Proprietor Nan Nguyen and his wife launched Asia Restaurant in April, 2002 and have experienced steady, if not spectacular customer traffic.  Repeat business from faithful patrons in a small, intimate setting with only 12 tables give the Nguyens the opportunity to get to know their clients. Although both from a small village in South Vietnam, Nan worked for years in a Chinese restaurant, hence a menu offering both Vietnamese and Chinese food.  Our inaugural visit was shortly after the restaurant’s grand opening and typical of Albuquerque, the restaurant was packed with curiosity seekers. California Witches, “where you can taste California” is the brainchild of two Korean born California transplants who happen to like witches–not the Wiccans who practice ritual observances of seasonal and life cycles or the repulsive old women credited with usually malignant supernatural powers. They assured us they don’t practice the arcane arts, but like “white” magic as practiced by television characters such as Sabrina. Our hope was that they were practitioners of culinary magic. Unfulfilled promise, unrealized potential, what should have been, what could have been–these are among the most tragic sentiments of any vernacular. For the most part, those were also the sentiments echoing through our minds while and after we dined in one of the Duke City’s most serene and attractive Japanese restaurant settings. We should have known better. Azuma is owned by the same gentleman who owns Albuquerque’s two China Star buffets, the Sam’s Club (with apologies to the Walton family) of Chinese buffets. Where it really should have taken them is to a tiny Albuquerque restaurant in a nondescript shopping center where the secret to happy living is posted for one and all to see. There are two things I rail against which might classify some of my restaurant reviews as a bully pulpit. One is the incursion of chain restaurants, a pitiable parade of mediocrity that has largely resulted in the homogenization and “dumbing down” of the American palate. The other is the lack of authenticity in so-called ethnic restaurants, a lacking that often goes hand-in-hand with the culinary chaining of America’s restaurants. In my reviews of New Mexican food restaurants, I refer to this phenomenon as the “anglosizing” of New Mexican food (the Taco Bell phenomenon). Shogun Japanese Restaurant – Albuquerque, New Mexico

It stands to reason that what is conceivably one of Albuquerque’s best sushi restaurants is named for the Shogun, the title accorded the supreme ruler of Japan for about eight centuries. What most people may not realize, however, is that sushi originated in China as a method to preserve fish by pickling and fermentation. Sushi, as we know it today, began to take form in the 18th century Japan when seafood vendors wrapped fish with seaweed and rice as an edible and decorative package which ultimately evolved into the roll (maki) style. Kimchy Cabana – Niles, Illinois

To the unenculturated, the pungent emanations of Korean kimchy (pickled and fermented cabbage) are malodorous and offensive to the olfactory senses. To the Korean people, however, kimchy is so much more than a national dish; it’s a family treasure handed down from one generation to another over the millenniums. The influx of Korean war brides following the Korean War and beyond has meant the gradual introduction into the American mainstream of kimchy and other Korean culinary arts. Having experienced Korean cuisine from coast to coast, it has always impressed me to find Korean food remarkably consistent–usually at least good and often excellent. Korean Barbecue House – Albuquerque, New Mexico (CLOSED)

For dining patrons in the know, the 2002 closure of the Fu Shou House was one of the most heartrending moves in the Duke City restaurant scene. In the Korean B.B.Q. House, Fu Shou was reborn. While the Fu Shou proprietors don’t own the Korean B.B.Q. House, they did hold court in the kitchen for a while after the restaurant’s launch crafting the delicious entrees for which they were renown. Another chef now stewards the kitchen, but has maintained the high standards of his predecessors. Initially serving both Korean and Chinese food, this Central Avenue restaurant now focuses exclusively on Korean food and has already captured quite a loyal following–for good reason.
