King\" href=\"http:\/\/www.lesleysking.com\/\" target=\"_blank\" rel=\"noopener\">Lesley King<\/a><\/strong> that <em>she<\/em> is the <em>true<\/em> New Mexico Gastronome. Lesley, the wonderful author who once enthralled readers with her monthly &#8220;King of the Road&#8221; columns for <strong><em><a title=\"New Mexico Magazine\" href=\"http:\/\/www.nmmagazine.com\/\" target=\"_blank\" rel=\"noopener\">New Mexico Magazine<\/a><\/em><\/strong>, likes to say&#8211;jokingly&#8211;that she &#8220;<em>eats and sleeps around<\/em>,&#8221; because her writing assignments require that she sample so many restaurants and accommodations.\u00a0 She has literally traveled every friendly highway and byway in the Land of Enchantment, dining in as many&#8211;or perhaps even more&#8211;restaurants than I have while somehow managing to remain svelte, beautiful and elegant.<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">I had the great privilege of collaborating with Lesley and <strong><a title=\"Chef Rocky Durham\" href=\"http:\/\/www.rockydurham.com\/\" target=\"_blank\" rel=\"noopener\">Chef Rocky Durham<\/a><\/strong> in celebrating the Land of Enchantment&#8217;s cuisine in a feature for <em>New Mexico Magazine<\/em>. The June, 2010 edition of America&#8217;s oldest and best official state magazine introduced readers to \u201c<strong>N<a title=\"New Mexico's Best Eats\" href=\"http:\/\/www.nmgastronome.com\/?p=8282\" target=\"_blank\" rel=\"noopener\">ew Mexico\u2019s Best Eats<\/a><\/strong>,\u201d eight of the very best dishes served in restaurants throughout the Land of Enchantment: Huevos Rancheros, Green Chile Cheeseburgers, Green Chile Stew, Comfort Food, Deli Sandwich, Tacos, Local Seasonal Ingredients and Desserts.\u00a0 Two versions of each dish\u2013a down-home version and an uptown version\u2013were showcased in lyrical prose.<\/span><\/p>\n<figure id=\"attachment_61286\" aria-describedby=\"caption-attachment-61286\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-61286 lazyload\" style=\"--smush-placeholder-width: 750px; font-family: Verdana;\">The three of us, all New Mexico natives and peripatetic diners, deliberated spiritedly as to what restaurants would fill each category.\u00a0 Rocky and I, both the type of men who would actually stop and ask for directions, were wise enough to defer to Lesley&#8217;s vast knowledge and much broader travel experiences when we were at a loss.\u00a0 Such was the case in deciding where New Mexico&#8217;s best upscale huevos rancheros were served.\u00a0 While Rocky and I both drew blanks, Lesley buoyantly made a case for a unique interpretation of huevos rancheros masterfully prepared at a small, somewhat off-the-eaten-path diner in El Prado.<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">Demurely, Lesley admitted that she sometimes wakes up in Santa Fe and wants to drive to El Prado just to eat this &#8220;reconstructed&#8221; interpretation of huevos rancheros.\u00a0 All the essential elements used in the construction of huevos rancheros&#8211;pinto beans, onions, tomatoes, eggs, cheese, red and green chile and a tortilla&#8211;can be found in the dish with which Lesley became so enamored.\u00a0 The dish&#8211;called the Taose\u00f1o and served only at\u00a0 Gutiz in El Prado,&#8211;also includes kidney and garbanzo beans, rice and potatoes, all baked and served in a terra-cotta bowl.<\/span><\/p>\n<figure id=\"attachment_61287\" aria-describedby=\"caption-attachment-61287\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-61287 lazyload\" style=\"--smush-placeholder-width: 750px; font-family: Verdana;\">Lesley&#8217;s enthusiasm for this dish had me wondering if she would channel John F. Kennedy&#8217;s &#8220;<em>Ich bin ein Berliner<\/em>&#8221; speech with a New Mexico twist, &#8220;<em>Soy un Taose\u00f1o<\/em>.&#8221;\u00a0 Though she had us at hello, we didn&#8217;t interrupt her alacritous delivery which almost literally had us drooling.\u00a0 On that basis alone, the Taose\u00f1o, while not a conventional rendition of the dish, certainly convinced us it warranted recognition as New Mexico&#8217;s best uptown huevos rancheros.