The peripatetic Anthony jokes that his role as owner also includes dish-washer, greeter, host, waiter, chef and whatever else is required during the day.\u00a0 It&#8217;s not that he doesn&#8217;t have help.\u00a0 We had expected to see Anthony&#8217;s son whom we met during a visit to Anthony&#8217;s other venture, <a href=\"https:\/\/www.nmgastronome.com\/?p=70958\" target=\"_blank\" rel=\"noopener\"><strong>Anthony&#8217;s Grill<\/strong><\/a>.\u00a0 Instead, we were visited several times by Shannon, the\u00a0 general manager, a striking (even gorgeous) young lady.\u00a0 Naturally I praised Anthony for the &#8220;upgrade&#8221; from his son and suggested that if he wants his restaurant to succeed wildly,\u00a0 he&#8217;ll make her the front-and-center presence.<\/p>\n<figure id=\"attachment_89677\" aria-describedby=\"caption-attachment-89677\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-89677 lazyload\" style=\"--smush-placeholder-width: 850px; According to Chef <a href=\"https:\/\/www.delish.com\/food-news\/a26356466\/what-is-soul-food\/\" target=\"_blank\" rel=\"noopener\"><strong>Millie Peartree<\/strong><\/a>, &#8220;<em>Trying to differentiate soul food from Southern food shouldn&#8217;t be complicated. While not all Southern food is considered soul food, all soul food is definitely Southern<\/em>.&#8221;\u00a0 She elaborates further: &#8220;<em>The expression &#8220;soul food&#8221; originated in the mid-1960s, when &#8220;soul&#8221; was a common word used to describe African-American culture. At its core, soul food is down-home cooking that&#8217;s been passed down through many generations, with its roots in the rural South. In 1962, poet and civil rights activist Amiri Baraka published his essay &#8220;Soul Food,&#8221; an argument against white critics claiming that there was no African American cuisine<\/em>.&#8221;<\/p>\n<figure id=\"attachment_89679\" aria-describedby=\"caption-attachment-89679\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-89679 lazyload\" style=\"--smush-placeholder-width: 850px; --smush-placeholder-aspect-ratio: 850\/638;border: 4px solid black; margin-top: 4px; margin-bottom: 4px;\" data-src=\"https:\/\/b4385483.assetcdn.net\/2.0\/4385483\/wp-content\/uploads\/2026\/08\/AnthonysSoulFood04.png?lossy=2&strip=1&webp=1\" alt=\"\" width=\"850\" height=\"638\" data-srcset=\"https:\/\/b4385483.assetcdn.net\/2.0\/4385483\/wp-content\/uploads\/2026\/08\/AnthonysSoulFood04.png?lossy=2&strip=1&webp=1 1280w, https:\/\/b4385483.assetcdn.net\/2.0\/4385483\/wp-content\/uploads\/2026\/08\/AnthonysSoulFood04-300x225.png?lossy=2&strip=1&webp=1 300w, https:\/\/b4385483.assetcdn.net\/2.0\/4385483\/wp-content\/uploads\/2026\/08\/AnthonysSoulFood04-1024x768.png?lossy=2&strip=1&webp=1 1024w, https:\/\/b4385483.assetcdn.net\/2.0\/4385483\/wp-content\/uploads\/2026\/08\/AnthonysSoulFood04-150x113.png?lossy=2&strip=1&webp=1 150w, https:\/\/b4385483.assetcdn.net\/2.0\/4385483\/wp-content\/uploads\/2026\/08\/AnthonysSoulFood04-768x576.png?lossy=2&strip=1&webp=1 768w, https:\/\/b4385483.assetcdn.net\/2.0\/4385483\/wp-content\/uploads\/2026\/08\/AnthonysSoulFood04.png?size=384x288&lossy=2&strip=1&webp=1 384w, https:\/\/b4385483.assetcdn.net\/2.0\/4385483\/wp-content\/uploads\/2026\/08\/AnthonysSoulFood04.png?size=512x384&lossy=2&strip=1&webp=1 512w, https:\/\/b4385483.assetcdn.net\/2.0\/4385483\/wp-content\/uploads\/2026\/08\/AnthonysSoulFood04.png?size=640x480&lossy=2&strip=1&webp=1 640w\" data-sizes=\"(max-width: 850px) 100vw, 850px\" src=\"data:image\/svg+xml;base64,PHN2ZyB3aWR0aD0iMSIgaGVpZ2h0PSIxIiB4bWxucz0iaHR0cDovL3d3dy53My5vcmcvMjAwMC9zdmciPjwvc3ZnPg==\" \/><figcaption id=\"caption-attachment-89679\" class=\"wp-caption-text\">Music While You Dine<\/figcaption><\/figure>\n<p>Ken Carson, founder and owner of <a href=\"https:\/\/www.nmgastronome.com\/?p=14731\" target=\"_blank\" rel=\"noopener\"><strong>Nexus Brewery<\/strong><\/a> does give a nod to New Mexico&#8217;s sacrosanct cuisine with his offering of &#8220;<em>New Mexican soul food<\/em>.\u201d\u00a0 New Mexican soul food is a combination of Southern and Cajun entrees honoring both the Carson family\u2019s Southern roots and their adopted home\u2019s New Mexican favorites.\u00a0 You won&#8217;t find the Land of Enchantment&#8217;s sacrosanct green and red chile on Anthony&#8217;s menu though you&#8217;ve got to believe he&#8217;s got the chops to do it well.\u00a0 Let me emphasize again, his preparation of soul food is on par with the best we had in the Deep South.<\/p>\n<p>It wouldn&#8217;t be soul food without fried chicken and fried catfish.\u00a0 At Anthony\u2019s, the\u00a0<em><strong>fried catfish dinner<\/strong><\/em> with two sides is a \u201cGil\u2019s highest recommended\u201d entree.\u00a0 If you\u2019ve never before had great fried catfish, what you can rest assured Anthony\u2019s catfish has all the attributes of truly exceptional catfish.\u00a0 Contrary to some opinion, its flavor is\u00a0 not muddy or gamey.\u00a0 In fact, it\u2019s mildly sweet and just slightly earthy.\u00a0 Its texture is moist, flaky and firm with a crispy, crunchy cornmeal coating.\u00a0 Anthony\u2019s hot sauce goes extremely well with catfish.\u00a0 Anthony told me his restaurant features &#8220;<em>the best catfish in the world<\/em>.&#8221;\u00a0 Who am I to argue?<\/p>\n<figure id=\"attachment_89681\" aria-describedby=\"caption-attachment-89681\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-89681 lazyload\" style=\"--smush-placeholder-width: 850px; It tastes savory, salty, and rich, featuring a crunchy, heavily seasoned outer crust (that permeates throughout the meat) with warm, tender, and very juicy meat on the inside.
