortillas are Made on the Premises<\/figcaption><\/figure>\n<p>We had some concerns about the construction project on Rio Bravo and were grateful that our exit (south on Isleta) didn&#8217;t require us to traverse too far west on the four-lane highway strewn with New Mexico&#8217;s unoffical state flower, the orange barrel.\u00a0 Al Trompo is within Whopper wafting distance of Burger King.\u00a0 \u00a0Al Trompo occupies the space which previously housed Perico&#8217;s Tacos &amp; Burritos.\u00a0 The space is commodious and comfortable though much of the seating is of the high-top variety.\u00a0 A number of flat-screen televisions are positioned throughout the restaurant for the rare diners who aren&#8217;t fixated on their ubiquitous phones.<\/p>\n<p>Texas Monthly defines a &#8220;trompo&#8221; as &#8220;<em>a large vertical rotating spit used to cook marinated pork for Tacos al Pastor. Translating to &#8220;spinning top&#8221; in English, the device and cooking technique were adapted by Mexican cooks in the 1920s from Lebanese shawarma<\/em>.&#8221;\u00a0 \u00a0The anatomy of a trompo consists of several elements: meat, stack, toppers and cooking:<\/p>\n<ul>\n<li><strong>The Meat<\/strong>: Thin slices of pork are marinated in a blend of dried chiles (such as guajillo), achiote paste, garlic, and spices.<\/li>\n<li><strong>The Stack<\/strong>: The marinated meat is stacked tightly onto the vertical rotisserie, creating an upside-down cone shape.<\/li>\n<li><strong>The Toppers<\/strong>: A whole onion and a fresh pineapple are typically placed at the very top of the spit.<\/li>\n<li><strong>The Cooking<\/strong>: The spit rotates slowly in front of a gas or charcoal flame. As the meat roasts, the juices and pineapple enzymes baste the pork, creating crispy, charred edges.<\/li>\n<\/ul>\n<figure id=\"attachment_82379\" aria-describedby=\"caption-attachment-82379\" style=\"width: 614px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-82379 lazyload\" style=\"--smush-placeholder-width: 614px; --smush-placeholder-aspect-ratio: 614\/800;border: 4px solid black; margin-top: 3px; margin-bottom: 3px;\" data-src=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo02.png?lossy=2&strip=1&webp=1\" alt=\"\" width=\"614\" height=\"800\" data-srcset=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo02.png?lossy=2&strip=1&webp=1 491w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo02-230x300.png?lossy=2&strip=1&webp=1 230w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo02-115x150.png?lossy=2&strip=1&webp=1 115w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo02.png?size=368x479&lossy=2&strip=1&webp=1 368w\" data-sizes=\"(max-width: 614px) 100vw, 614px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" \/><figcaption id=\"caption-attachment-82379\" class=\"wp-caption-text\">Trompos Are Part of the Real Mexican Experience<\/figcaption><\/figure>\n<p>As you step into Al Trompo, the restaurant&#8217;s cynosure is to your right.\u00a0 You&#8217;ll espy several trompos&#8211;not just the one for the al pastor.\u00a0 Other meats, such as carne asada and chicken also receive the rotisserie treatment.\u00a0 Unlike at many Greek and Middle Eastern restaurants, the meats are stacked by the restaurant staff.\u00a0 You can&#8217;t buy a trompo from Shamrock or Cisco.\u00a0 That makes a significant difference in terms of flavor, texture and experience.\u00a0 Also making a significant difference is getting housemade tortillas and watching the tortillera at work.\u00a0 It&#8217;s a treat to observe her in action as she rolls the masa into balls and presses them into perfect, flat orbs then deftly places them on a hot comal until they&#8217;re perfectly pinto-pony charred.\u00a0 She&#8217;s as adept at flour tortillas as she is at corn tortillas.<\/p>\n<p>After you&#8217;ve placed your order, you&#8217;ll want to make a trip (or six) to the inviting <em><strong>salsa bar<\/strong><\/em> where multi-colored salsas of varying piquancy are yours for the taking as are pickled jalape\u00f1os, limes, grilled onions and cucumbers.\u00a0 Pile on the fresh, crisp chips and ladle the salsas of your choice onto plastic ramekins and you&#8217;ll be introduced to the high caliber of dining you&#8217;ll enjoy at every bite. Al Trompo&#8217;s line-up includes a mild (wimpy) Salsa Botanero and a devilishly piquant habanero-based Diablo Salsa.<\/p>\n<figure id=\"attachment_82385\" aria-describedby=\"caption-attachment-82385\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-82385 lazyload\" style=\"--smush-placeholder-width: 850px; --smush-placeholder-aspect-ratio: 850\/638;border: 4px solid black; margin-top: 3px; margin-bottom: 3px;\" data-src=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo05.png?lossy=2&strip=1&webp=1\" alt=\"\" width=\"850\" height=\"638\" data-srcset=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo05.png?lossy=2&strip=1&webp=1 640w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo05-300x225.png?lossy=2&strip=1&webp=1 300w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo05-150x113.png?lossy=2&strip=1&webp=1 150w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo05.png?size=510x383&lossy=2&strip=1&webp=1 510w\" data-sizes=\"(max-width: 850px) 100vw, 850px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" \/><figcaption id=\"caption-attachment-82385\" class=\"wp-caption-text\">Salsa Bar<\/figcaption><\/figure>\n<p>Not surprisingly there&#8217;s an orderly and efficient process even for ordering your food.