\u00a0 Today, a framed plaque on a wall at Gutiz commemorates the Taose\u00f1o&#8217;s inclusion among New Mexico&#8217;s best eats.<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">Frankly, the term &#8220;<em>among New Mexico&#8217;s best<\/em>&#8221; could certainly apply to Gutiz as well.\u00a0 Founding owner and chef Eduardo Gutiz hit upon a masterstroke when he created the inspired menu, a fusion of French and Spanish cuisine made extraordinarily well.\u00a0 Lesley explained that chef Gutiz was born in Spain, raised in France and has traveled extensively through Peru and Bolivia.\u00a0 Foodies recognize that Spain, France and Peru (yes, Peru) are some of the most highly regarded culinary hotbeds in the world.\u00a0 That wasn&#8217;t lost on chef Gutiz who incorporated elements of those three nations on his menu.<\/span><\/p>\n<figure id=\"attachment_61305\" aria-describedby=\"caption-attachment-61305\" style=\"width: 432px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-61305 lazyload\" style=\"--smush-placeholder-width: 432px; font-family: Verdana;\">Gutiz (the restaurant, not the chef) is housed in an adobe abode the color of earthen stucco (which in New Mexico can be any of several shades).\u00a0 Window sills and the picket fence enclosing the patio are a sublime shade of Taos blue.\u00a0 On an upper level wall on the restaurant&#8217;s west side is what appears to be a shuttered balcony on which a metallic rooster perches as if to greet the day.\u00a0 Oval signage indicates you are at Gutiz, the restaurant&#8217;s name framed by the words &#8220;Latin French Fusion.&#8221;<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">The interior is very small, but very homey.\u00a0 The front counter does double duty as the wait staff&#8217;s prep station and bar complete with bar stools.\u00a0 Positioned atop a brick facade is a basket of breads baked in-house and fresh that day, their aroma still wafting throughout the restaurant if you get there for breakfast.\u00a0 A small glass pastry case on one side of the bar showcases artisan cakes and tarts while a beverage cooler keeps the restaurant&#8217;s popular mint lemonade in abeyance until you order it.\u00a0 The walls are festooned with colorful photographs, the type of which glean appreciation from most diners.\u00a0 In the summer, particularly during monsoon season, the restaurant&#8217;s cooling system struggles to keep temperatures comfortable in the sole dining room.<\/span><\/p>\n<figure id=\"attachment_8922\" aria-describedby=\"caption-attachment-8922\" style=\"width: 366px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2010\/07\/Gutiz04.jpg?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"size-full wp-image-8922 lazyload\" style=\"--smush-placeholder-width: 366px; font-family: Verdana;\">The menu indicates breakfast and lunch are served all day, Tuesday through Sunday from 8AM to 2PM. The breakfast menu is unique and innovative, a true fusion of complementary ingredients from French and Latin culinary disciplines, including some northern New Mexican inspired dishes.\u00a0 Tapas, small dishes which can be eaten as an appetizer or eaten as a meal are predominantly seafood oriented.\u00a0 The specialties section of the menu features Paella Valenciana made the traditional Spanish way.\u00a0 Salad selections meld the flavors of greens, vegetables, fruits and cheeses.\u00a0 A sumptuous bounty of sandwiches are served on the restaurant&#8217;s homemade French bread. French bread, croissants and pastries are baked fresh every morning.<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\"><strong>17 July 2010<\/strong>: The menu is a refreshing departure from the mundane, a carte du jour worthy of the Bohemian free-wheeling style of Taos.\u00a0 It&#8217;s adventure eating in the most pleasurable sense, a different menu than you&#8217;ll find anywhere in New Mexico.