As it was, the mole stood out both for prominence and for flavor.

Duck Taquitos

My entree was the blue corn crusted pork chop (fried bone-in Duroc chop, pineapple tepache borracha, tepary beans, nopales, dried tomatillo). I actually couldn’t decide whether to have the pork chop or the lamb pasta and asked Kaleigh to choose one for me, assuring her that I would be happy with either one. She consulted with other servers and brought me the pork chop. It’s a signature Southwestern dish crafted by Chef Stanger. It’s genius! Duroc pork chops are widely considered one of if not THE best pork chop you can find. Duroc is a heritage breed known for its rich flavor, juicy texture, and beautiful marbling.

It’s an outstanding pork chop made even better with the pineapple tepache borracha, a traditional Mexican fermented pineapple drink or sauce that has been spiked or fortified with alcohol, typically beer or tequila. This “drunken” salsa is fiery and delicious! The accompanying tepary beans have a long lineage as an ancient, annual legume native to the Sonoran Desert and southwestern North America, renowned for extreme heat and drought survival. As it bakes slowly, the sugar caramelizes on the outside into a rigid, crunchy crust, while the butter steams the interior into rich, flaky layers. In 2011, the New York Times famously described it as “the fattiest pastry in all of Europe.”

Although Kouign-amann wasn’t available, we found something else rich and sugary to love. That would be toasted milk bread (chocolate coconut gelato, pandan syrup, puffed amaranth). Japanese-style milk bread (shokupan) has grown rapidly across America. Data from industry research firm Datassential shows that milk bread and milk buns have grown nearly 400% on U.S. restaurant menus. For the most part, we’ve experienced milk bread sans crust, but that wasn’t the case with Chef Wong’s creative use of milk bread as a canvas for chocolate coconut gelato and the wonderful Asian pandan syrup complemented by puffed amaranth (a seed consumed like a grain). This dessert was very reminiscent of elevated French toast, another favorite indulgence.

Toasted Milk Bread

Shift is the perfect restaurant for adventurous diners who love to try new things and share a delicious bount in a compassionate dining atmosphere.
