People pop into the airy Corrales caf\u00e9 for a fresh-baked pain au chocolat, Cubano sandwich, or other delectable fare. Others browse the European-style market, picking up tinned sardines from Portugal, French jams, and ceramics made in Latvia<\/em>.&#8221;\u00a0 Perhaps only if you&#8217;ve lived in Europe is clarification helpful.\u00a0 For my Kim and I, &#8220;fancies&#8221; has come to represent French Fancies, iconic, bite-sized sponge cakes topped with a dome of buttercream and covered in colorful, glossy fondant icing.\u00a0 We must have devoured a truckload of fancies during our time in England.<\/p>\n<figure id=\"attachment_83079\" aria-describedby=\"caption-attachment-83079\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-83079 lazyload\" style=\"--smush-placeholder-width: 850px; a military term for integrating into the local commercial and housing market instead of relying solely on the military bubble.\u00a0 It meant buying food at local markets because it was organic and fresher than we could find at the better stocked commissary.\u00a0 It didn&#8217;t take us long to determine we liked European-style markets more than the sprawling American stores that sold everything under one roof.<\/p>\n<p>In May, 2026, I discovered <a href=\"https:\/\/www.nmgastronome.com\/?p=81900\" target=\"_blank\" rel=\"noopener\"><strong>Little Europe<\/strong><\/a>, an 1,100 square-foot space inside Sawmill Market.\u00a0 Little Europe is so well organized and attractive that comparisons to European markets were inevitable.\u00a0 Moreover, it features an assortment of\u00a0 curated comestibles you&#8217;ll generally find only in the old world.\u00a0 Visiting Fancies Bakery and Modern Market inspired a similar nostalgic longing for those idealized times at European markets.\u00a0 Why we waited more than three years to visit is inexplicable, perhaps attributable to not liking to drive through Corrales where motorists typically drive ten to fifteen miles <em>below<\/em> the speed limit (you&#8217;d think they were driving the trecherous curvy cliffsides of Sardinia and were being chased by a James Bond villain).<\/p>\n<figure id=\"attachment_83082\" aria-describedby=\"caption-attachment-83082\" style=\"width: 686px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-83082 lazyload\" style=\"--smush-placeholder-width: 686px; Housemade Potato Chips<\/figcaption><\/figure>\n<p>Fancies opened its doors in February, 2023.\u00a0 It&#8217;s situated in a space that previously housed a number of short-lived eateries, among them: <a href=\"https:\/\/www.nmgastronome.com\/?p=57993\" target=\"_blank\" rel=\"noopener\"><strong>Waffology<\/strong><\/a>, <a href=\"https:\/\/www.nmgastronome.com\/?p=55871\" target=\"_blank\" rel=\"noopener\"><strong>C3&#8217;s Bistro<\/strong><\/a>, <a href=\"https:\/\/www.nmgastronome.com\/?p=37746\" target=\"_blank\" rel=\"noopener\"><strong>Las Ristras<\/strong><\/a>, and <a href=\"https:\/\/www.nmgastronome.com\/?p=32888\" target=\"_blank\" rel=\"noopener\"><strong>The Spot Cafe<\/strong><\/a>.\u00a0 Already, Fancies has more longevity than severl of its predecessors.\u00a0 Perhaps that&#8217;s because there&#8217;s a recognition that Correle\u00f1os are well-traveled and acquainted with European markets.\u00a0 Located at 4940 Corrales Road, this bakery and market offers the type of international gourmet goods and pastries travelers enjoy so much when crossing the pond to &#8220;the continent.&#8221;\u00a0 In addition to operating as a modern market, Fancies\u00a0 wins over savvy diners with a cafe.\u00a0 Enjoying breakfast and lunch in market surroundings is so European.<\/p>\n<p>Fancies operates alongside the restaurant &#8220;Forty Nine Forty,&#8221; which opened in April 2023.\u00a0 Where once, the yawning expanse was cavernous and bleak (making apparent the lack of traffic to each previous occupant), the space is now bisected into two distinct areas.