\u00a0 Though chai teas, fresh ground coffee, espresso and cappuccino are available, start your adventure with a frothy, cold glass of <strong><em>mint lemonade<\/em><\/strong>.\u00a0 Its a uniquely flavored elixir which might remind you of a thin mint Girl Scout cookie dipped in a lemonade with equal pronouncements of sweet and sour.\u00a0 You&#8217;ll ask for at least one refill.<\/span><\/p>\n<figure id=\"attachment_8925\" aria-describedby=\"caption-attachment-8925\" style=\"width: 444px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/b4385483.smushcdn.com\/4385483\/wp-content\/uploads\/2010\/07\/Gutiz061.jpg?lossy=2&strip=1&webp=1\"><img decoding=\"async\" class=\"size-full wp-image-8925 lazyload\" style=\"--smush-placeholder-width: 444px; font-family: Verdana;\"><strong>17 July 2010<\/strong>: Here&#8217;s a challenge for my readers.\u00a0 Name one person who says they don&#8217;t like bread and who can back it up.\u00a0 It&#8217;s easy to find people who don&#8217;t like vegetables or meat, but I don&#8217;t recall ever meeting anyone who dislikes bread&#8230;and even if you could find one, they&#8217;d be converted at first bite of Gutiz&#8217;s fresh baked bread.\u00a0 It&#8217;s because of this legendary bread that we ordered a tapas appetizer of <strong><em>steamed mussels<\/em><\/strong>, a large order (about 20 New Zealand green-lipped mussels) of beautiful bivalve mollusks swimming in a luxurious broth of garlic, white wine, tomato, Bolivian aji panca cream sauce served over Gutiz potatoes.<\/span><\/p>\n<p><span style=\"font-size: 10pt; Served with a flour tortilla), \u00a0the ever-humble Lesley may have understated just how good this &#8220;best eats&#8221; eat is.\u00a0 No one ingredient dominates the flavor profile; it truly is a marriage of compatibility.\u00a0 Everything works well together!\u00a0 The textures, the flavors, the aesthetics of the dish&#8211;it&#8217;s a dish deserving of accolades as New Mexico&#8217;s very best uptown huevos rancheros.\u00a0 Not even the old school traditionalists would argue that honor after but just one bite.<\/span><\/p>\n<p><span style=\"font-size: small; font-family: Verdana;\"><strong>17 July 2010<\/strong>: The best part of waking up might also be another Gutiz breakfast entree, the <strong><em>Scottish sausage<\/em> plate<\/strong>.\u00a0 Having had Scottish sausage at a pub just off Princess Street in Edinburgh, I expected a square sausage patty about a half-inch thick and the perfect size for a sandwich.\u00a0 Instead, Gutiz&#8217; rendition of Scottish sausage is two diagonally sliced links about five inches in length drizzled in a chipotle sauce.\u00a0 This is a taste bud awakening grilled sausage with a pleasantly piquant bite.\u00a0 The sausage is served with two eggs any style and Gutiz potatoes, cubed tubers seasoned with salt, pepper, garlic, rosemary, paprika and tumeric.\u00a0 No mater what you order, you&#8217;ve got to have a side of these wonderful potatoes.<\/span><\/p>\n<figure style=\"width: 444px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" style=\"--smush-placeholder-width: 444px; --smush-placeholder-aspect-ratio: 444\/330;border: 4px solid black; margin-top: 3px; margin-bottom: 3px;\" data-src=\"https:\/\/www.nmgastronome.com\/nm\/continental\/Images\/Gutiz09.jpg\" alt=\"\" width=\"444\" height=\"330\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" class=\"lazyload\" \/><figcaption class=\"wp-caption-text\"><span style=\"font-size: 10pt;\">Grilled Goat Cheese Quesadilla<\/span><\/figcaption><\/figure>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\"><strong>16 January 2011<\/strong>: The sandwich menu might pry your eyes away from breakfast and tapas entrees, especially since most sandwiches are served on the restaurant&#8217;s fantastic French bread.\u00a0 A better canvas for a sandwich there might not be in all of Taos county.\u00a0 There&#8217;s actually only one sandwich not made on the divine staff of life.\u00a0 That&#8217;s the <em><strong>grilled goat cheese quesadilla<\/strong><\/em> which is made on a flour tortilla stuffed with goat cheese, a touch of Cheddar and Jack cheese.