NOTE: After serving Albuquerque for more than sixteen years, Vivace closed its doors for the last time on May26, 2012. Patrons of the Santa Fe Opera recognize Vivace as a musical composition or movement in a lively, brisk or vivid tempo.  The rest of us whose only experiences with classical music come from from watching a wascally wabbit being pursued by a red-faced Elmer Fudd may have heard the fast tempo of Vivace numerous times, but had no clue what it was we were listening to other than that the frenetic upbeat tempo matched the intensity of the chase. What most savvy diners in Albuquerque and beyond do know is that Vivace has long been one of the very best Italian restaurants in the Duke City area since it opened in 1996 at the former site of the Nob Hill Bistro.  When it first launched, Vivace was awash in the colors of the Italian flag–bright reds, whites and greens, a color palette which belied a sophisticated menu featuring the cuisine from throughout Italy.  Red and white checkerboard tablecloths and a mirrored west wall added to the stereotypical template generally associated with bad meat sauce Italian restaurants and faux Italian chains.…

Hakata Asian Cuisine & Grill – Albuquerque, New Mexico (CLOSED)

“Grrr!  What’s wrong with those Vietnamese?”  That’s not a bad bowl of  pho prompting a xenophobic rant on my part.  Those were the words of my friend Huu Vu when I told him a new Vietnamese restaurant by the name Hakata Asian Grill had opened up on Albuquerque’s west side.  A proud native of Vietnam, Huu wasn’t upset at the launch of  another restaurant showcasing the cuisine of his homeland.  He was unhappy about the name. Hakata Asian Cuisine & Grill is the third restaurant featuring Vietnamese food to open in  the seven month period  which ended in  April, 2011.  That’s  great news for all adventurous Duke City Diners, and you would  certainly think my pho fanatic friend would be ecstatic.  The problem, Huu pointed out is that if you’re looking for Vietnamese cuisine, you might never visit the Asian Grill, Kim Long Asian Cuisine or now Hakata Asian Cuisine & Grill.  The first two hint of fusion cuisine  (certainly not Vietnamese) while Hakata is most assuredly a Japanese name. “There are two laws of the universe — gravity, and everyone likes Italian food.” Neil Simon, American playwright and screenwriter A 2007 Harris Poll declared Italian food the most popular ethnic food in America, revealing that when Americans eat out, the cuisine of choice for nearly a quarter of them is Italian food.  Among the youngest group of respondents, those aged 18-30, the percentage is even higher.  Famous oenophile and food writer Dino Romano believes Italian food is so popular because humans are genetically predisposed to eat as many things that are good for us as possible.  Romano believes Italian cuisine lends itself to an anthropological need to eat a large variety of foods in many ways. Perhaps the operative word here should be “large.”  When it comes to Italian food, most of us believe the only thing wrong with Italian food is described in the adage, “the problem with Italian food is two days later you’re hungry again.”  We like our pasta in profuse portions (lotsa pasta), our pizzas to be prolific, our cannoli to be colossal, our antipasti to be ample.  You get the picture.  When it comes to dieting, there are many other things we’d rather give…

Perhaps indicative of the world becoming more broad-minded and accepting, “peasant food” (which usually includes traditional foods of specific regions) is now looked upon as a culinary art form in which skillful cooks are celebrated for employing the wisdom of the ages to prepare wonderful meals using inexpensive, generally home-grown, ingredients. In France, the term peasant food is actually translated as “food of the country” because it is usually associated with poor rural farmers.  In Laos, Vietnam and Thailand, peasant food is regarded as a visible tribute to the inherited knowledge culled by generations of peasant food producers honing the ideal cuisine of their regions. In the United States, three of the most obvious examples of down-home, regional peasant food are our own New Mexican cuisine, Louisiana Creole and of course, barbecue.  To generations, this is comfort food at its very best, the delicious bounty of a rustic life. Alas, as a commercial enterprise, barbecue restaurants often seem to perpetuate a bumpkinly stereotype.  The “template” seems to include red and white checkered cloth tablecloths adorning oak tables, cute ceramic pig figurines on the counters and country music blaring from a tinny stereo.  At the extreme end of this stereotype, you might…