\u00a0 Fancies operates only during breakfast and lunch hours while Forty Nine Forty is an elevated evening experience.\u00a0 Each restaurant has its own entrance on the building&#8217;s north side, but you can also enter through the Fancies entrance pictured above.\u00a0 Weather-permitting, al fresco dining is an attractive option, particularly when New Mexico&#8217;s incomparable evening skies are showing off their celestial twilight palettes.\u00a0 For sheer ambiance, both Forty Nine Forty and Fancies are so inviting you almost won&#8217;t mind driving through Corrales.<\/p>\n<figure id=\"attachment_83084\" aria-describedby=\"caption-attachment-83084\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-83084 lazyload\" style=\"--smush-placeholder-width: 850px; closing time of 2PM so we didn&#8217;t get a full picture of what Viennoiserie and P\u00e2tisserie had been available earlier.\u00a0 Nor were we able to avail ourselves of the muffuletta, a substantial sandwich with which we fell in love in New Orleans.\u00a0 Fortunately, temptations abounded in the form of artisan sandwiches, salads and more.<\/p>\n<p>Java junkies can get their fix at Fancies, too.\u00a0 A specialty coffee menu includes rotating seasonal specialties including such fan-favorites as banana bread chai latte and <em><strong>sticky bun latte<\/strong><\/em>.\u00a0 \u00a0Americanos and espressos made with rich beans are available as are match and teas, iced or hot.\u00a0 In Mississippi, my group admin Bobbye Marie Barlow made keeping my weight within Air Force standards a challenge by baking the most addicting and gooey baking sticky buns.\u00a0 In her honor, I had to order the sticky bun latte.\u00a0 It&#8217;s everything you love about a warm, gooey sticky bun, but in a cup.\u00a0 Rich, caramel notes counterbalance the strong coffee.<\/p>\n<figure id=\"attachment_83080\" aria-describedby=\"caption-attachment-83080\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-83080 lazyload\" style=\"--smush-placeholder-width: 850px; add grilled or fried buttermilk chicken) with the <em><strong>fried buttermilk chicken<\/strong><\/em>.\u00a0 \u00a0Even though (gasp) my dear wife scraped off much of the chicken&#8217;s resplendent breading (a mortal sin), the chicken shone.\u00a0 The buttermilk brine infused the chicken with moistness and adds a pleasant and mild tang.\u00a0 I absconded with the discarded breading and couldn&#8217;t believe anyone (much less a paramour of poultry) could scrape off such goodness.\u00a0 It was terrific.<\/p>\n<p>Perhaps the very best reason for visiting Fancies early in the day is what may well be the best <em><strong>chocolate cake<\/strong><\/em> you&#8217;ll ever have.\u00a0 It&#8217;s made with Dutch process cocoa powder which has been treated with an alkali that neutralizes its natural acides.\u00a0 The result is a darker color, smoother texture and milder, less bitter flavor.\u00a0 It features intense chocolate flavor and is layered and frosted with smooth, glossy chocolate ganache.<span class=\"WBgIic notranslate\" data-sfc-root=\"c\" data-wiz-uids=\"UtqURc_11,UtqURc_12\" data-sfc-cb=\"\"><span class=\"NMq1me\" data-animation-atomic=\"\" data-wiz-attrbind=\"class=UtqURc_10\/TKHnVd\"><span aria-hidden=\"true\">\u00a0 Its texture is incredibly soft, moist, and &#8220;melt-in-your-mouth&#8221; smooth.\u00a0 My Kim doesn&#8217;t like dark chocolate and I didn&#8217;t tell her Dutch chocolate isn&#8217;t dark chocolate (despite the ebony sheen) so I had this outstanding cake all to myself.\u00a0 The cake was so good, my Kim&#8217;s banana pudding (outstanding in its own right) was almost a consolation prize.<\/span><\/span><\/span><\/p>\n<p>We were very well taken care of by Jaz and Gentry, Fancies&#8217;
