Possum shanks; pickled hog jowls; goat tripe; stewed squirrel; ham hocks and turnip greens; gizzards smothered in gristle; smoked crawdads. “Ewwww Doggies!,” now that’s eatin’. ~The Beverly Hillbillies Guests at the Clampett residence always seemed to recite a litany of excuses as to why they couldn’t stay for dinner when Granny announced the mess of vittles she’d fixed up. Not even the opportunity to dine at the fancy eatin’ table (billiards table) and use the fancy pot passers (pool cues) under the visage of the mounted billy-yard (rhinoceros) was enough to entice the sophisticated city slickers to stay for dinner with America’s favorite hillbillies. For the generation who grew up watching The Beverly Hillbillies, the notion of eating vittles elicits a broad smile and a warm heart. Those sentiments were rekindled when we drove east on Central Avenue just past Wyoming and espied a new restaurant named Vick’s Vittles Country Kitchen. Not only did it conjure memories of “heaping helpings of hospitality” from Jed and all his kin, the name “Vick’s Vittles” seemed so familiar and comfortable. J’s Var-B-Q – Albuquerque, New Mexico

Step into J’s Var-B-Q and the first thing you’re inevitably going to notice is the aroma of smoked meats wafting toward you.  The bouquet of sweet and succulent smoke envelops you like a warm blanket on a cold night.   It’s a comforting smoke sure to elicit involuntary salivation.  It’s a siren’s song luring you to the counter where you place your order from a tempting menu of meats, sandwiches, sides, specialties and desserts.   If the doors to J’s Var-B-Q were to literally stay open, the rapturous redolence of smoked meats would escape onto Montgomery and traffic would be snarled with motorists (maybe even a vegetarian or six) making their way to this bodacious barbecue restaurant. The second thing you’re likely to notice is a large mural on the wall depicting a grizzled gentleman with engorged pythons for arms.  He’s got his hands steepled in prayer and his eyes closed in reverence.  Undoubtedly he’s giving thanks for the bounty laid out before him: a plate of ribs and hot links with sides of mac-and-cheese and baked beans.  The prayerful man on the mural is Julian Vargas, a born-and-bred New Mexican and patriarch of the Vargas family.  If you haven’t…

Brekki Brekki – Albuquerque and Rio Rancho, New Mexico

Brekki Brekki–To those of us who were around in the mid 70s, those two words might dredge up recollections of the citizens band (CB) radio vernacular.  Maybe even the Chuck Norris movie “Breaker!  Breaker!” with its perfunctory butt-kicking.  Though I pride myself on having a sesquipedalian vocabulary, I had never heard the term “brekki” used  as slang for breakfast” until watching the Irish television series “Jack Taylor.”  My research revealed “brekki” is not an Irish term for breakfast, but is in Iceland.  Yes, Iceland.  Jack Taylor’s backstory didn’t involve a stint in Iceland.  So, where did the Irish detective pick up the term.  Closer to home, why would a Duke City restaurant specializing in breakfast name itself “Brekki Brekki?” Paula, our delightful server didn’t know. She believes the term is Italian for breakfast, but verifiable evidence doesn’t seem to exist on the omniscient internet.  It’s conceivable the restaurant’s name is meant as a mnemonic, a word pattern designed to help people remember it.  At the very least, it’s a cutesy term.  Owner Robert Punya, who also founded and owns Poki Poki Cevicheria seems to like duplicated names.  If you haven’t had the pleasure of meeting Robert, you’re undoubtedly acquainted with…

Grassburger – Albuquerque, New Mexico

For nearly a decade, television viewers have been subjected to a very successful advertising campaign depicting contented cows talking and singing about the pleasures of life in sunny and warm California. The slogan for the “happy cows” campaign’ is “Great cheese comes from happy cows. Happy cows come from California.” The campaign would have you believe the cows are happy because they feast and frolic on a diet of delicious grass from verdant hillsides and not on troughs full of grains which don’t taste quite as good. I don’t know about cows being happier because they graze on grass, but can certainly attest to being a happier diner when enjoying a diet of grass-fed beef. Generations of New Mexicans, particularly from the more verdurous northern villages, find the notion of grain-fed cattle heretical. All our cows are grass-fed thanks to open-range grazing laws which allow carefree cows to traipse up and down the streets in search of unfenced (or poorly fenced) yards in which the grass does appear to be greener. In the late spring when mountain snows have started to melt, many ranchers herd their cattle into the mountains where meadowlands near the timberline are abundant. In fall when…

Toga! Toga! Toga! Ever since the misfit Delta Tau Chi fraternity threw the most debaucherous toga party ever in the 1978 “teensploitation” comedy Animal House, the toga party has been ingrained in the college party culture. The genesis of the toga party goes back much, much further than Animal House. Toga parties, in fact, precede collegiate life in the fruited plain by many hundred years. The first toga party was actually organized in ancient Greece in honor of the Greek god Dionysus, the deity of the grape harvest, wine-making and wine, of ritual madness, fertility, theater and religious ecstasy (that’s quite a job description, even for a god). Dionysus literally had a cult following of men and women who worshiped him. Together this vagabond group became some of history’s first true party animals, holding orgiastic celebrations where they danced to frenzied music and behaved like crazed San Diego State basketball fans. It was during this revelry that Dionysus invented both the toga party and the first drinking games. It makes cooking and eating significantly better.” ~Joe Rogan, Podcast Host Those of us with a carnivorous bent can relate to Joe Rogan’s ode to cooking meat over fire.  There’s absolutely nothing as mouth-watering as the heady aroma and melodious sound of meat searing on the grill or sizzling in a pan.  An argument can easily be made that nothing evokes a wanton lust more than smoke perfumed by meat as it wafts toward our anxiously awaiting nostrils.  The sounds and aromas of luscious meats licking flames on a roaring fire trigger something completely primal in all of us, especially when the pangs of hunger are at their most powerful.  It was that way from the first time a bolt of lightning struck a mastodon and rendered it delicious. Rudy’s Country Store & Barbecue – Albuquerque, New Mexico