In grade school back in the 1960s, such characters as Paul Bunyan and Johnny Appleseed filled my mind with wonder and awe as I learned to determine fact from fiction (a process I still employ when listening to  nauseating political commercials which pollute the airwaves).  My mind was a veritable tabula rasa (blank slate) upon which my teachers (and my incessant poring over the Encyclopedia) imprinted knowledge of legend, lore, myth and fact.  Learning was a much more innocent process, not yet clouded with the cynicism wrought by historical revisionism based mostly on political ideology. Johnny Appleseed, it turns out, was very much man, not myth.  Born John Chapman, he became an American legend in America’s frontier days with an enduring legacy that has ensured a place in history.  Johnny was raised on a small Massachusetts farm where he acquired a love of apples as well as adventure.  Renown for his generosity and his stewardship of the earth, he was a pioneering conservationist who planted apple seeds throughout the frontier, introducing apple trees to large parts of Ohio, Indiana and Illinois. Our first visit to Zea followed the day after it was savaged by an erstwhile Albuquerque Journal restaurant critic, but any trepidation we might have had quickly dissipated when we were greeted enthusiastically at the hostess station by Betty, the luminous former waitress at the incomparable and much missed (to this day, I dream of its timbale tuna) Nouveau Noodles restaurant in Tijeras. At Nouveau, Betty was a whirling dervish of perpetual motion and the restaurant’s consummate ambassador. As warm and effusive a waitress as you’ll find anywhere, Betty’s unabashed enthusiasm for Nouveau’s cuisine was evident in her flowingly eloquent descriptions of the restaurant’s menu items–polysyllabic descriptions which she peppered with adjectives synonymous with fabulous. We trusted her recommendations and appreciated the personable and attentive service she lavished upon us. After seating us at Zea, she cautioned against any pre-conceived notions we might have about chain restaurants, indicating this one was was different. She explained that Zea was founded in New Orleans in 1997 and that its founders’ goal is to celebrate the cultural phenomenon that is eating and drinking for the sheer pleasure of it (sounds like my kind of people). Brunch is the best of two worlds–not quite breakfast and not quite lunch, but the best of both. It’s a leisurely weekend repast which makes you feel you’re getting away with something, as if you’re defying your mom’s mandate not to have dessert before the main entree. The feeling that you’re getting away with something delightfully illicit is reenforced as you lap up mimosas and Bloody Marys as fast as the wait staff can bring them to you. Brunch even allows you to get away with laziness at least once a year when you have the excuse to drag mom to a restaurant where she and countless other moms can be pampered on their special day. Americans have loved brunch since the 1930s when, according to culinary historians, passengers on transcontinental train rides would disembark in Chicago for a late morning meal in between trains. It wasn’t until after the second war to end all wars that brunch became popular on Sundays. Apparently the promises made in foxholes (where there are no atheists) were quickly forgotten because after World War II, there was a precipitous decline in the number of churchgoers across the fruited plain. I don’t know if there’s any veracity to the adage “don’t trust a skinny chef,” but one thing is for certain. Albuquerque has been trusting a very grumpy chef to prepare excellent meals for more than a quarter century. That grumpy chef is the irascible Barry Schuster, serving great cuisine in Albuquerque since 1979. One of the first things you see when you walk into the restaurant is a caricature of a somewhat younger Barry. Scrawled below his countenance are the words “grumpy chef.” Barry cultivates the image of a surly curmudgeon, but underneath that gruff exterior lies a heart of gold, a hospitality professional who wanders from the kitchen to check in on his guests and engage them in discourse. He continues to come to work day-after-day instead of enjoying a well-deserved retirement. Okay, maybe he’s not exactly an avuncular fellow, but he really does care that his patrons enjoy their dining experiences at his eponymous restaurant. He’s got a great sense of humor and his witty repartee will enhance your experience. The banter between Barry and his nearly as churlish waiter Richard Lopez is particularly entertaining. Salsas Grill features outstanding cuisine served with a Guatemalan flair, style, grace and hospitality. Affable proprietors Olga and Sigfrido Paz and their daughter Angie have decorated the restaurant with colorful nick knacks (mostly bowls and plates adorned with fruits and vegetables) from their native Guatemala. They have decorated the menu with Mexican, Guatemalan and New Mexican favorites prepared exceptionally well and served with class. Sigrido attends to his customers with a polite demeanor and genuine warmth while Olga crafts her culinary creations. Salsas Grill is nestled on the west mesa, offering a spectacular romantic view overlooking the city of Albuquerque and the spectacular Sandia Mountain range to the east.  Its address is Coors, N.W., but that’s only because it’s most visible storefront faces Coors.  Visitors coming in from the west will generally exit off Coors and head west on Dellynne.  You’ll want to make an almost immediate left onto Mirador into what appears to be a residential enclave.  Salsas Grill is next door to a Domino’s Pizza store.