\u00a0 An overhead menu lists each item though you should feel free to ask questions if you&#8217;re not sure about something.\u00a0 &#8220;From the Trompo, straight to your entree!&#8221;\u00a0 That&#8217;s what you need to understand.\u00a0 Whether you order tacos, burritos, loaded fries, loaded papas, quesadillas, tostadas or any of the other plates, you can watch as the meat of your choice is shaved off the trompo and sliced into smaller-than-bite-sized pieces.\u00a0 Your order is transported to what might best be described as the &#8220;fixings station.&#8221;\u00a0 There you can ask for chopped onions, cilantro, shredded queso, roasted corn, crema Mexicana and more adornment for your dish.<\/p>\n<p>Order a taco on a homemade corn tortilla and you can add from among four base choices: pinto beans cilantro lime rice, Mexican rice or none; four protein choices: al pastor, chicken, asada, veggie; and the aforementioned toppings.\u00a0 Also available on the toppings station are your choice of queso: cotija or mozzarella.\u00a0 It&#8217;s a magnificent melange of ingredients sure to elevate your dish.\u00a0 \u00a0For larger appetites, Al Trompo offers the &#8220;<em><strong>Dos Amigos<\/strong><\/em>,&#8221; two fresh-cut meats straight from the trompo, an unlimited number of toppings, fresh homemade tortillas (two flour or six corn).\u00a0 The Dos Amigos is meant to feed two to three people (or one Gil).\u00a0 If your dining party includes three or four people, ask for the Tres Moqueteros (three musketeers).<\/p>\n<figure id=\"attachment_82384\" aria-describedby=\"caption-attachment-82384\" style=\"width: 600px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-82384 lazyload\" style=\"--smush-placeholder-width: 600px; --smush-placeholder-aspect-ratio: 600\/800;border: 4px solid black; margin-top: 3px; margin-bottom: 3px;\" data-src=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo04.png?lossy=2&strip=1&webp=1\" alt=\"\" width=\"600\" height=\"800\" data-srcset=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo04.png?lossy=2&strip=1&webp=1 480w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo04-225x300.png?lossy=2&strip=1&webp=1 225w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo04-113x150.png?lossy=2&strip=1&webp=1 113w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo04.png?size=360x480&lossy=2&strip=1&webp=1 360w\" data-sizes=\"(max-width: 600px) 100vw, 600px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" \/><figcaption id=\"caption-attachment-82384\" class=\"wp-caption-text\">Dos Amigos Plate<\/figcaption><\/figure>\n<p>As you can see from the photo above, the Dos Amigos plate is formidable, not something a sole diner (not even me) is likely to polish off in one sitting (I took half of it home).\u00a0 I did manage to construct six tacos from the six corn tortillas, stuffing them generously with chopped onions, cilantro and mozzarella before stuffing myself.\u00a0 Both meats were absolutely delicious.\u00a0 The marinated, spit-roasted al pastor was characteristically bold and smoky with a bright citrusy tang and subtle kick. The carne asada, so reminiscent of a flavorful, juicy grilled steak was savory and &#8220;beefy.&#8221;\u00a0 Nestled in the corn tortillas (with a pronounced corn flavor), those magnificent meats and toppings made for great tacos.\u00a0 Add in some salsa and you&#8217;ll be in dining heaven.\u00a0 Though beans and rice are part of the Dos Amigos plate, I asked for two portions of pinto beans.\u00a0 That was a great decision.<\/p>\n<p>My Kim&#8217;s choice was a <em><strong>quesadilla<\/strong><\/em>, a twelve-inch flour tortilla stuffed with mozzarella cheese and your choice of meat (al pastor, carne asada or chicken).\u00a0 My Kim asked for both al pastor and carne asada.\u00a0 Her one topping was grilled corn, her favorite vegetable prepared her favorite way.\u00a0 Unlike some quesadillas which are sliced like a tortilla pizza might be, Al Trompo&#8217;s quesadilla was a tortilla folded over.\u00a0 It was gigantic, quite a bit larger than my Kim could conceivably eat.\u00a0 Somehow a ramekin of crema Mexican made it onto her plate.\u00a0 She declared it &#8220;too spicy,&#8221; but I found it no more piquant than any Ranch dressing.\u00a0 It was a superb dip for my tacos.<\/p>\n<figure id=\"attachment_82386\" aria-describedby=\"caption-attachment-82386\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-82386 lazyload\" style=\"--smush-placeholder-width: 850px; --smush-placeholder-aspect-ratio: 850\/477;border: 4px solid black; margin-top: 3px; margin-bottom: 3px;\" data-src=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo06.png?lossy=2&strip=1&webp=1\" alt=\"\" width=\"850\" height=\"477\" data-srcset=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo06.png?lossy=2&strip=1&webp=1 640w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo06-300x168.png?lossy=2&strip=1&webp=1 300w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo06-150x84.png?lossy=2&strip=1&webp=1 150w, https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2026\/05\/AlTrompo06.png?size=510x286&lossy=2&strip=1&webp=1 510w\" data-sizes=\"(max-width: 850px) 100vw, 850px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" \/><figcaption id=\"caption-attachment-82386\" class=\"wp-caption-text\">Quesadilla<\/figcaption><\/figure>\n<p>Al Trompo Mexican Grill is a wonderful addition to Albuquerque&#8217;s culinary scene.