In 1983, country crooner Ed Bruce released a song titled “My First Taste of Texas,” the first line of which was “My first taste of Texas was her blue eyes and golden hair.” Some ten years later, I experienced my first taste of great Texas barbecue when visiting Rudy’s Country Store & Barbecue in Leon Springs, Texas, a San Antonio suburb on the fringes of the magnificent Texas Hill Country. At the time Rudy’s was just beginning to make inroads toward becoming a significant barbecue presence in Texas where beef and brisket are king. Back then Leon Springs appeared to be a test ground for new restaurant concepts–and in fact, it is the site of the first Romano’s Macaroni Grill and the first Rudy’s Country Store & Bar-B-Q (as well as a concept called Nacho Mama’s which might have been the best of the lot.) Before it was Rudy’s Country Store & Bar-B-Q, however, it was just Rudy’s Country Store. The country store was opened in 1929 by Rudolph “Rudy” Aue, the son of the founder of Leon Springs. The country store included a gas station, garage and grocery store. In 1989, Rudy’s added Bar-B-Q to its country store’s name.…

Harold’s Cave Creek Corral – Cave Creek, Arizona

Football fans can be unforgiving…and some of us have elephantine memories.  Dallas Cowboys fans, for example, will never forget nor forgive the Pittsburgh Steelers for having bested (obviously the referees cheated) the Cowboys twice in the Super Bowl.  Never mind that our beloved Cowboys finally did beat Pittsburgh in a later Super Bowl.  We’ll never get over losing two.  Our only consolation is that at least we didn’t lose to those neanderthal New York Giants.  Someday you’ll have to ask me how I feel about the Steelers and Giants.  With such antipathy toward those miserable Steelers, the one place you’d think I’d never be caught dead would be a Steelers Bar, much less one of the most highly regarded Steelers Bars in the country.  But, that’s precisely where we spent our New Years Eve. Perfect Pear Bistro – Tempe, Arizona

Growing up Catholic, I probably read more about the gods of Mount Olympus than the catechism which taught about the almighty God worshipped at St. Anthony’s in Peñasco.  I didn’t hold the gods of Greek mythology in reverence.  If anything, I wondered how they could be so peurile and petty.  Though also splenetic and petulent, they were very interesting.  Perhaps indicative of my future gastronomic interests, I was particularly curious about the foods that were so prominent in Greek mythology.  Pears, for example, were sacred to two of the most powerful goddesses: Juno (queen of the gods and marriage) and Aphrodite (goddess of love and beauty.  Pears were also prominent in one of my very favorite books, The Odyssey. Growing up in agrarian Peñasco, we were surrounded by lush trees offering a bounty of cherries, chokecherries, apples, peaches, apricots and more.  The only pear tree I can recall was in our grandfather Max’s front yard.  While the pears were sweet and delicious, we seemed to prefer using them as projectiles to hurl at one another or at offending cows daring to trespass into our yard.  Pears rated rather low in the pantheon of fruits…at least as an edible fruit.  Perhaps…

How do you become a centenarian?  For Elizabeth White, achieving 100 years of age may be attributed to living the Golden Rule (“Do unto others as you would have them do unto you.”).  She instilled that spirit into the restaurant she purchased from her brother in 1964.  Phoenix was a much more segregated city when Elizabeth White christened her eatery “The Golden Rule Cafe.” Despite the prevailing attitudes of the time, she believed in treating everyone with kindness and respect, a core tenet of the Golden Rule.  Her prominent prescence and welcoming spirit led to guests adding “Mrs. White’s” to the “Golden Rule Cafe.”  Like the wonderful woman who founded the restaurant, Mrs. White’s Golden Rule Cafe is an institution. No Competition Supercharged Bistro – Corrales, New Mexico

In the 1978 movie Same Time Next Year, Ellen Burstyn’s character lamented that her husband considered his years in the Army the best years of his life. When Alan Alda’s character, her partner in a 26-year adulterous affair, commiserated that many men felt that way about their time in the military, Burstyn retorted, “but he spent two years as a prisoner of war.”   I can’t relate to being a prisoner of war, but can fully appreciate why so many men cherish their time in the military.  More than playing sports in high school, the military develops a camaraderie and esprit de corps  you will never experience anywhere else.  Even Hawkeye Pierce, they cynical anti-military doctor who served in Korea with the 4077th Mobile Army Surgical Hospital (MASH) recognized “I’m “closer to these people than i’ve ever been to anybody else in my life, or ever expect to be.” When some of us return to civilian life, memories are mostly all that is left of the close relationships we cultivated during our terms of service.  We tend to lose touch with the brotherhood of friends and colleagues for whom we would have happily taken a bullet.  That’s not always the case, however. …
