JP, my former boss at Intel used to pride himself on consistently working “half days.” If you’re thinking you’d like a job where you work only four hours a day, you’ve misinterpreted his definition of “half days.” To him, half days is a literal term meaning twelve hours a day. When most of us are done for after only nine or ten hours, he was just starting what he called his “second shift.” Very few of us have the stamina, initiative and especially the passion for what we do to work “half days.” I know restaurateurs for whom half days (or longer) are standard six or seven days a week. Because they spend so much time in their restaurants tending to the care and feeding of others, they tend not to eat there–when they make time to eat. On their rare days off or when they’re able to make time for a quick escape, they like to visit their fellow restaurateurs, not necessarily to check up on the competition, but to be pampered and fed well. Fry Bread House – Phoenix, Arizona

The James Beard America’s Classics Award honors locally owned restaurants with timeless appeal, beloved in their region for serving quality food that reflects the character and cultural traditions of their community, and must have been operating for at least 10 years, recognizing enduring, community-rooted establishments over flashy new trends. While the America’s Classic award is presented annually, only six of the twelve James Beard regions are eligible each year.  That means every other year, each region is represented.  This ensures broad coverage over time.  The most recent New Mexico recipient of the America’s classic award is the incomparable Mary & Tito’s. In 2012, the Fry Bread House, a beloved Phoenix institution since 1992, earned the America’s Classic award, becoming the very first Native American restaurant in the United States to earn that distinction.  The Fry Bread house was started by Cecelia Miller, a member of the Tohono O’odham Nation.  After she passed away in 2020, her children Jennifer and Richard continue the tradition.  According to the restaurant’s website “Tohono Oʼodham people are known throughout the southwest for their red chili beef, large, hand-stretched flour tortilla and fry bread.”   Over the years, the restaurant has garnered many “Best of the City”…

Salsa Brava – Flagstaff, Arizona

As the feminine form of “bravo,” brava translates from Spanish and Italian to “well done,” “excellent,” or “good.” Brava is often used to praise a female performer, often in conjunction with or preceding requesting an encore for a performance well executed.  Stemming from Italian and Spanish, brava can also be used to mean brave, angry or fierce.  I’m one of those Hispanic gents who expects…make that demands, salsa to be fierce and angry.  I want my salsa to bite me back, to reenforce through its potency and piquancy that pain is a flavor.  That’s especially true when a Mexican restaurant sports the audacious name “Salsa Brava.” Salsa Brava is a perpetual “best of the city” award-winner in Flagstaff.  It’s been earning “best Mexican” and “best salsa” accolades for the entirety of its nearly four decades years serving “The City of Seven Wonders.”  My hopes were that one of those seven wonders was indeed Salsa Brava’s eponymous salsa.  Make that salsas.  Shortly after you’re seated, your server will ferry to your table three salsas and a basket of chips.  The three salsas are a classic pico de gallo (mild), fire roasted-tomato chipotle (medium), and a pineapple/habanero (spicy).  Salsa is complimentary, increasingly…

FAT OLIVES – Flagstaff, Arizona

Several years and a couple of tons ago, my friend “Macho” Mike Moretti and I were the type of trenchermen that all-you-can-eat Chinese restaurants feared so much they established strict time limits.  When a German restaurant on San Mateo offered a free dessert to any diner who could finish a gargantuan combination plate, we easily surmounted the challenge and asked for seconds.  Perhaps our most impressive culinary conquest transpired when Pizza Inn offered a “order one pizza, get the next size free” deal.  We ordered an extra large pizza and a large pizza then polished them off.  That was the last time I ever finished at least an entire pizza (about ten acres of pie) by myself.  That is, the last time until my Kim and I paid an inaugural visit to Fat Olives in Flagstaff, Arizona. Harry’s Roadhouse – Santa Fe, New Mexico

Roadhouses–great inns and restaurants located near major highways traversing the country–once dotted America’s fruited plain, offering respite and sustenance to weary or hungry travelers. Renown for serving great comfort foods, they have been an important part of America’s heritage though with the advent of fast food restaurants and chains, fewer authentic roadhouses exist today.  Harry’s Roadhouse may be a bit more sophisticated and eclectic than its roadhouse brethren, offering several kinds of pizza, sandwiches, burgers, salads, pastas, Cajun and Asian cuisine as well as American comfort food standards that give it a feel and taste of home. To say it’s a popular dining destination is an understatement.  Perhaps the only Santa Fe event which exceeds the number of cars parked at Harry’s is Zozobra.  If you don’t get there early, you may have to wait to be seated despite the restaurant’s sprawling multi-room capacity. Even during peak hours, however, the efficient wait staff will likely have you seated within half an hour.  The light blue trimmed restaurant has several dining rooms, each with a different decor. There’s a room with an atrium-like ambience and windows to maximize light and one with an artsy Southwestern room replete with mismatched tables. Ask…

Eischen’s Bar – Okarche, Oklahoma

Even by Oklahoma small town standards, Okarche is a small town.  It’s not much bigger than a village though too big to be considered a hamlet.   With a population of  1,141 as of the 2020 United States census, Okarche is one of the most interesting spots in a state replete with interesting spots.  For one thing, the name Okarche is a portmanteau derived from parts of three words, Oklahoma (OK), Arapaho (AR), and Cheyenne (CHE).  Okarche is situated in what was part of the Cheyenne-Arapaho Reservation, after the disgraceful Trail of Tears forced relocation of Southeastern tribes.  Though only sixteen miles west of Oklahoma City and fourteen miles north of El Reno (home of Johnnie’s onion burgers), Okarche is as rural as it gets with farming having provided the town’s economic  mainstay throughout its history. Ask anybody in Oklahoma what Okarche is known for and they probably won’t tell you about its unique name or history.  Everyone in the Sooner state seems to know Okarche for Eichen’s Bar, the “oldest bar in Oklahoma.”  As a watering hole, Eischen’s has its own history.  It first opened in 1896 (eleven years before Oklahoma became the 46th state in the union).   It’s on…