\u00a0 It&#8217;s grilled and topped with diced tomatoes and basil pesto and served with a side of cucumber and roasted red pepper salad.<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">This is not a common quesadilla! Never start the day without a good piece of toast. In fact, let&#8217;s toast to toast<\/em>.&#8221; \u00a0Rarely have we had toast worthy of being toasted in the tribute manner of toasting. \u00a0The toast at Gutiz not only warrants an enthusiastic toast, it warrants a baker&#8217;s toque flying proudly at full-mast over a pole. \u00a0Thick, lightly toasted slices of soft French bread served with pads of butter and housemade orange marmalade make for a great way to get up any morning. \u00a0It&#8217;s fantastic! \u00a0<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\"><strong>13 August 2022<\/strong>: \u00a0With the patience of Job, our server Tyler returned to our table six times to find I had narrowed my choices to three. \u00a0Rather than deliberate the merits of each potential choice, I told him to bring me his favorite from among my three &#8220;finalists.&#8221; \u00a0His choice, the <em><strong>Pepito<\/strong><\/em> (your choice of chicken or ribeye steak saut\u00e9ed with red onions, tomatoes and cucumbers in aji panca chile sauce) served on a toasted baguette with a side of Gutiz potatoes and mixed green salad. \u00a0It&#8217;s one of the most unique and delicious steak sandwiches I&#8217;ve ever had&#8211;largely thanks to the aji panca chile sauce, a dark red Peruvian chile pepper with a smoky, fruity taste. \u00a0All of the ribeye was coated in this magical sauce. \u00a0Then, of course, there&#8217;s the toasted baguette fully imbued with the bread-baking magic with which Gutiz imbues all its breads and pastries.<\/span><\/p>\n<figure id=\"attachment_61289\" aria-describedby=\"caption-attachment-61289\" style=\"width: 750px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-61289 lazyload\" style=\"--smush-placeholder-width: 750px; font-family: Verdana;\">Before we had even bitten into the Pepito, we polished off nearly half the Gutiz potatoes. \u00a0Though typically offered as &#8220;papitas&#8221; at New Mexican restaurants, these cubed potatoes might be the very best we&#8217;ve ever had. \u00a0Light, golden and crispy on the outside and soft and tender on the inside, they&#8217;re better than any fries in New Mexico. \u00a0Gutiz doesn&#8217;t spare the salt (and I usually whine about foods that are overly-salted), but if salt is what makes these gems so flavorful, bring it on. \u00a0You dare not desecrate these Gutiz potatoes with ketchup. \u00a0Only perhaps the aforementioned aji panca chile sauce is worthy enough.\u00a0<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\"><strong>13 August 2022<\/strong>: While her husband is studious, tentative and indecisive when it comes to ordering from a menu, my Kim orders as if she completed the Evelyn Wood Speed Reading Dynamics course. \u00a0After scanning the menu for about two seconds, she told Tyler she wanted the <em><strong>Granola-Tastic<\/strong><\/em> (a\u00a0large bowl filled with granola, yogurt and seasonal fruit drizzled with a homemade blueberry reduction and maple syrup). \u00a0Five visits by Tyler later, her husband had finally studied the menu&#8211;every ingredient and ingredient combinations&#8211;well enough to have narrowed his choices to three. \u00a0My Kim knows what she likes and she loved the granola. \u00a0As George Carlin quipped, granola isn&#8217;t healthy. \u00a0It is, however, super delicious.