The Pueblo Chile is part of Colorado\u2019s past, <\/em><br \/>\n<em>present and future innovation and I look forward to the final selection for Colorado\u2019s <\/em><br \/>\n<em>2028 American Innovation Coin so that all Americans can see our Pueblo chile up close <\/em><br \/>\n<em>in pocket change and collector\u2019s books<\/em>.\u201d<br \/>\n~Governor Jarod Polis.<\/p>\n<p>On 17 September 2026, Governor Jarod Polis of Colorado revealed that he has nominated <strong><a href=\"https:\/\/www.cfa.gov\/system\/files\/meeting-materials\/1-CFA-17SEP26-2-Mint-2028-AmInnov-CO_pres.pdf\">Pueblo Chile <\/a><\/strong>to be displayed on Colorado\u2019s <strong><a href=\"https:\/\/www.usmint.gov\/learn\/coins-and-medals\/collectible-coins\/american-innovation-dollar-coins\">2028 American Innovation Coin<\/a><\/strong>. The United States Mint American Innovation Coin initiative is a multi-year series honoring American innovation and innovators by issuing $1 coins for each of the 50 states, the District of Columbia and the five U. S. territories. declaration about Pueblo chile, especially the line that reads &#8220;<em>the very best chile that exists.&#8221;\u00a0 <\/em>New Mexicans consider such prattle to be heretical, blasphemous and outward nonsense.\u00a0 There is no chile nearly as enchanting as the chile grown in Hatch, Chimayo, Lemitar, Deming, Jarales and other fecund valleys across New Mexico.\u00a0 To say otherwise is perhaps to be enrapt after smoking Colorado&#8217;s real cash crop.\u00a0 Sadly, Governor Polis isn&#8217;t the only person to have declared Colorado chile superior to New Mexico&#8217;s.<\/p>\n<p>In 2019, author Gustavo Arellano (probably best known for his &#8220;<a href=\"https:\/\/www.simonandschuster.com\/books\/Ask-a-Mexican\/Gustavo-Arellano\/9781416540038\" target=\"_blank\" rel=\"noopener\"><strong>Ask a Mexican<\/strong><\/a>&#8221; column and book) blazed his own chile road trip along I-25.\u00a0 He published his observations in an Eater article titled &#8220;<a href=\"https:\/\/www.eater.com\/2019\/1\/23\/18182665\/best-new-mexico-chile-restaurants-interstate-25\" target=\"_blank\" rel=\"noopener\"><strong>The Great American Chile Highway<\/strong><\/a>.&#8221;\u00a0 The article was subtitled &#8220;<em>A palate-scorching, Mexican hamburger- and adovada-fueled road trip up I-25 from Las Cruces to Denver<\/em>.&#8221;\u00a0 Traversing the 643-mile stretch of Interstate 25, Arellano was fueled &#8220;<em>by the one thing that unites the disparate communities along the way &#8212; chile<\/em>.&#8221;\u00a0 \u00a0Over three days, he saw and tasted how restaurants along the &#8220;<em>Chile Highway<\/em>&#8221; approach their spicy muse.\u00a0 He observed that &#8220;<em>the dishes here rarely venture far from what\u2019s now I-25 because their essence is tied to the chiles grown along the route<\/em>.&#8221;<\/p>\n<figure id=\"attachment_92584\" aria-describedby=\"caption-attachment-92584\" style=\"width: 850px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-92584 lazyload\" style=\"--smush-placeholder-width: 850px; At times, I felt like the trip might actually turn me into a living Human Torch. But like the Phoenix, I rose from the proverbial ashes, spitting nothing but fire<\/em>.&#8221;\u00a0 In the Land of Enchantment, he dined at such paragons of pungency as <a href=\"https:\/\/www.nmgastronome.com\/?p=24385\" target=\"_blank\" rel=\"noopener\"><strong>San Antonio Crane<\/strong><\/a>, <a href=\"https:\/\/www.nmgastronome.com\/?p=65481\" target=\"_blank\" rel=\"noopener\"><strong>La Nueva Casita Cafe<\/strong><\/a> in Las Cruces, <a href=\"https:\/\/www.nmgastronome.com\/?p=55782\" target=\"_blank\" rel=\"noopener\"><strong>Arrey Cafe<\/strong><\/a> in Arrey, <a href=\"https:\/\/www.nmgastronome.com\/?p=219\" target=\"_blank\" rel=\"noopener\"><strong>Blake&#8217;s Lotaburger<\/strong><\/a> (ubiquitous across New Mexico), <a href=\"https:\/\/www.nmgastronome.com\/?p=9369\" target=\"_blank\" rel=\"noopener\"><strong>El Camino<\/strong><\/a> in Socorro and many others.<\/p>\n<p>When he crossed into Colorado, Arellano observed &#8220;<em>Hispanos settled southern Colorado in the 1850s, and many manitos (the nickname their descendants go by) feel greater kinship with northern New Mexico than they do with Colorado. The result is food as removed from New Mexican food as New Mexican is from Mexican.&#8221;\u00a0\u00a0<\/em>He enjoyed the chile in Trinidad and Walsenburg, but declared &#8220;<em>The chile was even better at<strong> Three Sisters<\/strong>, a honky-tonk bar in Colorado City. Just a cup of it at Three Sisters showed why \u2014 it was more intense than Hatch, more pungent than Socorro, and as rare as Chimay\u00f3. (Colorado growers only harvested about 600 acres of peppers last year, compared to the 8,000 or so that New Mexico registered<\/em>.)&#8221;\u00a0 \u00a0Rather than whine incessantly about Arellano&#8217;s preference for Colorado chile without actually having tried the green chile at Three Sisters Tavern &amp; Grill, I drove five hours in a torrential downpour to experience that chile.\u00a0 Our server confirmed that the chile served at Three Sisters is Pueblo&#8217;s mirasol chile, a potent (2,500 to 5,000 Scoville Heat Units (SHU), comparable to a jalape\u00f1o) pepper.<\/p>\n<p>Arellano also observed that &#8220;<em>Mirasol love was all over Pueblo, a city with its own distinct cuisine. There, the most beloved treat is the Slopper, a hamburger patty in a sea of green chile: bar food, bar none. Wagner<\/strong><\/a> and <a href=\"https:\/\/davidpwagnerauthor.com\/about-rick\" target=\"_blank\" rel=\"noopener\"><strong>Rick Montoya<\/strong><\/a>, I&#8217;m not about to declare Pueblo chle nearly as good as New Mexican chile&#8230;at least not the green chile at Three Sisters Tavern &amp; Grill.\u00a0 Admittedly, I rather enjoyed the cup of <em><strong>So. Co. green chile<\/strong><\/em> (savory and rich green chile made with local Pueblo chiles).\u00a0 \u00a0It&#8217;s somewhat thicker than comparable cups of green chile at restaurants across the Land of Enchantment but it doesn&#8217;t have quite the piquant personality of New Mexico&#8217;s sacrosanct green chile.\u00a0 It also doesn&#8217;t have as many small cubes of pork.\u00a0 Then there&#8217;s the matter of the tortilla.\u00a0 It&#8217;s more than a bit on the small size.\u00a0 Four &#8220;New Mexican spoons&#8221; into which I spooned the chile was all that tortilla could handle.\u00a0 At least it was a thick tortilla not one of those thin ones you can practically see through.<\/p>\n<p>My Kim&#8217;s appetizer choice was a <em><strong>tempura fried avocado<\/strong><\/em> (half an avocado, tempura style.