Nexus Brewery – Albuquerque, New Mexico

Set in Albuquerque, Breaking Bad, AMC’s critically acclaimed television series may have left viewers with the impression that the Duke City is a haven for meth cookery and fried chicken joints.  Had the fair city been more accurately typecast, it would have have been portrayed as a mecca for microbreweries.  The Albuquerque Beer Scene blog says it best: “It’s like Portland, but with sun,”  a comparison which shows just how much the city’s microbrewery and brewpub scene has grown–and not just in terms of sheer numbers.  Duke City breweries have accorded themselves so well at the Great American Beer Festival and World Beer Cup that the city may soon be re-christened “Albeerquerque.” When the New Mexico Tourism Department launched the New Mexico True Ale Trail, the Duke City was its obvious epicenter both geographically and in terms of quantity.  The Land of Enchantment now boasts of nearly three dozen independent microbreweries, brewpubs, brew houses and taprooms with the largest concentration in its most populous city.  In fact, the Duke City is most certainly the hub of the Ale Trail with spokes traversing to just about ever corner of the state. Hush Public House – Scottsdale, Arizona

During a February, 2024 episode of Diners, Drive-Ins and Dives, host Guy Fieri asked Chef Dom Ruggiero what type of cuisine her served at his North Scottsdale restaurant Hush Public House.  Chef Ruggiero explained Hush features “New American,”  a term which basically “let’s me do whatever I want.”  Chef Ruggiero could have said “Martian” and it’s unlikely he would have received any argument from the periphrastic  host.  In part that’s because Chef Ruggiero is a former United States Marine.  With tatooed guns nearly the size of Hulk Hogan’s, he still looks like he could take on a regiment of terrorists single-handedly.  Despite the chef’s enviable musculature, Fieri observed a culinary technique he described as “such a big hand doing it so daintily.” You might wonder how a former Marine became one of the Valley’s most highly regarded chefs.  After leaving the service, Chef Ruggiero worked in an office in which Cordon Bleu occupied the third floor.  The chef related that he “saw all these guys with tatoos playing with knives and fire.”  His instant reaction was “sign me up.”   Originally from Scottsdale, Chef Ruggiero has been in the culinary arena for nearly fifteen years.  He launched Hush Public House in 2019…

Pine State Biscuits – Reno, Nevada

In 2020, Ted Lasso burst onto the pop culture scene.  Not long thereafter my friend Alonna Smith, the brilliant owner of My Indian Stove practically begged me to watch it.  She realized that with my penchant for British comedies, I’d love the laugh-out-loud show about an American soccer coach who assumes the help at a Premiere League soccer team in the United Kingdom despite not knowing anything about soccer.  Lasso is the master of the one-liner as well as the bringer of balm during heart-warming scenes.  He’s warm and fuzzy…and as usual, Alanna steered me in the right direction. On the second episode of season one, Ted began the practice of bringing freshly baked biscuits to the football club’s owner Rebecca Welton.  “Biscuits with the boss” quickly became one of the show’s most endearing gags.  Moreover, it’s essential to the relationship Ted wants to build with his stoic, business-like boss.   Over the time, the daily biscuit fix defrosted Rebecca’s cold heart and she embraced Ted not only as integral to her team’s future, but more importantly as a friend. Joe’s Farm Grill – Gilbert, Arizona

When primitive men, women and asgender people crossed the Bering Straits to escape global freezing, they eventually made their way to the Phoenix area.  Ever since, their progeny has been trying to figure out how to escape global scorching which transpires on most summer days (seven or eight months a year).  They built Biosphere 2, the world’s largest controlled environment.  They built a swimming pool in Chase Field, home of the Arizona Diamondbacks.  When compelled to leave the air conditioned confines of their homes, Phoenicians risk third-degree burns from their car doors and  flee to their summer homes in Prescott and Heber where instead of 130, the temperature is only 99. They also join hordes of tourists in a utopian concept called Agritopia.  Though that sounds like the name for a 60s hippie commune, Agritopia is an area devoted to an urban agriculture community.  At the heart of Agritopia are fields owned and tended to by the Johnston family.  Perhaps realizing they could make more money hawking burgers than selling vegetables, the family converted the 1960s era farmhouse.  Today it’s the site of Joe’s Farm Grill.  It’s supposed to be a “take on a modern design of avery large 50’s…

Joseph’s Culinary Pub – Santa Fe, New Mexico

Although ducks don’t have a church sanctioned patron saint, if the Catholic church ever deemed one worthy it would be Saint Cuthbert, a 12th Century Anglo-Saxon monk.  According to legend, Saint Cuthbert tamed a large population of nesting eider ducks so well that they would nest even next to the chapal altar without fear.  Cuthbert placed the ducks under his protective grace so that no one would eat or disturb them.  Monks who mocked (mocking monks) Cutbert’s curse and ate or harassed the eiders were said to have been struck down. It’s a good thing Chef Joseph Wrede didn’t ply his trade in proximity to Saint Cuthbert or he would probably have been struck down by Cuthbert’s curse.  Diners like me who have enjoyed Chef Wrede’s menu would have incurred a similar fate. Even if you’re not familiar with Chef Wrede or his menu, you’ve probably figured out that duck figures prominently on that menu.  We first learned that about the 2008 James Beard “Best Chef Southwest” nominee at Joseph’s Table, his eponymous restaurant on the Taos Plaza.  When we visited Joseph’s Table, the special of the day was a “seven way lucky duck” dinner entree that included duck breast,…