<\/span><\/p>\n<figure id=\"attachment_61290\" aria-describedby=\"caption-attachment-61290\" style=\"width: 612px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-61290 lazyload\" style=\"--smush-placeholder-width: 612px; because her grandmother didn&#8217;t want her named for the Fleetwood Mac song &#8220;Rhianna&#8221; because that song celebrates a witch. \u00a0We looked it up and she was right. \u00a0Rianna was also right in recommending the <em><strong>green chile-sausage bowl<\/strong><\/em> with a tortilla&#8211;even though she cautioned some diners can&#8217;t handle three types of beans in one dish. \u00a0<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">Yes, three types of beans&#8211;pintos, kidneys and garbanzos&#8211;in one delicious bowl. \u00a0Pintos are a given. \u00a0They are one of New Mexico&#8217;s two official state vegetables (along with chile). \u00a0This bowl also includes sliced spicy Andouille sausage, onion, tomato, and cheese in red and green chile sauce. \u00a0It&#8217;s served with a flour tortilla and can be topped with an egg if you&#8217;d like. \u00a0Typically when red and green chile are served in a dish, they&#8217;re separated. \u00a0Not so with the green chile-sausage bowl where some of each will be in every spoonful. \u00a0Neither is especially piquant, but as Rianna pointed out &#8220;<em>Taos gets a lot of tourists<\/em>.&#8221; font-family: Verdana;\">The &#8220;Specialties&#8221; section of the menu is as &#8220;special&#8221; as you might infer.\u00a0 Though the wait staff are consummate sales people with ambassadorial qualities, I&#8217;ve only heard them use the term &#8220;great choice&#8221; one time on the items we&#8217;ve ordered.\u00a0 The item which prompted the effusive exudation was the <strong><em>Pollo Borachon<\/em><\/strong> (drunken chicken), a stew of chicken, onions, carrots, green peas, pinto beans, mushrooms and bacon marinated in red wine and baked in a casserole dish with a thin bread shell that envelops the casserole dish similar to a pot pie dish. \u00a0<strong>Note<\/strong>: \u00a0During our August, 2022 visit, our server informed us Gutiz no longer offers this item.<\/span><\/p>\n<p><span style=\"font-size: 10pt;\"><span style=\"font-family: Verdana;\">If that sounds like a Latin-French fusion interpretation of Coq au Vin, the fabulous French chicken stew, it&#8217;ll take only one swoon-inducing whiff for you to appreciate the liberties taken by the chef.\u00a0\u00a0\u00a0 If your mouth is as agape as mine was when yours is delivered to your table, perhaps one of the helpful wait staff will volunteer to play &#8220;mommy&#8221; and cut it open for you as they did for me.\u00a0 The surgical precision cut at the top of the golden bread bowl releases the steamy fragrance of the dish, exposing nearly an entire chicken, bone and all.\u00a0 The chicken, purplish in color from the red wine, falls off the bone into the blessed broth which is just tailor-made for sopping up with the bread cover. font-family: Verdana;\">During both my near noon visits to Gutiz, the pulchritudinous pastries I so lusted after were gone (darn those locals who get there early or call in and &#8220;reserve&#8221; their favorite desserts as you should), but you can hardly call <strong><em>chocolate croissant<\/em><\/strong> (pain au chocolat) a consolation prize.\u00a0 This light, delicate and flaky French-style croissant is engorged with delicious adult (dark) chocolate, but not so much that it oozes out.\u00a0 Each bite rewards you with the butteriness of the croissant and the incomparably addictive sweet bitterness of dark chocolate. <\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Verdana;\">If you love &#8220;adult&#8221; chocolate, the semi-sweet variety with a high cocoa composition, you&#8217;ll fall for the <em><strong>flourless chocolate cake<\/strong><\/em> which is drizzled with confectioner&#8217;s sugar and accompanied by whipped cream dusted with cocoa.\u00a0 It&#8217;s gluten-free greatness in every rich, moist, delicious bite.\u00a0 During a January, 2011 visit, there were three desserts on the table to be split among four of us.\u00a0 Our 96-year-old friend Patty Sahd enjoyed the flourless chocolate cake so much, we let her have most of it.\u00a0 She said she&#8217;d never had anything like it.<\/span><\/p>\n<figure id=\"attachment_61291\" aria-describedby=\"caption-attachment-61291\" style=\"width: 525px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-61291 lazyload\" style=\"--smush-placeholder-width: 525px;
